O capaz escuché mucho Ⓒⓞⓛⓞⓡⓔⓢ de @reynareechok 😄

👉🏻Jugando un poco con los sabores que tenía en casa, se me ocurrió esta mezcla, que a simple vista puede parecer algo rara, pero al paladar es exquisita. Animate a las ensaladas piolas y coloridas, basta de lechuga y tomate!
.
La ensalada tiene:
▪️Colchón de hojas de remolacha (crudo como base, si las vas a comer blanquealas en agua hirviendo 30")
▪️Remolacha rallada fina (cruda)
▪️Zanahoria rallada fina
▪️Cebolla morada en rebanadas (cocidas en agua hirviendo por unos minutos)
▪️Naranja en gajos
▪️Manzana en cubitos
▪️Ricota (opción vegana: tofu desmenuzado)
▪️Semillas de girasol y almendras
▪️Sal y pimienta
Para el aderezo:
▪️Aceite
▪️Jugo de naranja
.
👉🏻Recordá lavar bien las frutas y verduras antes de pelarlas y/o cortarlas.
👉🏻Condimentá solo lo que vas a comer así podés guardar el resto en la heladera.

Waitrose vegan carbonara with added peas and black pepper, picked up yesterday evening for 95p on a yellow sticker (I was GASSED), and it’s probably one of my fave ready meals ever, I always try and pick one up if they’re going cheap. Idk how they make the sauce but it’s so creamy it tastes so convincingly carbonara-esque 🌻

Slightly different style to usual again, but being back at uni this is pretty much my set up now for most of the time I’m awake! I’m really enjoying being back hard at work, my favourite thing about studying architecture is the intensity, although I’m sure in six months when I’ve torn half of my hair out I won’t be saying the same thing 👀🧠

Gooey "Pan dei Morti" brownie, packed with raisins, almonds, spices and orange peel. Made using rescued milk, chocolate and oranges.

The recipe was originally vegan, but I made it vegetarian by using expired cow's milk instead of a plant based drink.

So here's my question: in this case, would you rather save some milk from ending up in the dumpster, or would you keep to a vegan diet and let the milk go to waste?

I'm really not a breakfast person(aka eating early in the morn), especially when busy, but I do like breakfast foods. With my later work schedule this week I've been able to make some quick breakfasts. Here's to the never disappointing avocado on some kind of bread with an egg. 🍳🥑🥯

Wegetariański obiad: Surówka z białej rzodkwi(rzodkiew, śmietanka sojowa, pieprz i sól)+ziemniaki z koperkiem i kotlety z soczewicy i pieczarek😁🌱 Składniki na kotlety: 200g soczewicy zielonej, 200g pieczarek, 1 cebula, 2 ząbki czosnku, sos sojowy, chili, sól, pieprz, bułka tarta, 1 jajko, pietruszka, olej do smażenia
1.Ugotować soczewicę.
2. Na patelni usmażyć cebulę, pieczarki i czosnek, a następnie zblendować.
3. Wymieszać soczewicę ze zblendowaną masą, jajkiem, sosem sojowym, przyprawami i 4 łyżkami bułki tartej.
4. Smażyć na rozgrzanej patelni😊

REVUELTO DE TRIGUEROS CON CHAMPIÑONES A LA PLANCHA
Hoy no deba tiempo a hacer comida muy elaborada así que he tirado y de plancha y buenos procesados: verduras congeladas.
He cocinado por separado las verduras, con una gotita de aceite, y una vez que estaban tiernas he batido un huevo y he echo un revuelto con los trigueros.
Es súper fácil y rápido y a mi personalmente me saca de más de un apuro!

Last nights dinner was such a hit.
I pan seared @beyondmeat burgers with butter, salt, and pepper.
Topped with homemade marinara sauce.
Added sautéed shiitake mushrooms and spinach.
Finally finished with some fresh mozzarella cheese and a sprinkle of black pepper.
This is a vegetarian dish than can be easily converted to vegan by using oil instead of butter and replace the cheese with a plant-based version or just omit.
High protein and high flavor dish. Very filling too.

