TARTA SCONE DE FRESA🍰

La verdad es que es la receta que más hago porque tardo menos en hacerla que en recoger mi habitación 🙃 en vez de fresas puedes poner otros frutos rojos o yo que sé...piña si quieres aunque seguro que sabe a culo ↪️INGREDIENTES SECOS

230 gr de harina de avena (avena molida)
6 cucharadas de endulzante, azúcar moreno/panela/azúcar mascabado...
🍓Fresas ↪️INGREDIENTES HÚMEDOS

70 ml de bebida vegetal
50 gr de aceite de coco fundido (o el aceite vegetal que tú quieras) *Opcional: esencia de vainilla, queda muy bien ↪️PREPARACIÓN

No he puesto vídeo pero vamos que es tan fácil como primero mezclar los ingredientes secos (puedes poner las fresas por encima o dentro de la masa) y luego echar los ingredientes húmedos y mezclar hasta hacer una bola. Luego la aplastas FINITA y le das forma y al horno precalentado 20 mins a 180°

I woke up naturally this morning around 7.45am with no alarm, lay in bed and just dozed until about 8am. As someone who naturally wakes up pretty early, 8am seems like a pretty good lie in! My body now feels rested and my mind more at ease. Whatever time it is you need to wake up, I really recommend trying a day without an alarm. There’s something so refreshing about waking up because your body wants to, not because it’s forced to!
Then breakfast ➡️ Today I fancied something a little different so made this super thick chocolate nana smoothie bowl 🍫🍌. It was HEAVENLY.
Deets as follows: 1 large or 2 small ripe bananas (preferably frozen in chunks) // 2 chunks of courgette (you won’t taste it, I promise 👍) // 1/2 cup Greek yoghurt // 1 scoop  chocolate pea protein // 1 small handful of cashews // 1 tsp chia seeds // 1 tsp cacao powder // 1/2 tsp ground ginger // 1/2 tsp sweetener + a *tiny* splash of liquid to blend. Topped with raspberries,  cherry bomb granola + lots of tahini ✨

Vegan Spiced Cinnamon Rolls w/caramel glaze by @tumblinbumblincrumblincookie 💛 Recipe⠀
Ingredient⠀
2/3 cup pumpkin puree⠀
1/3 cup vegan butter⠀
2/3 cup soy milk⠀
1/4 cup warm water⠀
1/2 tsp vanilla⠀
1/4 cup vegan sugar⠀
2  1/4 tsp instant yeast⠀
1/2 tsp salt⠀
1/4 tsp nutmeg⠀
about 3 cups all purpose flour⠀
⠀
For the filling⠀
1/2 cup brown sugar⠀
1 tbsp cinnamon⠀
1/4 cup melted vegan butter⠀
⠀
For the caramel glaze:⠀
2 tbs vegan butter⠀
1/4 cup brown sugar⠀
1 tbs plant milk ⠀
1/4 tsp cinnamon⠀
1/2 tsp vanilla⠀
1/4 cup + 2 tbs icing sugar⠀
⠀
Instructions⠀
Heat the soy milk and vegan butter in a small saucepan until the butter is melted. Transfer to a mixing bowl and let it cool till body temperature, where a finger stuck into the mix feels like it is immersed in bathwater. Add the yeast, warm water and pumpkin puree and let the mix bloom for about 5-10 minutes. Add all remaining ingredients and knead until the dough becomes smooth, pliable and shiny (add a little more flour if necessary). Turn into a lightly greased bowl, cover with a damp towel and let it rise till double in size, about 1 hour.⠀

