🍽 Eggplant Basil With Mock Duck.
I’ve had this dish about 5 times in my life here. It’s their only full vegan dish that I know of, but delicious enough to keep coming back for it. 
The mock duck is made of seitan which is wheat gluten. It’s good for those who want a more meaty texture in their vegan dish. I love it. .

Not for any other reason than I forgot them when I went shopping yesterday and living in the middle of nowhere, shops aren’t open today. I’ve also added turmeric for the anti-inflammatory properties which will help my cold. I’ve made a pledge to myself that I will get back to my routine today so will be meal prepping later on. Ingredients:
230g black beans
14 pitted dates
1 cup cacao powder
4 tbsp potato flour
2 tbsp coconut oil
0.5 cup oat milk
0.5 tsp salt
1 tsp baking powder
80g vegan dark chocolate
1. Mix all of the ingredients except from the dark chocolate.
2. Pour the dough into a form. 
3. Bake in the oven for 30 minutes (175 degrees)
4. Melt the dark chocolate and cover the cake. 
5. Let the cake set for one hour before serving.

What do I eat a night before a race? 
Tonight its Dr. Pragers Broccoli Littles. Surprisingly the first non-vegan food ive had this week thanks to the #forksoverknives #hearthealthychallenge (it contained egg whites). Sprint Triathlons don't really require much carb loading, and so these guys aren't the carb bombs you'd think. Instead they have a medium amount of carbs, protein and sodium (read electrolytes). My breakfast is the true energy boost I'll need. #vegetarian #butsometimesieatfish

What do I eat a night before a race?
Tonight its Dr. Pragers Broccoli Littles. Surprisingly the first non-vegan food ive had this week thanks to the #forksoverknives #hearthealthychallenge (it contained egg whites). Sprint Triathlons don't really require much carb loading, and so these guys aren't the carb bombs you'd think. Instead they have a medium amount of carbs, protein and sodium (read electrolytes). My breakfast is the true energy boost I'll need. #vegetarian #butsometimesieatfish

FROZEN DRAGONFRUIT topped with COCONUT WHIP 🥥 Cut the dragon fruit in half and THEN freeze it overnight, enjoy the next day with some coco whip on top ⚡️ COCONUT WHIP CREAM 
1 can of unsweetened coconut milk (organic brands make for a better consistency) 
1-2 tbsp of organic raw cane sugar or coconut sugar 
1 tsp of vanilla 
Refrigerate the can overnight or for at least 8 hours. 30 minutes before making it put the blender, mixer, or food processor bowls or pieces into the fridge to keep those cold as well. Then open the can and remove any of the liquid on top and also look for some on the bottom, then dump the solid milk in the mixer, mix on low-medium for about 5 min and then on high until you like the consistency. 2 cups (180 g) instant oats (gluten-free if needed) ground into flour
3/4 cup (120 g) white rice flour
1 1/2 cups (130 g) shredded unsweetened coconut ground into flour 
1 cup (150 g) coconut sugar (or use 150 g white sugar)
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt

Wet Ingredients:
2/3 cup (160 g) apple sauce or 160 g peeled zucchini
1 1/3 cup (320 ml) coconut milk canned
4 tbsp (80 g) maple syrup or agave syrup
1 tbsp white vinegar or apple cider vinegar

Frosting:
340 g (1 medium or 2 small) Japanese sweet potato
2/3 cup (160 g) coconut butter
1/3 cup (105 g) maple syrup or agave syrup
1/2 cup (120 ml) coconut milk canned
4 tbsp (40 ml) coconut rum or use more coconut milk

Instructions
Peel the Japanese sweet potato and chop into 1-inch cubes. Boil in water until fork tender. For this recipe, you will need 340 grams of cooked sweet potato (about 1 medium Japanese sweet potato or two small ones).
Meanwhile, process the oats and shredded unsweetened coconut in an electric spice/coffee grinder or blender. Then add all dry ingredients into a bowl.
Preheat oven to 356 degrees Fahrenheit (180 degrees Celsius). Grease two 8-inch (20 cm) or 7-inch (18 cm) cake pans (or springforms) and line the bottoms with parchment paper.
Process the wet ingredients in a blender and pour the mixture into the bowl of dry ingredients. Whisk until combined.
Divide the batter between the two cake pans and bake for about 30-35 minutes or until a toothpick inserted into the center comes out almost clean. It can still be a little bit crumbly but shouldn't be wet! If you use just one cake pan the baking time will be much longer (about 50-55 minutes) .
While the cake is in the oven, you can prepare the frosting. Simply process all frosting ingredients in your blender until completely smooth and creamy.
Once the cake has cooled completely, frost it and decorate with coconut flakes. Chill in the fridge for about 3 hours before serving. Enjoy!