Sometimes I really wing it in the kitchen and the results are meh. This time however, the results were better than meh. Gently fold seasoned @fage full-fat yogurt into your eggs 🥚 as they cook, or drop a few tablespoons on top of a frittata while it’s still a little runny (👆this). The results are rich, creamy and feel far too luxe for a weekday but I ate it on a Tuesday and can’t recommend enough. You can always season the yogurt beforehand too. I did a little salt, lemon juice, and paprika which was 10/10. Thanks to @freshdirect for the goods #freshdirect #fdambassador

Everyone loved a sheet pancake, right? For lunch today I decided to have a go making a quick and easy savoury version. Laeticia absolutely loved this scrumptious plate, cucumber & plum salad and the houmous dip! ⏰ 15-20
🍽 makes 18-20 squares
❄️ suitable for freezing

Ingredients
.
2 eggs
2 finely grated carrots (can substitute for 100g grated courgette, squash or pumpkin)
25g grated cheese
100ml milk (can substitute for coconut / oat)
6 tablespoons self raising flour (I used organic brown self raising flour)
1 tsp ginger (optional)
1 tsp turmeric (optional)
Method
1. Mix together in a bowl
2. Pour onto lined baking tray (I used baking parchment)
3. Bake at 180-190 fan for 15-20 minutes until golden. Then cut into squares.

1 onion diced
2-3 cloves of garlic, minced
1 tbsp vegetable oil
11 oz mushrooms, sliced (300 g)
4 tbsp white wine (optional)
1 tbsp tamari or soy sauce
3/4 cup vegetable broth or water (180 ml)
3/4 cup plant-based milk/cream (180 ml)
2 tbsp cornstarch
Spice mixture: 1 tsp onion powder, 1/2 tsp garlic powder, 1/2 tsp smoked paprika, a pinch of chili flakes, sea salt & pepper to taste
1 tbsp nutritional yeast flakes (optional)
Fresh thyme leaves and/or parsley (and/or tarragon), chopped
Serve with brown rice or pasta of choice

Instructions
Heat oil in a large pan/skillet, add onion and fry for about 5 minutes. Add garlic and fry for a further 1 minute.
Now add the mushrooms and fry over medium heat for about 5 mins.
Pour in white wine (optional), vegetable broth, tamari (or soy sauce), and the spice mixture. I love adding nutritional yeast flakes as well but that's optional! Bring to a boil.
Add cornstarch to the plant-based milk or cream and stir to dissolve.
Pour the milk/cream mixture into the pan and cook on low-medium heat for about 10 minutes until the sauce thickens. Taste and adjust seasonings as to your preference.
Add fresh thyme leaves and/or parsley and/or tarragon to taste! Enjoy with brown rice or pasta of choice!

INGREDIENTS
Stir-Fry
•1 Large Cucumber
•1/3 Cup Water
•1/3 Cup Cashew Nuts (broken)
•2 Cloves Garlic (minced)
•2 Inches Ginger (finely grated)
•1 Chilli (deseeded and minced)
•6 Tenderstem Broccoli Stalks (sliced)
•2 Baby Sweetcorn (sliced)
•3 tbsp Soy Sauce
•1 tbsp Maple Syrup
•1 Red Pepper (sliced)
•Handful Green Beans (sliced)
•Scallions (sliced)
•Large Handful Kale (shredded)
•3 Nests Wholewheat Noodles
Garnish
•Sriracha
•Coriander Leaves
•Chia Seeds

METHOD
1.  Blend the cucumber and water together to form a liquid. This will be used as an oil replacer!
2.  In a wok, heat some of the cucumber juice and add the garlic, ginger, cashews & coriander. Stir until the aroma of the garlic is released then add the chilli, carrot, broccoli & red pepper. Keep stirring and adding the cucumber mix if required. Mix in the baby sweetcorn, beans and then stir in the maple syrup, lime juice and soy sauce. Add the scallions and kale last, cook for a minute or two, then stir in the noodles and serve
3.  Garnish with sriracha, chia seeds and coriander leaves

RECIPE Sesame Garlic String Beans
1 Tablespoon sesame oil
1 Tablespoon red miso paste, or tamari
1 teaspoon maple syrup
1/3 cup water
10 cloves garlic, minced
24 oz. string beans
Whisk sesame oil, miso paste, maple syrup and water in a small bowl. Wash string beans and snap off ends. Heat a large pan or wok and add string beans. Then add sauce and toss well. Cover and cook a few minutes until the string beans are just tender and serve!! We like these with steamed rice + edamame. Enjoy!!

​Recipe: 2 to 3 servings
Saute 1 block tofu cut in 1cm cubes, and a small package sliced shiitake mushrooms in bit of oil, browning on a few sides.