When it has risen, punch your dough down and turn out onto a floured surface. Knead a few times to make it a smooth dough and roll out into a rectangle, about 1/8 to 1/4 inch thick depending on how many swirls you want. Mix your cinnamon with your sugar and spread the dough with the vegan butter. Sprinkle with the cinnamon sugar evenly and roll it up like a jelly role, pinching the seams to seal. Cut with a sharp knife or dental floss into 8 large rolls and tuck into a greased baking pan of your choice. Cover and let rise till doubled in size, 20-30 minutes.⠀
⠀
Bake at 180C/360F for about 25-30 minutes till it is golden brown, letting the dish cool on a wire rack. For the glaze, heat the butter until melted before stirring in brown sugar and plant milk; cook for about 1 minute before transferring to another bowl to cool. Stir in your vanilla and sift in the icing sugar, adding more or a splash of plant milk to reach your desired consistency. Drizzle over the warm rolls and serve. Enjoy! #veganfoodspace

Taki oto obiad spreparowałam parę dni temu. Upiekłam pełnoziarniste buły, ukręciłam majonez ze słonecznika, usmażyłam obłędny kotlet z soczewicy i brokuła. Zapakowałam to wszystko wraz roszponką, pomidorem i cebulką w postać pokaźnego wegeburgera. Możecie sobie wyobrazić ile było po tym wszystkim garów do zmywania 😂

- 7 oz (200g) spaghetti⁠
- 3 cup (720ml) vegetable broth⁠
- 1.5 cups (260g | ~2) tomatoes, chopped⁠
- 1 onion, sliced in thin rings⁠
- 2 cloves garlic, minced⁠
- 2 tbsp tomato paste⁠
- 2 tbsp olive oil⁠
- 2 tsp dried oregano⁠
- 2 tsp dried basil⁠
- salt & pepper⁠

Instructions:⁠
1. Option One: Break the spaghetti in half and place in a pot. Add all the other ingredients and bring to the boil.⁠

I think I’ve found my new favourite way to cook tofu: crumbed and baked. This  recipe is great for those who think tofu is plain/boring/tasteless (not true!) or those who want to mix up how they cook this versatile source of plant based protein. —————
INGREDIENTS:
• 1 block of firm tofu • 1 cup panko breadcrumbs
• 3 tbs nutritional yeast
• 3 tablespoons vegan mayonnaise (I used @dibblefoods)
• 3 tbs mustard • 2 tbs Chinese five spices • 1 tsp smoked paprika
• Salt and pepper —————
METHOD
1. Preheat oven to 200deg C
2. Place tofu in a bowl and place a heavy bowl/plate on top of it to press the tofu and remove any excess water. Do this for 10 minutes
3. Combine the mayonnaise and mustard in a small bowl and whisk to combine 
4. In a separate bowl, combine panko crumbs, nutritional yeast, spices and salt & pepper in a small bowl
5. After 10 minutes, drain the tofu and dab with some paper towel to remove any residual water. Cut into 1 inch cubes 
6. Coat the tofu cubes individually in the wet mixture before rolling into the dry crumb mixture
7. Repeat this process with the remaining tofu cubes 
8. On a lined baking tray, spread the tofu cubes and cook for 30 minutes
9. Serve with rice and your favourite greens.

2 łyżki zimnej wody⁠

Przygotowanie:⁠

Do wrzącej wody dodaję opłukany wcześniej bób. Woda w tym momencie przestanie wrzeć więc czekam aż ponownie zawrze. Od tego momentu liczę dokładnie 3 minuty.⁠
Oskubuję z liści doniczkę świeżej bazylii. Listki opłukuję, lekko osuszam i umieszczam w malakserze. Wsypuję orzeszki pinii, dodaję pokrojony w kostkę parmezan, czosnek, łyżkę wody i blenduję.⁠

Made a big batch of this bolognese sauce (w TVP and lentils) to get me through a few lunches this week (and a v tasty dinner this eve). 🍽

Protein through the roof in this one and it’s super versatile - had it sorta Sloppy Joe ish on crispy bread w hummus tonight and having w roast veg for lunch tomorrow. Might make a cottage pie later this week w it 😎👍🏼 What’re peoples’ favourite batch-cook meals?? 🤗🤗

i have been battling with making my dishes look perfect, now I’m  focusing on appreciating the process .... I have so many dishes I don’t post because I feel the pictures are sub par that’s over with ....

