VANILLA CINNAMON SWEET POTATO CAKE😍

For the crust
200g gluten-free oat flour
8 fresh dates (112g)
110g sweet potato puree (just boil and mix approximately 1 sweet potato)
90g almond milk
1 tsp ceylon cinnamon powder
½ tsp salt
1 tsp vanilla extract
.
For the frosting
250g raw cashews
100g maple syrup
1 tsp vanilla extract
½ tsp salt
250ml coconut milk
.
Instructions
1. Blend together the fresh dates, sweet potato puree, almond milk, cinnamon powder and salt in a blender.
2. Add the gluten-free oat flour and mix again until combined.
3. Pour the batter in a cake pan. Keep in the refridge while making the frosting.
4. Boil the cashews for 20 minutes (or soak for at least 4 hours before making the frosting)
5. Pour the cashews in a highspeed blender together with the coconut milk (thick part of a can), maple syrup, vanilla extract and salt. Mix until smooth.
6. Pour the frosting batter over the cake and freeze for at least 4 hours before serving.

OMG this breakfast was so good, I literally had to go take a nap. I’ve never made sweet potato hash or whatever but it was sooo delicious. Also, I’ve never had any extra with my grits besides sausage AND that changes now. I used @beyondmeat #veganbrats as my breakfast sausage, so good. For a person who isn’t a #breakfastperson, I will pat myself on the back for this meal. .

Such a simple no bake recipe with only 6 simple ingredients! Dairy free, gluten free and vegan!

RECIPE by @pureharvest
Base
3/4 cup peanut butter
1/3 cup rice malt syrup
1 tsp sea salt (leave out if your PB has added salt)
1/2 tsp vanilla
3 cups rice puffs
Topping
100g dark chocolate clean chocolate
2 tbsp peanut butter
.
METHOD
Gently heat the peanut butter and rice malt syrup together in a pot/ microwave. Once melted add in the salt, vanilla and rice puffs and stir to combine. Spoon into a square baking pan that is lined with parchment paper / bees wax wraps. Press down gently with the back of a spoon. Set aside while you make the chocolate topping.
Make the topping, melt the chocolate and peanut butter together for 30-60 seconds in the microwave or over a double bowler. Pour over the top of the base and place in the fridge to set up firmly. Cut into squares and serve. Store in an airtight container in the fridge for up to a week!

Back in Montclair NJ! Of course, we had to stop into one of our favorite restaurants, aptly named - Veggie Heaven @veggieheavennj! It's SO GOOD! In addition to our usual dishes: wonton soup, shu mai, and roast pork fried rice, we tried the house special mei fun and the vege duck. A got peach bubble tea and is now a huge fan...who knew? @happycow

Lets talk food! It’s getting easier to be vegan at home - obviously we make all our own food, but our options can be quite limited when we want to eat out, so it was really nice to not only have all my meals made for three weeks straight, but also not having to worry whether the choices were vegan or not - many of the non-vegan choices often had a fully vegan counterpart (dessert was the only exception - not that I ever had a lot of space after finishing my dinner 😅)
It’s easy for me to recommend even just having a holiday @suryalilayoga because of the delicious food available

Finally used my voucher for @wearezizzi from my Mom and Dad! We both tried the new Vegan pizza, it is topped with spicy harissa, roquito chili, vegan Mozzarisella and jackfruit pepperoni 🤤 Really enjoyed it, not much of a fan of jackfruit but the smoky taste made it taste a lot like pepperoni! 🙌🏻

To make this, follow the instructions in the video and use these amounts:
1 medium head of cauliflower, cut into florets
1 medium-sized red onion, roughly chopped
3 garlic cloves, peeled and roughly chopped
1 tsp dried thyme
1 tsp paprika
1 tbsp avocado oil
1 tsp sea salt, more to taste
1/2 cup raw cashews, soaked in hot water for 1 hour
1/2 cup nutritional yeast
3 cups organic vegetable stock
1 cup unsweetened cashew milk
1tbsp lemon juice, more to taste
2 tbsp chopped chives, for garnish . . .

