Spaghetttikürbis indische Art mit extra-scharfem Mango-Pickle, Joghurt und Sesam.
1. den Kürbis halbieren, mit Olivenöl bestreichen und Meersalz bestreuen.
2. für 20 Minuten bei 180 Grad in den Ofen. Dann vorsichtig das Fleisch vom Rand lösen mit einer Gabel.
3. wieder etwas Öl und Salz drüber und zurück in den Ofen für weitere 20 Minuten.
4. das Fleisch komplett lösen und umrühren.
5. für dieses indische Rezept habe ich Chili und Reis untergemischt und dann ein Topping aus Joghurt und scharfem Mango-Pickle verrührt und als Soße drüber gegeben.
5. Mit Sesam, Chiliflocken und Kurkuma dekorieren.

I don't normally eat breakfast, but I tend to get hungry when I don't have time to eat around 12 so today I made myself this tofu and justegg scramble with spinach and kale. I could only finish a few bites before I was full so hopefully that feeling lasts past noon.

It’s #whitefish season! @katesfishmarket has been sourcing the most beautiful fish for us. This is the time of year that whitefish is most plentiful in the #greatlakes. We’re smoking as much as we can so that we have it for you through the winter. As soon as the lakes freeze over the fishermen and women take a break until spring.

Instant vegetable pulao Indian style quick vegetable rice. Our family's favorite.

Ingredients

2 tablespoons cooking oil
1/4 tsp fennel seed
1/4 cup onion chopped
1 tbsp garlic minced
1 tbsp ginger minced
4 number green chili
1/4 cup carrots
1/4 cup green beans
1/2 cup green peas
13/4 cup water
1 tsp salt
1 Cup basmati rice washed rinsed and soak for 10 minutes

Instructions

Keep the instant pot in sauté mode.
Add cooking oil and fennel seeds.
Then add chopped onion and sauté till becomes pink.
Add minced garlic, ginger, and green chilies and sauté further until it changes its color slightly.
Then add chopped vegetables and sautéed for 2 minutes.
Stir in water, salt, and the basmati rice.
Close the lid and set cooking time for 6 minutes.
Once the cooking cycle is over, quick release the steam.
Open the lid and give a gentle stir.
Serve hot.

This is the dreamiest recipe, inspired by @happyskinkitchen 🥰 Punchy tomato and wild mushroom risotto for lunch, super tasty and easy, step by step in story and recipe below 🍚🍅

🛒 Ingredients:
• 1 Cup of Halved Cherry Tomatoes
• 1 Pack of Wild Mushrooms
• 1 Cup of Risotto Rice
• 2 - 3 Cups of Vegetable Stock
• 1/2 a Cup of Oat Milk
• 1 Tsp Rose Harissa Paste
• 1 Tsp Dried Parsley
• 1 Tsp Garlic Powder
• 1 Tsp Chilli Flakes
• 1 Small White Onion (Diced)
• 3 - 4 Cloves of Garlic (Crushed)
• 1 - 2 Chopped Chillies
• 1 Tbsp Olive or Rapeseed Oil
• 1 Tbsp Salted Butter

👩🏻‍🍳 Method:
• In a small wok or sauté pan, sauté the garlic, chilli and white onion in the oil and butter until they begin to sweat. Then stir in the risotto for a few minutes.
• To make the stock, in a separate jug add the vegetable stock, garlic powder, parsley, and chilli flakes. Add the stock bit by bit to the risotto and stir consistently. Then add the Rose Harissa Paste.

My take on teriyaki tofu balls by @woo.heng @bestofvegan My one-year-old daughter loved the balls. These balls are even good as snacks by themselves

I made some changes to the recipe
I didn’t have broccoli so instead of adding chopped broccoli stems to the balls I added finely chopped cabbage.

Instead of blanched broccoli on the side, I had backed cauliflower and sauteed mushrooms

I am not a big fan of sweet sauces, so I made some changes to the sauce. I did not add brown sugar, along with all the other ingredients, I also added chili garlic paste and black bean paste. Mirin gave it slight sweetness, so it was mostly spicy and sweet sauce. I also let the tofu balls simmer in the sauce for 10 min.

Ok, so I’m talked to the doctor yesterday and I’m going back to work soon! I’m still a bit tired and have low energy so he’s suggested I little more time off, during which time I’m expected to keep doing all the self care things (eat well, sleep well, therapy, keep calm etc.) and especially get my body moving. .

It’s been hard with the grey days, the rain, the cold etc to get outside. I have had crappy Novembers almost every year because of the shorter days and the time change. Oh, the time change, it always throws my sleep off my hours! Am I the only one?