Roast a small bag of brussel sprouts (cut in half) and bundle of asparagus (tough bottom end trimmed off). Chop half of a seedless cucumber.

Dressing (2-3 servings):
Blend the following
2 T rice vinegar
1 T sesame oil
3 T avocado oil
1 T coconut aminos
1.5 tsp grated fresh ginger
1 garlic clove
1 nectarine*
1/8 tsp each kosher salt and pepper
* cook 1 diced nectarine over medium-low heat with a dash of water for about 3 to 5 minutes covered, until very soft.

Plate all the veggies over baby spinach or other greens, along with a bit of noodles. Drizzle dressing over top. Top with red chili flakes and fresh mint.

THAI RED CURRY NOODLES
Serves 3-4
Crispy Baked Tofu:
1 14-oz block tofu
1 tbsp cornstarch
1 tbsp olive oil
1 tbsp tamari
Curry:
8 oz rice noodles
1 tbsp coconut oil
2 small shallots, chopped finely
5 cloves garlic, minced
2 tbsp minced ginger
3 tbsp Thai red curry paste
half a sliced red bell pepper + 2-3 cups assorted vegetables (I used broccoli florets, fresh bean sprouts, and carrots)
1 14 oz can full-fat coconut milk
1/2 cup water, plus more if needed
3 tbsp tamari
1 tsp ground turmeric
2 tbsp coconut sugar
1/2 tsp salt, plus more to taste
2 tbsp lime juice
For garnish: chopped cilantro, fresh basil, green onions
.
Instructions:
Preheat oven to 425F. Press tofu to remove water (see notes in my blog post for how to do this), then cut into 3/4 inch cubes and toss with soy sauce, olive oil, and cornstarch to coat. Spread cubes evenly on a piece of parchment paper and bake for 25-30 minutes, until golden brown and crispy. In the meantime, place dried rice noodles in a bowl of warm water to soak until pliable (skip if using fresh rice noodles).
In a large saucepan, heat coconut oil over medium heat, then sauté shallot, ginger, and garlic until fragrant and softened, about 2-3 minutes. Add curry paste and cook for one minute, then stir in bell pepper and rest of vegetables, stirring for 1-2 minutes until softened. Add coconut milk, water, tamari, turmeric, sugar, salt, and the prepared rice noodles, and simmer until noodles are tender but still have a chewy bite, about 4 minutes. (If necessary, add in more liquid while cooking.)
Stir in the lime juice. Taste and adjust seasonings as needed. Top with tofu cubes, cilantro, basil, and chopped green onions, and serve. Enjoy!

Equipment: High speed blender, food processor, baking dish or lunch box (approx 10”x 8” or similar)
INGREDIENTS
BASE
2 cups walnuts
¼ tsp Himalayan pink salt
12 medjool dates (pitted)
1 tbsp cashew butter
½ cup cacao powder
CARAMEL
10 medjool dates (pitted)
⅓ cup maple syrup
⅓ cup cashew butter
½ tsp Himalayan pink salt
1 tsp vanilla extract
1 can chilled coconut milk (use only the thick part from the top of the can)
1 tsp coconut oil (solid)
CHOCOLATE COATING
200g vegan chocolate
1 tsp coconut oil (solid)
GARNISH
9 x pecan nuts
Some more Himalayan pink salt
PREPARATION
To make the base begin by adding the walnuts and salt to your food processor.
Blitz until they form a light crumb consistency.
Add the cacao powder and blend for another minute to combine.
Lastly add the dates and cashew butter and blend further for a couple of minutes until the mixture starts to stick together to form a dough.
Line your baking dish/lunch box with parchment paper and press the brownie dough evenly into the base of the pan.
Alternatively you can roll the brownie dough out between 2 sheets of parchment paper using a rolling pin. Set the brownie dough aside in the fridge.
For the caramel, add all the ingredients to your high speed blender and blitz until smooth and creamy without any lumps.
Transfer the caramel to a bowl and refrigerate for 30 minutes.
Use a spatula to evenly spread the caramel over the brownie base (you can use all or just part of the caramel mixture if you prefer). Set aside in the fridge to chill.
Melt the chocolate and coconut oil and stir well.
Pour the chocolate on top of the caramel brownies and stud the mixture with pecan nuts.
Sit the brownies into the freezer for about 15 minutes to set.
Lastly, sprinkle with some Himalayan pink salt for garnish and cut the brownies into 9 portions using a sharp knife.