@silviagoggi ci racconta quanto fa bene la pizza, soprattutto la nostra pizza vegana 😊

Non ho mai capito perché la maggior parte dei pazienti abbia tutto questo terrore nei confronti della pizza.
Cosa cambia tra essiccare la farina a forma di fusillo od impastarla insieme a acqua, lievito e sale per ottenerne un disco da farcire a piacere?
Nulla!
.
È proprio proprio nella farcitura, semmai, il problema.
Ordinare una pizza ai quattro formaggi o con mozzarella e prosciutto, ma evitare di mangiare il bordo per paura di ingrassare è un controsenso bello e buono.
I cereali (e quindi anche la farina con la quale è fatta la pizza) contengono pochissimi grassi (quasi nulla a dire la verità!) e apportano poi fibre e carboidrati complessi che ci fanno sentire sazi a lungo.
La mozzarella invece deriva il 70% circa delle sue kcal da grassi, senza saziare particolarmente.
E nella maggior parte dei casi si tratta di grammature consistenti, che fanno ingurgitare in un colpo solo la dose massima di formaggio consentita a settimana dalla piramide alimentare.
Se poi ci aggiungiamo altri formaggi o affettati (che pure derivano la stessa percentuale di energia dai grassi), il conto peggiora.
E non solo quello alla cassa!

@silviagoggi ci racconta quanto fa bene la pizza, soprattutto la nostra pizza vegana 😊

Non ho mai capito perché la maggior parte dei pazienti abbia tutto questo terrore nei confronti della pizza. 
Cosa cambia tra essiccare la farina a forma di fusillo od impastarla insieme a acqua, lievito e sale per ottenerne un disco da farcire a piacere?
Nulla!
.
È proprio proprio nella farcitura, semmai, il problema.
Ordinare una pizza ai quattro formaggi o con mozzarella e prosciutto, ma evitare di mangiare il bordo per paura di ingrassare è un controsenso bello e buono.
I cereali (e quindi anche la farina con la quale è fatta la pizza) contengono pochissimi grassi (quasi nulla a dire la verità!) e apportano poi fibre e carboidrati complessi che ci fanno sentire sazi a lungo.
La mozzarella invece deriva il 70% circa delle sue kcal da grassi, senza saziare particolarmente.
E nella maggior parte dei casi si tratta di grammature consistenti, che fanno ingurgitare in un colpo solo la dose massima di formaggio consentita a settimana dalla piramide alimentare.
Se poi ci aggiungiamo altri formaggi o affettati (che pure derivano la stessa percentuale di energia dai grassi), il conto peggiora. 
E non solo quello alla cassa!

Oh yes! Oyster mushroom & avocado toast 🥑

For the guacamole (2 servings)
1 avocado
100g chickpeas
1 tsp cumin
1/2 tsp chili powder
1/2 tsp salt
1/2 tsp pepper
1 tsp olive oil
Lemon juice
1 - 2 tbsp water

Mix all ingredients in a highspeed blender.

For the oyster mushroom (2 servings)
1 tbsp olive oil
3g fresh chili
1 garlic glove
Fresh basil
100g oyster mushroom

1. Start with frying the spices in olive oil.
2. Then add the oyster mushroom and fry until golden.
3. Serve on sourdough bread.

Today is a perfect day to start living your dreams 🍽️💕 Hey meine Lieben heute ist bei uns großes Familienessen angesagt 😅 Für mich heißt das leider einige Diskussionen über den Gesundheitsfaktor von tierischen Produkten über mich ergehen zu lassen 🙈 Ist eure Familie beim Team Vegane/Vegetarische Ernährung aufgeschlossen? Meine leider selbst nach Jahren noch nicht und jedes Mal wenn wir gemeinsam was essen kann ich mir anhören was mir nicht alles durch den Verzicht von tierischen Produkten fehlen würde und das ich ja auch schon ganz schwach aussehen würde🤨 Ich persönlich kann sagen mir geht's damit prima und versuche daher nicht zu sehr darauf zu hören was sie sagen und einfach meine Kroketten mit karamellisierten Apfel-Maronistücken und Karotten-Maroni-Sauce zu genießen 😉 Aber wenn ihr Tipps habt wie ihr es geschafft habt das eure Familie akzeptiert das ihr euch vegan ernährt dann raus damit ☺️ Ansonsten wünsche ich euch allen einen entspannten Sonntag 🥰

* 130g spelt flour
* 1 tsp salt and pepper,
* 2 chopped cloves garlic
* 1 tsp turmeric
* 1 bunch chopped cilantro
* 1/4 cup water, 1/2 cup plant based milk
* 130g panko
* Oil for frying
INSTRUCTIONS:
1. In a bowl place flour, the seasonings and the liquids and blend well
2. In a second bowl place panko
3. Dip mushrooms in the wet mixture and then bread them with panko

