East meets west! Yesterday's refried black beans were yummy served on whole wheat tortillas. While the recipe called for serving it with chopped lettuce as a condiment, I added some southeastern Turkish twists to it. I chopped up a half a bunch of fresh parsley along with the lettuce and mixed it a with sumac flakes, which give the mix a lovely tang. Piled over the refried black beans and wrapped in the tortilla the combo was delicious! #simpleandsimplydelicious

Ive been really getting into baking and breads lately, and therefore, you all are my new audience for all my new bread photos. Currently, I'm pushing my limits to make some dark bread that isn't too dense. This has a wonderful aroma due to the addition of teff flour. .

Air New Zealand dinner and breakfast. Beef casserole with green beans, rice, an edamame barley cucumber salad, and banana mousse. Breakfast was a bland cheese omelet paired with fruit and strawberry yogurt.

I ate everything they gave me for dinner and I wasn't all too hungry when they fed us breakfast almost 11 hours later. 😲

@maroman87 and I are eating the rainbow tonight! We have come up with a roasted and sautéd veggie blend of golden and red beets, rainbow carrots, red Swiss chard (I couldn’t find rainbow chard) and red onions. We are serving them over a creamy polenta and along side our Smokey Pork Tenderloin that uses a smoked honey, two kinds of mustard, rosemary and garlic. Because the pork and veggies roast at the same time, it doesn’t take too long for this meal to come together. Plus, because of the wonderful colorful veggies we are getting lots of vitamins. Please give this Smokey Pork Tenderloin and Roasted Rainbow Veggies with Creamy Polenta a try. Get our recipes in the stories @dinnerthymes2.

Planing some meal prep this weekend? 🥣 Add these healthy on-the-go snacks to your #mealprep repertoire ✨

WHAT YOU NEED

½ cup pistachio, finely chopped
50g cups hemp seeds
½ cup cacao powder
1 cup puffed quinoa
½ cup pumpkin seeds
10 medjool dates, pitted
½ cup dried cranberries (optional)
1 tb coconut oil, melted
1 tb almond butter
1 tsp vanilla extract
¼ cup water
Pinch of salt 🥜 replace nuts with more seeds and tahini if you have a nut allergy 🥜

STEP-BY-STEP 🥣 Combine pistachio, hemp seeds, cocoa, puffed quinoa, pumpkin seeds and pinch of salt in a bowl.
. 🥣 In a high-speed blender, combine dates, cranberries, coconut oil, almond butter and water.
. 🥣 Add date mixture to dry ingredients and mix well using your hands. May need to add more water until texture becomes thick and sticky.
. 🥣 Line a small baking dish with baking paper and evenly spread the mixture into the pan. Using your hands and fingertips firmly press the mixture into an even layer and is smooth on top.
. 🥣 Chill in the fridge for at least 2 hours. Once set, cut into small pieces or bars. Makes roughly 10 slices. Yum! 😍 .

We grew #quinoa for the first time this year in our teaching gardens, and it surprised us by growing so well in our temperate and low-elevation climate! An abundant and quick crop, we planted our quinoa as a fall rotational planting in late August for an October grain harvest. .

An ancient grain of the Andean Altiplano, quinoa ('kinwa' in Quechua) was traditionally grown 5,000+ years ago by Incan and other pre-Columbian civilizations on the lands of present day Peru and Bolivia around Lake Titicaca. Technically the seed of a plant in the "goosefoot" family (same as spinach and chard), quinoa is a remarkable grain full of manganese, phosphorus, copper and all nine essential amino acids. The leaves are edible too! Yum!

Kidding, kidding! Coffee Cake was my husbands favorite Sunday breakfast growing up. The only trouble was he married someone who gets super sick when she eats processed white flour and white sugar.⁠

So as I tend to do, I remade an old favorite so that we could all enjoy it and not feel sick afterwards.⁠

With the holiday a approaching- using my ADD IN approach is a great tool to enjoy beautiful, nutrient dense foods. So many dishes can be made more healthful by the foods that are added in. .
Here I chose @foodforlifebaking Ezekiel bread 🍞. Ezekiel Bread is a type of bread that uses Sprouted grains. Sprouted grains are whole grains that have been soaked and left to germinate. Because sprouted grains are whole grains, they contain more nutrients than refined grains. Research indicates that the sprouting process may enhance the nutritional content of the whole grain. They contain fiber and phytonutrients. Now that’s fuel for your smile!

