Studies show that choosing hot drinks makes us feel cozy and friendly. An ​experiment​ was conducted by US researchers who asked people to rate strangers while holding hot or cold drinks.
The participants rated the strangers higher in terms of trustworthiness when holding a warm cup, while a cold cup had the opposite effect. Thats probably why we feel extra connected to those who we drink tea with 😉

It was short, but a fruitful visit in the spring city of the south, Kunming (昆明).
.
I finished my main agenda, made a little shopping, ate good food, enjoyed the city chaos, and met a really good friend (whom I harrassed to cook for me, haha! Asante sana @ali_mrefu_alois!). Going back to the quiet little village of Menglun is not so bad now, at least I feel energized, even a little bit. After all, I feel that I made a lot of progress with my work, so a short escape to the city is just my little reward for myself. 🤗

Scenes from Nannuoshan

We arrived in sweltering Xishuangbanna having obtained just one contact from our time making friends at Kunming’s tea market: a Hani woman who was said to maintain big trees — dà shùs — and make puerh from them in the famous Nannuo mountains.

We arranged a driver to take us from our Jinghong hostel up to Nannuoshan to meet her.  Her name is 达娥 “Dá é” (she is featured in the last photo) and her brothers and sisters collectively maintain around 150 acres of ancient tree tea gardens.  Her mother and father used to sell this high quality raw leaf material to the old menghai tea factories, but like some others during the puerh market boom in the early 2000s, 达娥 decided to take an upward socially mobile leap to become a tea producer herself, not just a grower/harvester.

After sharing many of her teas, 达娥 decided it was time to take us up to see Nannuo’s tea king, an ancient tree said to be around 800 years old.

On the way we passed by many ancient tree gardens, a far cry from the finely manicured hedgerow-looking plantations we saw back east.  These felt more like integrated forest farm meadows or permaculture orchards.

Besides having the genetic resilience of each tree being grown from seed and thus having its own gene pool (as opposed to acres of cuttings), the ecological implications of integrating tea trees into diverse polycultures means more resistance against pests, parasites, and blights, as well as less reason to use pesticides.  This is just one of many reasons I love tea grown from these types of gardens in the mountainous regions of southern Yunnan.

Performed education on physical preparation training, sport testing and selection of Chinese basketball players. Glad to connect with different cultures to share my knowledge and phylosophy on this field.

大家好,今天给大家分享“酸角糕”的做法~
以前村里有一颗很大的酸角树。那是我爷爷小时候就已经开始长酸角的老树了。每次放学,高年级的都会爬到树上去摘。我们也会习惯性的跑树下围拥,期待着能分上一两颗酸角。有时候爸爸回来会买上一些给我,但也总觉得没有那棵老树上的果子好吃。
材料
酸角,麦芽糖,白砂糖,少量琼脂粉,油
步骤
1.	剥去外壳清洗并浸泡一夜
2.	搅拌至果肉分离并过滤不溶于水的果肉和果核
3.	小火慢熬并加入白糖、麦芽糖和少量琼脂粉,熬至粘稠且锅里起均匀的大气泡
4.	倒入抹了油的模具,冷却凝固 【Dessert Series】——Tamarind Cake

In the village, there used to be a big and old Tamarind tree that had started to grow Tamarind Fruits when my grandfather was a child. Every time after school, the seniors climbed to the tree to pick Tamarind Fruits. We would also habitually gather under the tree and expect to be able to share one or two fruits. Sometimes, when Dad came back home, he would buy some for me, but I always felt that the Tamarind Fruit on the old tree was preferable. 
Ingredient
Tamarind Fruits, Maltose, White granulated sugar, A small amount of agar powder, oil
Step
1.	Peel off the husks, rinse by clean water and soak them for a night.
2.	Stir these fruits until the pulp is separated from the core. Filtrate the pulp and cores that are insoluble in water.
3.	Simmer and add Maltose, White granulated sugar and a small amount of agar powder. Simmer the fruit pulp until it gets sticky and form evenly large bubbles.
4.	Smear some oil on molds and pour in the fruit pulp. Cool down the fruit pulp and wait for it to solidify.

大家好,今天教大家做“鲜花饼”~
鲜花饼是以云南特有的食用玫瑰花入料的酥饼,是具有云南特色的云南经典点心代表。鲜花饼也是中国四大月饼流派滇式月饼的经典代表之一。
材料
食用玫瑰,白砂糖,糯米粉,蜂蜜,猪油,面粉,鸡蛋,酥油,清水
步骤
1.	玫瑰花瓣清洗后沥干水分,加入白砂糖搅拌均匀,腌制10分钟。
2.	糯米粉小火炒熟加入到腌制的玫瑰花里,加上猪油和蜂蜜搅拌均匀塑成18g左右的小球备用。
3.	水油皮:面粉、水、鸡蛋、猪油、酥油、白砂糖,揉成光滑的面团。
4.	油皮:猪油、酥油、面粉,同样揉成光滑的面团。
5.	盖上湿毛巾醒面20分钟
6.	将水油皮和油皮分别搓成长条并切成小面团。水油皮包裹住油皮,把包裹好的面团用手工擀面杖开酥三次,擀平卷起再从另外一侧擀平卷起。
7.	最后压住中间搓成圆,再擀平了包裹住玫瑰花馅,稍微压扁一点刷上鸡蛋黄加酥油。
8.	一般的烤箱应该在210度左右,烤8-10分钟即可。