This took some time, cooking the chick peas for 3hrs because we don’t do the can thing... making the lentil patties from scratch..... all soo worth it 🤗🤗& I am so stuffed tomorrow we are extending our workout 💜

Vegan Thai Krawpraw Gai Aubergine on a bed of Thai vegetable sauce with salad. 
Recipe: 
For the Marinade:
Coconut milk- 1/3rd cup
Aubergine- sliced into 2 lengthwise
Kraprow Gai powder/ Holy Basil powder- 1 tbsp
Coriander leaves- 1 sprig chopped
Red chillies- 3 finely chopped
Garlic powder- 1 tsp
Salt to taste
Olive oil- 1 tbsp
Lemon juice- 1 tsp

Coating for the Aubergines: 
Breadcrumbs- enough to coat (1&1/2 cups approximately)
Salt and pepper to taste 
Paprika- 1 tsp

Vegetable paste:
Leftover marinade(Remove the leftover chillies)
Choice of vegetables (cauliflower, broccoli, peas and carrots) 
Brown sugar- 1 tsp

Method: 
Combine all ingredients of the marinade except for the Aubergine . 
Score thin shallow marks on the Aubergines so that the marinade can seep through 
Soak them in the marinade for 5-6 hours
Once it is done soaking, pre heat the oven to 200deg C and set a baking tray with a lining foil .
Coat the marinated aubergine slices in the coating mixture and place them on the tray. 
Bake them for about 18-20 mins on each side( Depends on the oven, keep an eye. You know when it’s done when you see the golden brown on the top) 
Meanwhile, heat up the remaining marinade and add the desired vegetables and brown sugar. 
Once the vegetables are cooked and the mixture has become a thick semi gravy,  take it off heat and leave it aside to cool down. 
Once it’s cooled down, blitz it up. 
Serve the Aubergines with the paste and a well seasoned salad. :)

Recipe: 
Tortillas-4
Falafels- 8
Mango chutney- to spread
Sweet chilli sauce to dip
Finely chopped tomatoes- 1 
Finely chopped lettuce- 4-5 leaves
Vinegar- 1 tsp
Cucumber- 1/2 finely chopped

Veggie mix: 
Courgette- 1 finely chopped
Olive oil- 2 tsp
Ginger garlic paste- 1 tbsp
Parsley- 2-3 sprigs finely chopped
Lemon juice - 1 tsp
Coriander- 2-3 sprigs roughly chopped
Cumin powder- 2 tsp
Curry powder- 2 tsp
Turmeric powder- 1 tsp
Cinnamon powder- 1 tsp
Maple syrup- 2 tsp 
Salt and pepper to taste

Couscous mixture: 
Couscous- 1/3rd cup
Chia seeds- 15g
Mixed seeds- 30g
Boiling Water- 1&1/4th cups

Method: 
1. Pour boiling water in a bowl that contains couscous, chia seeds and seeds mix and leave it aside. 
2. Heat olive oil in a pan and mix all the ingredients in the Veggie mix and give it a good stir. Once the raw smell of the masalas subdue which takes about 5 mins, take them off heat and leave it aside.
3. Once the mixtures cool down, mix the couscous mixture to the veggie mixture and add chopped tomatoes, lettuce and cucumber. Add salt and pepper.
4. Assemble in the form of a wrap: Take a tortilla, spread some mango chutney in the centre and break the falafel ball and place them on top of the chutney. Add the prepared mixture on top of the falafels and wrap them up. Crispy Korean Veggies !

Recipe:
Ingredients: 
Vegetables: Sliced potatoes, roughly chopped mushrooms, 3 pods of crushed garlic, green beans and onions. 
Marinade: 2 tbsp of Gochujang paste, 1 tsp of soy sauce, 1 tsp of maple syrup, 1 tsp of lemon juice, salt and pepper to taste, 2 tsp of garlic powder, 1 tsp of ginger-garlic paste and 2 tbsp of flour(rice flour preferred). 2-3 tbsp of chilli olive oil to fry. 
Method:

Crispy Korean Veggies !