Serves 6
Ingredients
12 oz spiralized butternut squash (or cubed squash about 1 lb)
1 pound brussels sprouts, halved
1 medium gala apple, cut into a 1/2 inch dice
2 shallots, thinly sliced
1 tbsp olive oil
1 cup onion, diced
1 cup celery, diced
10 slices of ezekiel bread, left out for a day ahead (or any bread of your choice) then cut into cubes.
1 1/2 cups vegetable broth (plus more if needed
1-1 1/2 tsp poultry seasoning
1/3 cup pecans or walnuts
Sea salt and pepper to taste

Directions
Preheat oven to 350F
Toss squash, Brussels sprouts, apples and shallots in olive oil spray- seasoned generously with salt and pepper.
Heat air fryer (or oven) to 400 degrees. Cook for 15 minutes until nice and crispy (see original recipe is using oven). Heat 1 tbsp oil in a large pot (I like to use my @forgecastiron , it saves having to transfer to baking disk as you can do everything in it). Sauté the onion and celery till translucent (about 5-8 min). Add the bread cubes and allow them to get golden brown with the veggies in the oil. Add a dash of salt and pepper.
Add the roasted vegetables, vegetable broth, pecans, and seasonings. Stir the mix till the broth has almost entirely absorbed in the toasted bread. Transfer to a baking sheet and bake at 350 for about 20 minutes. Serve hot.

Grains are our backbone for just about any meal.......we always have a pot of cooked something in the fridge ready to accompany basically anything. .
This weekend @the_merchants_table we will be making @hodmedods quinoa adorned with herbs, pomegranates and toasted pistachios as a base for our aromatic roast chicken. It’s our simplest way to flavour any grain making it delicious with everything. Here’s how to make it:

Herbed Quinoa:

400g quinoa
800ml vegetable stock or water
1 bay leaf
30g (1 bunch) mint leaves, finely chopped
30g (1 bunch) dill, finely chopped
30g (1 bunch) coriander, finely chopped (or parsley if you are particularly coriander averse)
Juice of half a lemon
100g toasted sliced almonds or pistachios (optional)
seeds from half a pomegranate (optional)
Rinse quinoa thoroughly. Place in a shallow sauté pan with a lid and toast the quinoa until it dries out a little and smells toasted. Pour over stock or water and sprinkle with a pinch of salt. Bring to the boil, stir one last time and cover. Turn the heat down to low. Cook for 30 minutes, and turn off the heat. Leave covered and to steam for another 5-10 minutes.
Lift the lid, allow the steam to escape and fluff up the quinoa with a fork. If you think it needs it, add a drizzle of olive oil, and squeeze over the lemon juice.
Just before serving stir through the chopped herbs, toasted nuts and pomegranate seeds (if using).

Tofu and Vegetable Millet Bowl. Swipe for steps!
Step 1: Cooked Pearl Millet. I added some shredded Broccoli because I had some, but it’s not needed.
Step 2: Add cooked Broccoli and corn.
Step 3: Add lightly sautéed Tofu, Peppers, Onions, and Ginger
Step 4: Add Teriyaki sauce (mine is from scratch so it’s GF, but most store-bought versions are not).

I put it with some plain Greek yogurt, a handful of fresh blueberries (there are freeze-dried blueberries in the mix) and half a banana. Today’s bake was a classic pain au levain with a full 24 hour fermentation before baking (8 hours #preferment/ 6 hours ambient/ 9 hours #coldferment/ 1 hour final rest). 80/20 hard winter white/ whole grain rye blend, and 75% hydration. 🌾🙌🏼 Good food takes time. ❤️🍞Really pleased with the bake on today’s bread. 😍

This is my daily "super seed oatmeal" that I look forward to every morning. It is:
½ cup old fashioned oats, hemps seeds, chia/flax blend (sometimes I just throw chia seeds), banana and some natural super chunky peanut butter (Teddie's brand is my favorite).

Made with water in the microwave- add banana and PB after heating.