Recipe for 16cm silicone round mold ⁣

Ingredients:⁣
Base: ⁣
70g raw almond (soak 8-12 hours and rinse)⁣
30g hazelnut (soak 8 hours and rinse)⁣
2 Tbsp. raw cacao nib⁣
3 Tbsp. raw cacao powder⁣
2 Tbsp. (20g) melted coconut oil or raw cacao butter⁣
5 pitted soft Medjool dates (90〜100g)⁣
1/8 tsp pink salt ⁣

Vanilla cheesecake filling⁣
120g raw cashews (soak 4-6 hours and rinse)⁣
1/2 cup (120ml) coconut cream⁣
4 Tbsp. (40g) melted raw cacao butter⁣
4-5 Tbsp. maple syrup⁣
1 Tbsp. lemon juice⁣
1 tsp lemon zest ⁣
1/2 tsp vanilla paste⁣
pinch of pink salt⁣

Strawberry filling: ⁣
100g raw cashews (soak 4-6 hours and rinse)⁣
100g strawberries ⁣
4 Tbsp. (40g) melted raw cacao butter⁣
4Tbsp. maple syrup ⁣
1-1.5 Tbsp. lemon juice⁣
1/8 tsp pitaya powder (optional)⁣

Other:⁣
9-10 small strawberries (cut in half)⁣

**You can substitute maple syrup & coconut cream with raw agave & raw almond milk for raw version⁣

Method : ⁣
1. Pulse every ingredient for the base until well processed but still slightly crumbly. Press the mixture into the base of the silicone mold. ⁣
2. Set the halved strawberries on the edge of the mold facing outwards.⁣
3. In a high speed blender place every ingredient for the vanilla cheesecake layer and blend well until smooth. Add more sweetener and lemon juice if you need. Layer the filling above the base. Cool it in the freezer until set. ⁣
4. Repeat the same process for the strawberry layer. Freeze the cake over night ⁣
5. Take out from the mold and garnish with strawberries. ⁣

Hi weekend 👋 Bye weekend 👋 Do you ever start looking forward to Friday on a Sunday at 9pm? And get agitated planning for the weekend because you have to fit in all the “good stuff”? This was me a year ago. After passing all the engineering registration exams (19 hours of tests in total), I had no idea what to do with my free time and started obsessing over it. After 11-hour work days, I watched the Office for a third time and reread my favorite fantasy novels (Wheel of Time). I wasn’t depressed or anything, but just felt like something wasn’t quite right with how I spent time, minutes that I will never get back. It was around this period that I discovered the concept of balancing creation & consumption. The gist of it is that you should strive to spend more time creating than you do consuming. Take Instagram. I was spending hours of the week mindlessly scrolling through, and it wasn’t until early this year that I decided to stop and focus on creating something myself. For the time being I chose food photography and recipe development. I cannot tell you how much I enjoy this combination of cooking, baking, writing, photographing, learning about SEO, etc. Now my regular Tuesdays feel like they, too, “count”, even if it’s only writing part of a blog post for one hour— creating something makes me feel alive. So my advice to you today is, start writing that non-fiction novel, taking those improv classes, setting up the Etsy shop, registering your Youtube channel... just start. You will never regret attempting something you’re passionate about, but you may regret not having done so. Oh, and here’s a vegan apple cider pie I made recently, recipe will soon be on the website. 💙

Group cooking sesh! Bonding over dinner prep with an old friend. ❤

We sauteed garlic and shallots, then added the mushrooms. When those were cooked, we added peppers, snap peas and sundried tomatoes. After roasting the broccoli and cauliflower we tossed those in too! We topped it with EVOO, salt and pepper. It was a big hit with the family, especially served with crusty bread from @traderjoes and homemade olive oil dip!

Vegan chickpea wraps .
Ingredients:⠀
1 can chickpeas, rinsed & drained⠀
2 ripe tomatoes, cubed⠀
1 small cucumber, cubed⠀
2 tbsp chives, ciseled ⠀
3 tbsp soy yoghurt⠀
1/4 tsp salt⠀
1 tsp dijon mustard⠀
1 tsp paprika⠀
1 tbsp nutritional yeast⠀
pepper⠀
👉🏼Method :⠀
1. rinse & drained the chickpeas (if you want a better digestion, you can peel off the skin but that’s an extra 10 minutes!)⠀
2. flake them with a fork (or clean hands)⠀
3. add veggies and mix.⠀
4. add spices and yoghurt and mix again⠀
5. set in fridge about 15 minutes so flavour gets together⠀
✨ WRAP RECIPE 🌯⠀
1 cup all purpose flour⠀
1 tbsp olive oil⠀
1/4 tsp salt⠀
1/4 cup water ⠀
Method : simply mix & kneed with one hand until a dough super elastic forms. Adjust flour/water. Set 10 minutes. Then divide in 2 and roll out in very thin wrap (use flour to prevent sticking). Cook 2 minutes each side on hot pan. Keep in clean dishtowel. Use right away or damp the towel with water and microwave 20 sec to make soft again!⠀
Here it’s served with cabbage, lettuce avocado & sprouts!⠀