Recipe:
Ingredients:
Vegetables: Sliced potatoes, roughly chopped mushrooms, 3 pods of crushed garlic, green beans and onions.
Marinade: 2 tbsp of Gochujang paste, 1 tsp of soy sauce, 1 tsp of maple syrup, 1 tsp of lemon juice, salt and pepper to taste, 2 tsp of garlic powder, 1 tsp of ginger-garlic paste and 2 tbsp of flour(rice flour preferred). 2-3 tbsp of chilli olive oil to fry.

Rice bun base : 
Rice 1/4 cup
Chia seeds 2 tbsp 
Sesame seeds 1 tbsp 
Olive oil 1 tbsp 
Water 1/2 cup

Salad dressing :

Crunchy mustard sauce 1 tsp
Lemon juice 1 tsp 
Garlic powder 1 tsp
Smoked paprika 2 tsp
Salt and pepper to taste 
Shredded lettuce 
Julienned carrots 
Sliced tomatoes

Teriyaki Mushroom marinade: 
Two large chestnut mushrooms
Teriyaki marinade sauce 2 caps 
Brown sugar 1 tbsp
Garlic powder 1 tsp 
Chilli powder 1 tsp
Onion powder 1 tsp
Coriander powder 1 tsp
Olive oil 2 tbsp
Maple syrup 1 tbsp
Smoked paprika 2 tsp 
Salt, pepper and cinnamon powder to season 
Method: 
1. Cook rice, chia seeds and sesame seeds mixture which is pre-soaked in in water.
2. Preheat the oven to 180 degrees. 
3. Spray oven tin with rapeseed oil or olive oil and set aside. 
4. Mix all the ingredients for the marinade. 
5. Chop the stem of the mushrooms and coat with marinade and place the mushrooms topside down and pour the rest of the sauce inside the mushrooms. Bake them in the oven for  10-12 mins. 
6. Whilst the mushrooms are getting ready, make the salad dressing . In a bowl, add all the ingredients and mix well with the lettuce and carrots. Set them aside. 
7. To make the rice buns, oil your palms and make rice buns in the form of burger buns. 
8. Build the burger: Place the rice bun for base. Place the mushroom on top and spoon over some sauce on top. Top it with a slice of tomato and the salad dressing and another rice bun to top it just like a burger !! You can also add caramelised onions to this layers.

Składniki:⁠
500 g bobu + szczypta soli + duża ilość wrzącej wody⁠
2 łyżki zimnej wody⁠
2 łyżki oliwy⁠
2 szt ząbku czosnku⁠
100 g parmezanu⁠
50 g orzeszków pinii⁠
140 g spaghetti⁠
1 doniczka bazylii⁠
⁠
Przygotowanie:⁠
Ustawiam na palniku duży garnek z porządną ilością wody - tak, żeby bób miał wystarczająco miejsca na swobodne pływanie. Zagotowuję wodę. W momencie kiedy zaczyna wrzeć dodaję szczyptę soli. Do wrzącej wody dodaję opłukany wcześniej bób. Woda w tym momencie przestanie wrzeć więc czekam aż ponownie zawrze. Od tego momentu liczę dokładnie 3 minuty.⁠
Oskubuję z liści doniczkę świeżej bazylii. Listki opłukuję, lekko osuszam i umieszczam w malakserze. Wsypuję orzeszki pinii, dodaję pokrojony w kostkę parmezan, czosnek, łyżkę wody i blenduję.⁠
Kiedy sos jest już w miarę gładki dodaję połowę ugotowanego i obranego bobu oraz 2 łyżki oliwy. Blenduję aż uzyskam jednolitą konsystencję. Przyprawiam pieprzem i solą wg uznania.⁠
Makaron gotuję zgodnie z instrukcją. Przed podaniem dokładnie mieszam gorący makaron z pesto. Jeżeli sos jest za gęsty to dodaj do niego odrobinę wody po makaronie. Na koniec można całość skropić kilkoma kroplami oliwy i posypać resztą ugotowanego bobu.⁠