This is a healthy, filling, AMAZINGLY GOOD breakfast. Give it a shot 🤗

Grains have really gotten a bad rap these past few years, huh? They’re basically the go-to bogeyman 🧟‍♂️ of the nutrition world. But what if I told you that the “”inflammation”” 🙄 or bloating you might feel when consuming whole grains isn’t actually caused by the grains themselves? And yes, I put inflammation in air quotes twice. That’s because it’s not inflammation. Read on.

Lots of people have gas 💨, bloat 🤰, or otherwise experience adverse reactions to whole grains. And super-processed grains, like donuts and breakfast cereals (sorry, Cap’n Crunch) can definitely give you a stomachache. But unless you are the rare person who actually has celiac disease, it’s highly UNLIKELY that the gluten has anything to do with your symptoms.

I know you’ve been trained to FREAK OUT 😳 about gluten, but “people” haven’t been sharing the whole story with you. See, gluten containing foods and whole grains also carry FODMAPs called #fructans which can be difficult to break down if your gut is less than robust. For those with a damaged microbiome or an underlying bowel problem, it’s the fructan that causes those symptoms - gas, bloating, GI distress, you name it.

👨🏻‍⚕️ Okay, check out Skodje GI, et al. Gastroenterology. 2018. Patients with non-celiac gluten sensitivity felt BETTER with a disguised gluten food than placebo, but their symptoms TRIGGERED with a disguised fructan food.

Folks, the “inflammation”🔥 doesn’t come from grains. It’s just a damaged microbiome struggles with fructans, and the consequence looks and feels inflammatory. 😖 But we actually want fructans. They’re PREBIOTIC and good for our microbes.

So how do you fix it? By rebuilding 🔨 your microbiome with slow introduction of a diversity of fiber rich plants and cutting back on junk food, meat and dairy. This isn’t a sprint, it’s a marathon. Take your time, slow and steady.

We grew #quinoa for the first time this year in our teaching gardens, and it surprised us by growing so well in our temperate and low-elevation climate! An abundant and quick crop, we planted our quinoa as a fall rotational planting in late August for an October grain harvest. .

An ancient grain of the Andean Altiplano, quinoa ('kinwa' in Quechua) was traditionally grown 5,000+ years ago by Incan and other pre-Columbian civilizations on the lands of present day Peru and Bolivia around Lake Titicaca. Technically the seed of a plant in the "goosefoot" family (same as spinach and chard), quinoa is a remarkable grain full of manganese, phosphorus, copper and all nine essential amino acids. The leaves are edible too! Yum!

This variety is called 'Brightest Brilliant Rainbow' and came from @bakercreekseeds . So beautiful. 🌈🌈🌈

Celiac disease is NOT a food allergy or an intolerance, it is an autoimmune disease. With celiac disease, eating gluten causes the lining of the small intestine to become damaged. This makes it harder to absorb nutrients from food.

A STRICT gluten free diet is a MEDICAL NECESSITY and the ONLY treatment for people with celiac disease!
Eating even small amounts of gluten will cause damage to the bowel lining even though you may not feel unwell.

Gluten is a protein found in some grains like wheat, barley, rye and oats, but NOT all grains.

Gluten is a composite name, and so gluten represents the following proteins:
- Gliadin in Wheat
- Hordein in Barley
- Secalin in Rye
- Avenin in Oats

📝 A note on oats and Celiac Disease
Did you know 1 in 5 people with celiac disease react to oats?

@coeliacaus recommends that oats should not be eaten by people with Celiac Disease unless they have had a biopsy test conducted to ensure they do not react to oats. ⠀
The current tests for gluten in food can measure gliadin, hordein, and secalin but NOT avenin.

Oats will never be gluten (avenin) free, even if they are described as gluten (gliadin) free.

The Australian Food Standards Code prohibits the use of the claim ‘gluten free’ on oat containing products. This differs to the regulations in Europe and the USA, where oats can be marketed as ‘gluten free’.

These ‘gluten free’ oats are equivalent to oats labelled ‘wheat free’ in Australia, meaning there is no measurable contamination with wheat, rye or barley.

Also note the terms 'wheat' and 'gluten' are often used interchangeably, but it is important to remember that they are NOT the same thing.

While all wheat contains gluten, not all gluten comes from wheat. A wheat free product may still include other gluten containing ingredients. You probably already know this if you have made it through this lengthy post 🙃.
