🍳Brunch at the gym🍳 I really fancied a cooked breakfast for once and for 500cals you can't go wrong! I also love small sachets or packets of things (sorry environment) as it's easier to track exactly what you're having without weighing things as I do at home! So I had 1/2 the butter on both pieces of toast (both something I hardly ever eat) and 2 sachets of ketchup so I know exactly how much I had and I really enjoyed this brunch!

Long time no see sorry been a little bit stressed, but my last exams on Thursday so I’ll be back to posting as normal by Friday. Anyways dinner was some yummy Avocado pesto pasta 🥑

I’ve never had any trouble eating my greens; I love them! And I loved the Sautéed Green Breakfast @mrpattersoncafe with kale, broccoli, asparagus, green beans, avocado, garlic, mix nuts, macadamia dukkah, goat cheese and a poached egg. This was packed full of flavour and texture 😋❤️😋

- Crisp up 2 corn tortillas in a pan with a little oil ⁣
- Layer with refried beans on one tortilla, salsa roja on the other, then two fried eggs, cilantro, feta (for those that don't have queso Cotija) crema fresca and hot sauce⁣

Pro tip: Chorizo in your salsa roja will make it next level 👏

HELLO TO THE BEST FALL BREAKFAST GRILLED CHEESE EVER 🍎@kalememaybe Sourdough Breakfast Grilled Cheese filled with vegan mozzarella (@miyokoscreamery), soft-scrambled eggs, apples, sage, arugula, and honey. I have been feeling in such a recipe rut recently, and this ignited a fire in me. RECIPE BELOW:

2 slices sourdough bread
Butter, ghee, or oil
@miyokoscreamer mozzarella (or any cheese of choice, this is just what I used)
3 apple slices
2 pasture-raised eggs (I used @vitalfarms)
Salt & Pepper
2 sage leaves
Handful of arugula
Drizzle of honey

Butter or oil one side of each slice of bread. On the other side, spread the cheese. Top with apple slices and then sage.

In a medium pan, heat butter or oil on low. Scramble eggs in a bowl along with a pinch of salt and pepper, add to pan, and slow cook the eggs. Move the eggs in the pan periodically so the bottom doesn't burn, and keep going until eggs are cooked and curdled. This could take a bit, but the slower, the softer they will be. When eggs are done, transfer them on top of the slice of bread with the cheese and apples. Top with arugula.

Clean the same pan, or use another medium pan, and heat a little more butter/oil on the pan on medium. Add the sandwich into the pan, butter side down. Cook for 4 minutes on each side or until golden. Finish off with a drizzle of honey.

Holy mother of pancakes. [save, share, and tag a pancake lover] here’s what I’ll be having all week. Check my story and turn your post notifications.
What your sexy self will need:

2 whole eggs
2 tbsp coconut flour
1 large ripe banana
1/8 teaspoon cinnamon powder
1/3 cup unsweetened almond milk
Stevia to taste
1/4 cup oats (make into flour by blending the oats to a fine texture). 2 tbsp my banana muffin protein (optional) @tru_supplements

Blend everything well. Cook then in medium heat by using a non stick spray. Make them as small or as big as you’d like.
You can switch up toppings every week. This is my pre workout meal. This is the fuel that will help me have the energy for my workouts, and satisfy my cravings.

fluffy inside, crispy outside 😪 sweet lord these be good 🐍 banana pancakes. buttery and delicious and just. perfect :’) i topped mine w some trail mix peanut butter (ty @rdegregoreos ☺️)

ingredients (for 6-8 pancakes)
3/4 cup AP flour
1 tbsp sugar
1-1/4 tsp baking powder
1/2 over ripe banana
1 egg
1/2 cup + 1 tbsp milk (i used oat milk)
1/2 tsp vanilla
1.5 tbsp butter, melted (i used miyokos vegan butter; if using unsalted butter add 1/4 tsp salt to batter)