Anyway, making plans for the next week or so and I have a quandary. My sister and I both had big birthdays in October and planned to go on a trip to Thailand to celebrate, but that, like many things this year, was squashed by my illness. We scrapped Thai plans earlier this year. She and her partner are going to NYC next week for her partner’s bday and I was originally supposed to join them as a last attempt to salvage a sister celebration. I stepped back before deciding to make it official in September since my mental health was very much in decline. .
.
So... now I’m debating going to NYC after all. Ignoring my panic at the idea of an unplanned, last minute trip (though I did get an Easter in Belgium that way in 2014!) it feels weird to go on a trip while on sick leave, but depression has taken so much from me... I think maybe I don’t need to feel guilty. 🤷🏻‍♀️ I’m supposed to push myself to move for and I can’t think of a better incentive than the Museum of Natural History. Time will tell... .

The fig is native to the Mediterranean Sea. The cultivation history has been more than 5,000 years. Because the appearance is not visible, so the fruit is named fig. The fig is rich in nutrients. In ancient Greece, figs were regarded as fruits that must be eaten when training for Olympic athletes. They also have the reputation of "fruit of life". Fig is both a fresh fruit and a Chinese herbal medicine. Fig contains a lot of sugar, vitamins and amino acids, malic acid, citric acid, hydrolase, as well as rich mineral selenium, dietary fiber, etc., with anti-inflammatory, edema, promote digestion, anti-cancer, lower blood.^_^

The fig is sweet and flat, non-toxic, cures the five sputum, sharpens the throat, reduces swelling and pain, and relieves sore venom.  The fig looks slightly like onions, the fruit is hollow, and the skin is purple or reddish brown.

Good morning! Today’s lunch is a vegan frittata (or at least my attempt at one!), sweet potatoes, pita chips, and raspberries. Packed in @easylunchboxes !

Over the weekend I had an AMAZING vegan frittata at one of our favorite restaurants, Red Lentil. You can see it in my “restaurants” story highlight on my profile. It had asparagus, sweet potatoes, vegan sausage, onions, peppers, tofu “eggs” and vegan mozzarella. I tried to recreate the dish for dinner last night and I think it came out really well! Saff and Patrick both liked it a lot 👌🏼 To make this frittata I sautéed the veggies (I didn’t use vegan sausage in this, but you could) in a pan on the stove and then put them in a baking dish. Next I made the tofu eggs by breaking up some firm tofu and stirring it around in a pan with olive oil, turmeric, garlic powder, salt, and nutritional yeast. Then I layered the tofu eggs on top of the veggies in the baking pan, sprinkled some vegan mozzarella on top, and put it under the broiler in the oven for a couple minutes until it got nice and bubbly on top. Served it with baked sweet potato fries and sriracha mayo on the side 😊

2 15-oz cans of organic chickpeas, rinsed

2 cups of kale or Swiss chard 🥬
2 teaspoons of garam masala
2 teaspoons of ground coriander
2 teaspoons of ground cumin
2 teaspoons of grated ginger
1/2 teaspoon of turmeric
2 teaspoons of honey or coconut sugar
1 teaspoon of smoked paprika
sea salt to taste 🧂👌🏼
fresh cilantro or lemon thyme for garnish (I used lemon thyme from my garden)
1 tbsp of fresh lemon juice
1/4 cup of water

Instructions 🌟🌟🌟🌟🌟
In a skillet or large, non-stick pan warm up the oil in medium/high heat. When the oil is sizzling and you hear that crackle, add the onions & tomatoes and let them simmer & cook for about 3 minutes, while stirring often. Once the onions & tomatoes have softened, add the chickpeas, kale & throw ALL of the above spices as well as the garlic & ginger- except for the cilantro and/or lemon thyme. Also ensure to add the 1/4 cup of water and the 1 tbsp of fresh lemon juice. Bring everything to a simmer. Lower the heat to medium to low, cover with a lid & cook for an additional ~10-12 minutes. Stir often. Add more water, if needed. It should be moist and rich with sauce, but remember- this is not a soup. 🙂Serve over jasmine or basmati rice or quinoa & garnish with fresh cilantro or lemon thyme. Enjoy every spoonful! 🥄 .

But, I do like routine and there’s certain things that have worked really well for me, which I openly share in this space with you guys. One of them is sticking to a light, but satisfying dinner. I do mostly plant-based or vegetarian at night and stick to protein-heavy meals at lunch time. I’ve lately been on a salmon and roasted squash kick; I also like chicken and olives and jasmine rice. 🙃🙌🏻💣 Mornings are usually carbs, healthy fats and fruit. I am not afraid of all the natural sugars in fruit. I eat tons of it daily & it works for me.