It's summer here and still strawberry season, so I savour it to the fullest 🍓😍 I was looking for some summer salads inspirations and found the one 👆🏼 It's a green salad with strawberries and ricotta and it's so simple and delicious 🤗 I can't get enough of it. 
Ingredients (for 1 person): 150g strawberries
75g ricotta cheese
a handful of corn salad or spinach
a few roasted almonds
Honey-ginger vinegar sauce:
1tsp honey
1tsp olive oil
2tbsp lemon juice
a pinch of minced fresh ginger
Mix all together and enjoy 😌🌿 A whole plate is only 318 calories with 10P, 21C and 21F.  It's so good!! 🤩 Try it and believe me, you're not gonna regret.

Regram from @foodpassionical - Deep fried Summer Rolls anyone? 🌱 Tag your photos with #gloobyfood and we will regram our favourites
Recipe: 
10 pcs spring rolls wrappers 
1 small purple cabbage- finely sliced 
1 carrot- thinly sliced 
20 gm cellophane noodles -soak in hot water for 10 minutes, drain out the water.
50 gm bean sprouts
Some crispy garlic
1 tbsp Sesame oil
Onion salt for taste 
Coriander for garnish
Add in the cooked rice noodles, sesame oil, crispy garlic and onion salt in a big bowl (set aside).
Place a spring roll wrap onto a towel and fill it with all the fresh veggies and top some cooked glass noodles. Make a sausage like shape out of the fillings at one end of the wrappers. Fold sides in and begin rolling the spring roll. At the end of the rolling seal it by moistening the edge with water.
Heat the oil over medium-high heat. Fry the rolls and ensure turning frequently until the spring rolls turn golden brown. Finally serve with any your favourite dipping sauce.

1/2 cup sweet white rice flour
1/2 cup blanced almond flour
2 tbsp cornmeal
1/4 cup potato starch
2 1/2 tsp baking soda
2 tsp salt
1/2 tbsp garlic powder
1/2 tbsp onion powder
1 cup plant milk
2 tbsp white wine vinegar
Thinly sliced assorted veggies (like kimchi, carrots, garlic, perilla leaves, chives, onions, green onions, peppers)

Method
Add vinegar to plant milk and set aside. Mix all other ingredients (except veggies) together and then add plant milk. Stir with whisk--the batter will seem pretty thick.  In a non-stick pan, add a little oil and let it sit over medium high heat for a few minutes (to get hot). Then throw on a few sliced up veggies so they sizzle. Add a ladle-ful of batter which will ooze around the veggies that you already placed. Lower heat to medium. Let the batter cook just like a regular pancake. Flip when one side is fully cooked and remove from pan when both sides are cooked. Serve with dressing (soy sauce, rice wine vinegar, mirin, maple syrup, Korean pepper powder, and toasted sesame seeds). #bestofvegan

Vegan Japanese Coffee Jelly Dessert by @okonomikitchen 💜

INGREDIENTS

2 cups water (500ml)
1 tbsp high quality instant coffee granules 
2 tsp Japanese agar OR Kanten powder (8g)
3 tsp sugar (15g)
1/2 cup coconut evaporated milk (125g)
3 tbsp coconut condensed milk (45g)
INSTRUCTIONS

Bring 2 cups of water to a boil in a small pot. Turn down the heat to a simmer and add in the agar, coffee granules and sugar. Use a whisk to stir every few seconds, for around 2-3 minutes or until the coffee and sugar dissolves completely. 
Remove from the heat and transfer into a shallow dish. Allow it to cool for 5-8 minutes or until room temperature. You can speed the process by placing the shallow dish over ice packs. Place into the fridge and allow to chill until firm.
Make the sweet milk by combining the evaporated coconut milk with the condensed milk with a whisk and place in the fridge to chill. 
Using a sharp knife, cut the coffee jelly into cubes inside the dish. Scoop coffee cubes into cups and pour over the sweet milk. Optional: for the gradient effect of the coffee colour on top, slow add in 1 shot of chilled espresso. Enjoy! #bestofvegan
