100g pasta of choice
1 clove garlic
1/2 medium onion, chopped
150g mushrooms, chopped
2 tbsp tamari
1/4 cup oat milk
1/2 tsp garlic salt
Large handful spinach
Boil the pasta according to packaging instructions. Meanwhile, add the garlic, onion and mushrooms to a non-stick frying pan and sauté for around 5 minutes, until the mushrooms cook down. Add the tamari, oat milk and garlic, lower the heat, and stir for a further 2-3 minutes before stirring in the spinach and the pasta. Serve immediately.

Sunday’s call for sleeping in and CINNAMON CRUMBLE MUFFINS ✨ I added a “streusel” on top which is basically baking terms for a crumble and it was SO GOOD 🙌🏻 and not as hard as you think it would be! Happy Sunday my friends 💛 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀
Ingredients:
- 1/2 stick melted butter
- 1/2 cup brown sugar
- 2 eggs
- 1 tsp vanilla
- 1/3 cup whole milk
- 1 cup of yogurt
- 1/4 cup flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
Streusel:
- 2/3 cup walnuts
- 1/3 cup light brown sugar
- 1/2 tsp cinnamon

Directions:
- Preheat oven to 350°F

Lemon Blueberry Sheet Cake by @rainbownourishments 💜

Dry cake ingredients
2 1/4 c white rice flour, or all purpose flour
2 1/4 c blanched almond meal
2 c organic cane sugar, or coconut sugar
3 tsp baking powder
.
Wet cake ingredients
1 3/4 c plant-based milk
1 c light-tasting vegetable oil, such as sunflower or rapeseed
2 lemons, juice & zest (+/- 50mL of juice & zest)
2 tsp vanilla extract
Pinch of salt
1 c fresh or frozen blueberries
.
Two-toned Blueberry Cashew Frosting
1 1/2 c  fresh or frozen blueberries
1 1/2 c raw cashews
3/4 c canned coconut cream
~1/4 c sweetener or sugar
.
1. Preheat the oven to 180C/350F. Line a rectangular cake tin with baking paper. I used a 33cm x 23cm x 5cm (13 in x 9 in x 2 in) cake tin.
2. To make the cake: In a large-size bowl, add all the dry ingredients & mix until combined. Add all of the wet ingredients except the blueberries and mix until the batter is combined and smooth. Pour the cake batter into the lined baking tin. Scatter blueberries over & press them into the cake batter.
3. Bake the cake for around 25 min or until a skewer can be inserted into the middle of the cake and it comes out clean. Allow the cake to rest in the cake tin.
4. To make the two-toned frosting: Add the blueberries to a small saucepan over medium-high heat. Boil for 15min & mash them with the back of a fork. Boil until the blueberries have softened & their juice has thickened. Add 1/4 of the blueberries to a blender with the rest of the frosting ingredients. Blend on high for 3min or until extremely smooth. Pour out 1/2 of the frosting into a bowl. Add the remaining blueberries to the blender & blend until extremely smooth. Set aside both frostings in the fridge to chill.
5. To decorate: When the sheet cake has completely cooled, dollop both frostings on top of the cake. Use the back of a spoon to marble the frostings & to spread it on the cake's surface. Avoid over-mixing the frosting to ensure the the colour of each frosting is still noticeable.
6. Serve the sheet cake immediately. Alternatively, cover the cake tin and store in the fridge for up to 5 days. [metric measurements below ⬇️]

Not quite what I was aiming for but still yummy. I don't drink Frappuccinos but others do and have been trying to recreate a blended coffee drink. Mine is a quasi coffee mocha smoothie. Very yummy though next time maybe more ice. Loving my leftover Starbucks decaf in a morning drink. Yum!

Adoro saladas! Só para verem a obsessão faço uma salada grande quase todos os dias para o jantar 🙈! E juro que não as como só para ser saudável ou comer poucas calorias (há saladas que podem ficar bem calóricas, especialmente quando se adiciona litros de azeite!). Mas calorias à parte, sou simplesmente fã da frescura, da variedade de sabores e texturas e gosto do facto de serem fáceis, versáteis e darem com tudo. Uma salada não precisa de ser apenas alface, tomate e cebola! Adoro misturar ingredientes diferentes (crus e cozinhados!) e testar novos molhos! Mas percebo perfeitamente que isto de comer saladas todos os dias não é para todos. Maioria das pessoas prefere refeições cozinhadas, mas eu adoro quando são os crus que lideram o meu prato 🥒🍅🥑(e atenção não sou necessariamente mais saudável por isso!) Apesar das preferências não há como dizer não a uma salada deliciosa, sobretudo no verão, não acham? Esta levou como base alface e rúcula. Depois juntei o grão, o milho, 1/2 cebola picada, 1/2 pepino fatiado, 1 pêssego (que da próxima vez vou grelhar!), 1/2 abacate e couscous de espelta com sultanas. Para fazer o couscous juntei numa taça 1/2 chávena de couscous de espelta com 1/4 c. chá de cominhos, 1/4 c. chá de caril doce (tão tão bom!) da marca sonnentor (comprei no @celeiro_viverdecorpoealma), sultanas, sal e pimenta. Misturei tudo e depois juntei 1/2 chávena de água filtrada a ferver! Ficou delicioso e podem (e devem😜) fazer este couscous para acompanhar com outros pratos! Depois de ter juntado todos os ingredientes, adicionei umas folhas de hortelã da minha hortinha e como já estava em cima da hora do almoço temperei com sumo de 1/2 limão, vinagre balsâmico bio e um fio de azeite! (Serve 2-3 pessoas) Bom apetite 💛