Spiced Fries with Roasted Garlic Hummus by @plantbased.traveler

2 sweet potatoes
2 yellow potatoes
1-2 tbsp grape seed oil
1-2 tbsp French fries spice mix

Preheat oven to 400 F (200 C).
Cut peeled potatoes into even strips. Cut them as evenly as possible. Choosing potatoes of similar shape and size helps!
In a bowl mix together oil and spices.
Add potatoes and use your hands to toss them in the spice mix until everything is evenly covered. Bake them for 50-60 mins on a lined baking sheet, giving them a stir once or twice in between.

Oil-Free Spinach, Basil & Kale Pesto ~ 2 cups tightly packed spinach, 2 cups tightly packed basil, 1 cup chopped kale, 1 1/4 cups pine nuts, 4 tsp minced garlic, juice of 1 lemon, 1/4 cup nutritional yeast flakes, 1/4 cup water, 1/4 tsp salt. - Add the greens to a high-speed food processor, blitz until finely chopped. Add the rest of the ingredients & blend until well combined & your mixture resembles pesto. Occasionally stop to scrape down the sides of the food processor.

Ingredients

1 lb of Short Pasta ( I used a really fun shape called Fusilli Bucati Corti)
6 slices of Follow Your Heart Smoked Gouda Cheese

1 cup of Raw Cashews ( I use Terrasoul Mylk Cashews)

1/3 cup Nutrional Yeast

1 tsp of Garlic Powder

1 tsp of Onion Powder

1 tsp of Dried Tarragon

1 tsp of Liquid Aminos or Light Soy Sauce

3 tsp of Horseradish Mustard

2 1/2 cups of Unsweetened Plant Milk ( I like Unsweeted Cashew Milk from Silk)

Salt & Pepper to taste
Bread Crumb Topping:

1/3 cup plus Seasoned Bread Crumbs

1 Tbsp of Vegan Butter melted

1/2 tsp of Garlic Powder

Chopped Parsley for garnish

Directions
1. Soak the Cashews in enough hot water to completely cover them for at least 30 minutes.
2. Rinse the Cashews after soaking and blend them with about half of the Plant Milk until completely smooth and creamy

3. Add in the Nutrional Yeast, Liquid Aminos, Mustard, Spices and Gouda Cheese (cut the slices into smaller pieces) and blend again until smooth
4. Season with Salt & Pepper, add in the rest of the Plant Milk and blend again until completely creamy

5. Cook the Pasta according to package directions and once drained add back to the cooking pot.

6. Pour the Cheese Sauce over the cooked Pasta and mix well

7. Pour the Mac and Cheese into a baking dish and top with the bread crumb mixture

8. Cover with foil and Bake at 350 for 30 minutes

9. Garnish with chopped Parsley before serving

Ingredients For 500g spaghetti

1. Preheat oven at 180 degrees.
2. Put the diced vegetables into a bowl, add 4 tbsp of oil, mix and then add the spices and mix well again.
3. Put the vegetables into a suitable shape and bake for 35-40 minutes. 4.Slightly fry the garlic in a saucepan with a little oil, add the tomatoes, add 4 tablespoons of oil and season with salt, pepper, chili, paprika, rosemary and thyme.
5. Simmer for 20 minutes at medium heat.
6. Then cook the spaghetti and then put it under the tomato sauce.
7.Once the vegetables are ready, put the spaghetti in a plate and top with the still hot vegetables from the oven.

🍄😋 Homemade Gnocchi & Mushroom Stroganoff and chickpeas by @elavegan

Ingredients
-2 1/4 lbs potatoes (e.g. Yukon Gold), peeled and chopped (1 kg)
-1 1/2 to 2 cups chickpea flour (180-240 g)
-1 cup tapioca flour + more for dusting (120 g) (*see recipe notes)
-1/2 tsp sea salt

Instructions

Peel and chop potatoes, transfer them to a pot with salted water and bring to a boil. Cook on medium heat for about 15 minutes or until tender, drain. Transfer back to the pot and mash with a potato masher (don't use a food processor or blender). Add 1 1/2 cups of chickpea flour and the tapioca flour and knead with your hands until a dough forms.

The dough might still be a bit sticky but it should be fine to handle. However, if the dough is too sticky then add more chickpea flour and knead again. It depends on the type of potato whether you will need 1 1/2 cups or 1 2/3 cups or up to 2 cups of chickpea flour.

Cut the dough into equally sized pieces and dust with a little bit tapioca flour.

With your fingers, roll each piece to strands. Use a knife to cut the dough into 1-inch pieces and form them to small balls with your hands. You can roll every ball over the back of a fork if you want ridges on your gnocchi (this step is optional). Watch the video above to see how easy it is.

Add the gnocchi to a pot of salted boiling water. Once the gnocchi rise to the surface (after only 2-4 minutes), remove them with a slotted spoon.

You can now serve them with a sauce of choice OR fry them for a few minutes in a pan with a little bit of vegan butter or vegetable oil. They will turn crispy and even more delicious. Enjoy!