In the mood for healthy food🍏

Ich hatte in letzter Zeit häufiger Kontakt zu Menschen, die ihre Ernährung gerne umstellen würden, interessiert an veganer Ernährung sind aber trotzdem bisher noch nicht so richtig die Kurve bekommen haben. Ich glaube die allermeisten stellen sich die vegane Ernährung deutlich komplizierter vor als sie eigentlich ist.

Deshalb hier mal eine ganz einfache Lösung für dich, wie du easy eine vegane Mahlzeit gestalten kannst und zwar als Bowl.

Schonmal probiert?? Du nimmst dir einfach ne lecker Grundlage, zum Beispiel Reis, Quinoa, Dinkel, Glasnudeln, Linsennudeln, wonach dir gerade ist. Und toppst das ganze dann mit verschieden frischen und gegarten Gemüsesorten & Hülsenfrüchten. Wer mag kann natürlich auch noch eine Sorte Obst ergänzen oder Tofu dazu nehmen. Als Highlight dann noch ein paar Nüsse, Körner, Samen und/oder Superfoods obendrauf und zack, haste ne super gesunde, gut verdauliche Mahlzeit die dich sättigt und dir ordentlich Energie liefert!💪🏽 .

Green beans, OIL-FREE oven baked potatoes, Moroccan spiced chickpeas and red quinoa 🍴

Pesto zucchini pappardelle noodles by @lindseyeatsla. Recipe:
4-5 zucchini, thinly sliced with a peeler
1 cup mini cherry tomatoes, halved
1 corn on the cob, removed from stalk

2 cups basil
1⁄2 teaspoon minced ginger
1 cup spinach
1 tablespoon @califiafarms almondmilk
2 garlic cloves
1/2 cup olive oil
juice of 1 lemon
1/4th cup walnuts
Salt and pepper to taste
Make your pesto in a blender or food processor by mixing basil, ginger, spinach, almondmilk, garlic, oil, lemon juice, walnuts and salt and pepper. Blend well and set aside. Next, peel your zucchini and cut your corn off the cob.
In skillet with a drizzle of oil, heat up and burst your halved cherry tomatoes, mixing every few minutes for about 15-20 minutes. Add in your corn and stir. Next add in your “pasta”, pesto, mix well and cook down your zucchini noodles. Serve and enjoy!

BURGER DI FAGIOLI CORONA

Grado di difficoltà: medio
Tempo di esecuzione: 45 min.
Dose: due/tre persone

Ingredienti:
2 scatole fagioli corona lessati
Un pezzettino di rapa rossa cruda
1/2 Cu. Acidulato humeboshi
Sale
1 cipollina
Prezzemolo fresco
Olio evo
1Cuc. Farina ceci
Pangrattato q.b.

Procedimento:
Tritare la cipolla e farla appassire in un tegame con poco olio evo e sale. In un robot da cucina frullare i fagioli scolati e sciacquati per bene; aggiungere la rapa rossa, l'acidulato, un pizzico di sale e poco olio evo, nonché la cipolla appassita. Mettere in una ciotola ed unire il prezzemolo tritato, la farina di ceci e mescolare per bene. Unire poco pangrattato fino ad ottenere una consistenza lavorabile. Con l'aiuto di un coppapasta formare i burger direttamente sulla carta oleata. Infornare eventualmente con un filo di olio a 180° per 15/20 minuti circa.
La preparazione risulterà rosa all'esterno ma marroncina dentro.
Gusto ottimo! Da provare!

This is my take on a VEGGIE TINGA!! I thought about using jackfruit (with jackfruit would be delicious), soy curls, eggplant, etc but why not carrots they are cheap and easy to get. I’m using about 4-5 (shredded) big carrots. In a pan sauté 5-7 Roma tomatoes, 1 big onion, the shredded carrots, seasoned with oregano 🌿, salt, pepper, cumin, garlic and chipotle in adobo sauce about 2 tbsp or 1-2 peppers. Cook until the stew is soft and tender! You can find the chipotle in adobo sauce in a Mexican market or at the international section in your grocery store. Serve in tostadas, vegan crema I’ve made in the past like 45x 😅 (cashew based) and avocado🥑. Quick and easy 🕺🏻👅 by @therawboy .