directions
1. in a bowl, mix the flour, sugar, baking powder, and salt if using unsalted butter.
2. in another small bowl, mash the half of banana with a fork until it’s all smooth, then whisk in the egg. add the milk and vanilla and whisk until blended. pour this banana mixture and the melted butter into the flour mix. fold the batter genttttlly with a rubber spatula until it’s just blended. don’t over mix :)
3. heat a non stick pan over medium heat until hot. put a pad of butter and and a nice drizzle of oil onto the griddle and swirl it around. drop the batter by 1/4 cup-fulls onto the pan. cook until a few bubbles form on top of the pancake and the bottom is golden brown (about 2min). flip and cook until the bottom is golden brown and the top is puffy. i froze the extra for another day!!

(potential tw?) someone once asked me what my deal is w breakfast. fair question lol. breakfast has always held a pretty special place in my heart. for me, it was my mom toasting mini bagels and spreading them with cream cheese and jelly before school. it was the pancakes and eggs on saturday mornings w my family. it was our christmas morning breakfast, when we each got to choose whatever we wanted. most of us chose “aunt fran eggs,” the ~recipe~ from my great aunt that my mom has kept alive in honor of the greatest woman in the world. it was our weekly breakfast for dinner. it was the bagels w lox and cream cheese my mom and i would get together in the mornings she’d bring me with her to work. or the never ending bowls of apple jacks and fruit loops and frosted flakes i scarfed down before high school, reading whatever book was currently at hand. it was all of that, until it wasn’t. when my eating disorder slowly took that away from me. it became a granola bar before calculus in college, and then a green smoothie before linear algebra, and then just an apple before data mining. it created irrational rules for what i could and couldn’t eat. for years i didn’t even let myself eat bananas 🤧 and then it was nothing. for years! for years i told myself i was not allowed, not allowed to eat my favorite meal. i guess at the time it gave me some sort of sense of control, when it felt like the world around me was so.. uncontrollable. and i’d like to think i wouldn’t be the strong woman i am today without all of that but! my eating disorder took away from me the meal that used to bring me memories and joy and love. so i worked hard, and became uncomfortable for a bit. but worked really hard to get it back in my life. so yez, i have a thing for breakfast but. i think it’s for good reason 💘🐝🦋🐛 also congratulations and ty if you’ve read to this point lol. twas a long one.

being vulnerable is terrifying; exposing those parts of yourself you’ve kept hidden out of fear of judgment or abandonment takes endless bravery.. and courage. sometimes you will be met with love. and empathy. and a sort of patience filled with care, and a desire to understand every single part of you. but there could also be other times. where you’re met with disdain and disregard. that doesn’t mean it’s not worth it to open yourself up again. to try again. you are worth knowing 💛🥞 xx, d

Seriously the BEST Plant Based Muffins around! Vegan Blueberry Muffins by @foodwithfeeling 💙 How delicious do these look?

INGREDIENTS:
1 cup of flour (I use all purpose but you can also use whole wheat, pastry flour, or a glu10 free 1–1 substitute)
1/2 teaspoon of baking soda
1 teaspoon of baking powder
Pinch of salt
1/2 teaspoon of cinnamon
1/4 cup of maple syrup
1/2 cup of almond milk
3 tablespoons of nut butter- I used almond butter this time but have also made these with peanut butter
1 teaspoon of vanilla extract
1 medium banana, mashed heaping
1/2 cup of blueberries (I prefer to put frozen blueberries into the muffins but fresh work as well)
INSTRUCTIONS:
Pre-heat oven to 350 degrees F. Grease a 6 cup muffin tin. Sift together the flour, baking soda, baking powder, salt, and cinnamon. Stir in the milk, nut butter, maple syrup, vanilla extract, and mashed banana. Stir until well combined and then gently fold in the blueberries. Evenly spoon the mixture into the 6 muffin cups and top with a few more blueberries if desired. Bake in oven for 24-28 minutes or until golden brown and a toothpick inserted in comes out clean. Let cool slightly and ENJOY!!
