PESTO PUMPKIN BAKED ZITI WITH SAUSAGE by @vegantraveleats 🧡 Try out this flavour-packed recipe below!

Serves 4 people

INGREDIENTS

14 oz vegan Italian Sausage (I crumbled them up)
1 lb ziti, rigatoni, or penne pasta
½ cup pesto
¼ cup Nutritional Yeast
Heaping ½ cup onion, chopped fine
1 clove garlic, minced
1 15 oz can pumpkin puree
3/4 cup veggie broth
½ tsp salt
3 tbs vegan cream cheese
1 ½ cups vegan mozzarella
Large pinch of red pepper flakes, if you’re not already using spicy sausage
2-4 tbs cooking oil*

DIRECTIONS

Heat oven to 400F
Heat a large oven-proof skillet over medium-high heat and crumble sausage into the pan and add 1-2 tbs oil* to cook. Cook sausage according to package directions, I cooked mine for 4-5 minutes.

Remove the sausage from the pan, set aside on a plate, leaving the grease in the pan.

Lower heat to medium and add onion and a pinch of salt, add another 1-2 tbs oil*. Sauté until softened, 4-5 minutes, add garlic and sauté for another 30 seconds. While the onion is sautéing, start your water to boil for your pasta in a larger pot.

Add sausage back in the pan, add broth, pumpkin, nutritional yeast, salt, and cream cheese bring to a boil then simmer for 5 minutes.

While that’s simmering, add pasta to boiling water in the large pot. And cook 3 minutes less than the package says. Drain (do not rinse) and add to the skillet with the sausage pumpkin mixture. Add ¼ cup pesto and mozzarella and stir to combine.

Cover with aluminum foil and bake for 15 minutes. Drizzle on remaining pesto and serve! Notes: if you’re using a beyond meat style or otherwise oily vegan sausage, no need to add extra oil!

Hej! 🧡 Ostatnio coś mnie natchnęło na racuszki drożdżowe z jabłkami, bo nie jadłam ich wieki 😍 i postanowiłam od razu stworzyć dla Was przepis, są WEGAŃSKIE! 🌱I oczywiście w znacznie zdrowszej wersji niż tradycyjne, ale równie smacznej!
~
• 12g świeżych drożdży
• 70g mąki pszennej lub orkiszowej tortowej
• pół jabłka
• 80 ml mleka roślinnego
• 1 łyżeczka cukru (konieczny!)
• cynamon
• słodzidło

Mleko podgrzewamy, ma być ciepłe, ale nie gorące! I rozpuszczamy w nim drożdże oraz cukier, a następnie dodajemy łyżkę mąki, mieszamy, przykrywamy nasz zaczyn i odstawiamy w ciepłe miejsce na 15 minut. Po tym czasie dodajemy resztę mąki, słodzidło, dokładnie mieszamy i takie ciasto odstawiamy do wyrośnięcia na godzinę (też najlepiej w cieplutkie miejsce!). Jabłko kroimy w kostkę, posypujemy cynamonem i dodajemy do wyrośniętego ciasta, delikatnie razem łączymy i smażymy racuszki najlepiej pod przykryciem.

Miłe jest dostawać prezenty, kwiaty, wspólne kolacje w restauracji.... Lecz czytając to każdy ma wyobrażenia że prezenty to tylko te z górnej półki, kwiaty to kosz róż.... Wszystko co kosztuje majątek. A ja nie chcę tego co można kupić. Chcę kolacje która przygotujesz sam, kwiaty z łąki, prezenty które mają znaczenie, może być to zdobiazg który będzie symbolem pamięci o mnie - a może tak wiadomość nad ranem....

Method of preparation:
Step 1
Place a pan over medium flame and once it's hot enough, dry roast walnuts, pistachios, coconut slices, peanuts, raisins, cashews and dried dates for a few seconds. Remove from the flame now and pour them in a grinder jar. Grind it on a high speed and form a coarse powder out of it.

Step 2
Turn on the gas flame and pour ghee in the same pan over medium flame. Once the ghee is hot enough, pour this powder in it. Saute for a few minutes over medium flame till you have lumps formed from this mixture.

Step 3
Turn off the gas knob now and keep it aside. Let the mixture cool down. After sometime, start making medium sized balls out of this mixture and store in an air tight container. Your dry fruit ladoos are now ready.

Feel free to remove the peanuts from this recipe in case of any allergies.

Clairement j’ai du boulot pour récupérer ma force et la shape que j’avais 🙄.
Pourtant pendant ces 2 dernières années, j’ai continuer le sport, moins intensivement c’est vrai.

I’ve been working so hard this week. I wrote myself a diet plan that I actually enjoy and slotted in workouts. It’s relieving to say that those 5am workouts were definitely worth it. 
Looking forward to seeing the progress😆