Fresh Rose Petals Cakes are also one of the classical representatives of Yunnan-style moon cake, which is one of four major moon cakes in China.
Ingredient
Edible Rosa Rugosa Plena, White Granulated Sugar, Glutinous Rice Flour, Honey, Lard, Wheat Flour, Eggs, Melted Butter, Clean Water
Step
1.	Rinse Rose Petals by clean water and drain all water. Add White Granulated Sugar and mix well, then marinate for 10 minutes.
2.	Fry Glutinous Rice Flour and add in marinated Rose Petals, then add lard and honey and mix well. Prepare fillings that weigh 18-gram each.
3.	Prepare Water-oil Dough by mixing Lard, Wheat Flour, Eggs, Melted Butter, Clean Water and White Granulated Sugar.
4.	Prepare Oil Dough by mixing Lard, Melted Butter and Wheat Flour.
5.	Let Doughs ferment for 20 mins.
6.	Wrap Oil Dough by Water-oil Dough, and cut it into small doughs.
7.	Use a rolling pin to flatten the small dough and then begin to Roll the small dough from one side. Repeat this procedure three times in each small dough in order to make shortbread.
8.	Wrap the fillings by small doughs, and flatten them a little. Brush the one side of small doughs with mixture of egg yolks and melted butter.
9.	Bake 8-10 mins in 210-degree in oven.

On their arduous pilgrimage to circle the sacred mountain Kawagebo, Tibetan pilgrims approach the 14,721-foot pass to cross into Tibet from Yunnan Province, China. The once-in-a-lifetime journey takes two weeks. Camping far below the pass with my Tibetan assistant, I heard the pilgrims passing me in the middle of the night, when drifting in and out of sleep under a thick wool Tibetan blanket covered with frost. I woke and gave chase in the dark. At daybreak on the pass, I waited several hours for pilgrims to come into my frame. I was an unexpected sight, there, alone with my camera. I greeted them with "Tashi delek," the only Tibetan greeting I knew. They smiled and returned the greeting. If they could speak Mandarin, we  conversed. The Meili Snow Mountains: Kawagebo Peak is Yunnan's highest and most sacred. Though attempts have been made, it has never been successfully climbed and many have died trying. And since 2001, a law was passed banning any future attempts on cultural and religious grounds. Tibetans believe disaster will follow if humans set foot on its peak. 大家好,今天教大家做“玫瑰糯米粥”和“玫瑰山药泥”~
3月的云南已经是一片花的海洋,桃花、攀枝花、格桑花、玫瑰,就连山上叫不出来的野花也开得十分讨喜。滇红重瓣玫瑰是被食用得最多最广的花。玫瑰花的采摘时间很有讲究,不能超过中午12点,不然会影响玫瑰的花香。
材料
玫瑰花瓣,皂角米,糯米,大米,干玫瑰,冰糖,山药,炼乳
步骤
1.	玫瑰糯米粥
清水泡糯米、大米和皂角米。干玫瑰在沸水中煮五分钟捞起,加入泡好的糯米、大米和皂角米以及冰糖。熬至粘稠后加入切碎的玫瑰花瓣
2.	玫瑰山药泥
山药去皮切块上锅蒸20分钟。蒸熟后捣成泥,加入玫瑰花瓣和炼乳搅拌均匀。

The Edible Rosa Rugosa Plena is the most widely consumed flower. The picking time of the rose is very particular. It can't exceed 12o’clock at noon, otherwise it will affect the floral fragrance of the rose.
Ingredient
Rose Petals, Chinese Honeylocust (Gleditsia Sinensis), Glutinous Rice, White Rice, Dried Rose Petals, Rock Sugar, Chinese Yam, Condensed milk
Step
1.	Rose and Glutinous Rice Porridge
Soak the Chinese Honeylocust (Gleditsia Sinensis), Glutinous Rice and White Rice in clean water. Remove dried Rose Petals after simmering in boiled water for 5 mins, and then add Chinese Honeylocust (Gleditsia Sinensis), Glutinous Rice, White Rice and Rock Sugar. Add chopped rose petals after the porridge gets thick. 
2.	Mashed Chinese Yam with Rose Petals
Peel the Chinese Yam and cut them. Mash Chinese Yam after steaming them for 20 mins. Mix the chopped rose petals and condensed milk with Chinese yam.

玫瑰茄,又叫洛神花,我们当地都叫它玫瑰花。村里有一些人家专门种植洛神花出售的。它有很多药用价值,可调节血压、改善睡眠、消暑降火,还可以提神解劳。用来泡水喝、泡酒、做蜜饯都是可以的。
材料
洛神花,冰糖
步骤
1.	取花瓣清洗后放通风地方晾干表皮水分
2.	一层冰糖一层洛神花
3.	密封20天