This is my take on a VEGGIE TINGA!! I thought about using jackfruit (with jackfruit would be delicious), soy curls, eggplant, etc but why not carrots they are cheap and easy to get. I’m using about 4-5 (shredded) big carrots. In a pan sauté 5-7 Roma tomatoes, 1 big onion, the shredded carrots, seasoned with oregano 🌿, salt, pepper, cumin, garlic and chipotle in adobo sauce about 2 tbsp or 1-2 peppers. Cook until the stew is soft and tender! You can find the chipotle in adobo sauce in a Mexican market or at the international section in your grocery store. Serve in tostadas, vegan crema I’ve made in the past like 45x 😅 (cashew based) and avocado🥑. Quick and easy 🕺🏻👅 by @therawboy .

Peanutty Sweet Potato Bowl 🥜🍠

I love love love peanut sauce, it goes so well with roasted carbohydrates so of course I opted for Sweet Potato! This is my own recipe which I kinda just threw together so here it goes:
.
Preheat your oven to 200, throw your sweet potato cubes onto the tray, dribble rapeseed oil and cover in garlic and salt. Leave in the oven for 25/30 minutes ensuring you don’t burn the little cubes of yumminess! Get the rice going, I used basmati rice but you feel free to use which ever rice you want, I always cook my rice in veggie stock, makes it super good. I fried off some mushrooms, courgettes & tomatoes and added them to the rice once it was cooked. Now for the sauce: Get 2 big scoops of chunky peanut butter into a pan, add a splash rice wine vinegar & soy sauce, a dribble of roasted sesame oil, 1tsp of brown sugar and about ½ a cup of water! Mix it all in over the heat and boom, sauce done ✅

MEDALLONES DE BRÓCOLI 🥦

1 brócoli grande o la cantidad equivalente de congelado 🥦
200 g de harina de garbanzos 🥦 2 cucharadas de linaza 🥦
1/3 de taza de agua (sólo si usan brócoli fresco) 🥦
1 puñado de perejil fresco 🥦
1 cebolla salteada 🥦
2 cucharadas de vinagre de manzana 🥦
1 cucharada de ajo en polvo 🥦
1 cucharada de pimentón 🥦
1 cucharada de sal 🥦
1 cucharadita de pimienta 🥦
2 cucharadas de levadura nutricional .
Lo primero es procesar el brócoli hasta que queda bien molido, crudo, sin cocción. Lo hacen por partes, en la procesadora o licuadora (si es potente). Si no consiguen linaza lo que hacen es agarrar dos cucharadas de semillas de lino y molerlas en un mortero o con el brócoli en la procesadora. Lo pasan a un recipiente grande y agregan todos los condimentos, la levadura nutricional, el vinagre, la harina y el agua (recuerden que si usaron brócoli congelado no, porque generan exceso de líquido). Pican chiquito el perejil y también lo agregan junto a la cebolla salteada. Moldean con la mano y forman los medallones. Tiene que quedar homogénea la mezcla, con la misma textura de las hamburguesas de legumbres. Si no le van agregando más harina de garbanzos hasta lograrlo. Pueden congelarlos crudos. Para cocinarnos a horno medio cinco minutos de cada lado o hasta que doran y en sartén a fuego bajo, con aceite de oliva, diez minutos de cada lado. Rinde unas 12 unidades

🌈 Medallones de papa 🌈
Buenas, buenas! Esta receta es exclusiva para los fans de la papa 😂🐷 hay algo mas rico?, creo que no! 😊😍😛

Ingredientes 📝
(4 medallones grandes y gorditos)
✳ 3 papas medianas
✳ 1/2 zanahoria
✳ 3 cucharadas de pan rallado
✳ condimentos al gusto, yo usé sal, pimienta, nuez moscada y perejil
.
Preparación 🙋
1. Pelamos, cortamos y hervimos la papa, hacemos un puré y esperamos a que se enfríe un poco.
2. Rallamos la zanahoria chiquita y la agregamos al puré con el pan rallado y los condimentos que elijamos. Mezclamos bien todo, si todavia está tibia la preparación la metemos un rato a la heladera.
3. Hacemos los medallones, a mi me salieron cuatro pero depende del tamaño que elijan hacerlas. Yo las cocine en el horno por unos 10 minutos de cada lado y listo! Quedan riquísima y bien compactas 😍😛
