The Metro newspaper called me today asking for my views on cowleys fine foods, after I posted on Facebook a picture of the HORSE meat they sell that they named 'Black Beauty' & 'Red Rum', which then went crazy..I have since had HUNDREDS of abusive and derogatory comments and dm's from people in support of this business, defending horse meat. Even the metro article is FULL of these horse meat defenders.

In the past, I would only offer forgiveness if there was an apology from the offender. With growth, it has become clear that forgiveness is not about, or for the offender.

1 cup non-dairy milk
4 tbsp chia seeds
1/4 tsp vanilla extract
2 tbsp maple syrup
Whisk all ingredients in a jar or bowl. Let sit for 5 minutes, stir thoroughly, and refrigerate overnight or for at least three hours to set. To serve, give it another stir (adding more liquid if needed) and layer with granola, fresh berries and nut butter. Enjoy!

More of the weird lettuce stir fry, fresh Ontario field cucumbers, beans, some bagel, and a little bit of avocado. Also had some dill pickles and pickled garlic on the side.

I ended up putting peanut butter and pickles on the bagel because I heard that is a thing. 🤷‍♀️ Strange combination, but I liked it.

Today was a 95% WFPB, oil-free day. The bagel contained oil, but that's it. I only had the bagel because we're clearing out all the old bread in our freezer we've accumulated trying to save the day-old breads. So we've been eating a lot of bread, but I'm looking to replace that with less processed foods like whole grains and potatoes.

On another note, I need to stop piling on so much food on my plate at dinner because I am STUFFED... And I like to have something sweet after dinner. Honestly, I get sad when I eat too much at dinner and have no room for dessert. 😳 But let's be real, I end up eating the dessert anyway and end up regretting life every time. 🤦‍♀️ Another bad habit I need to break.  I need to either leave room for the post-dinner snack I know I'll want or just stop once I'm full. 
Sitting here thinking of the juicy strawberries in the fridge regretting not leaving room for them. 😬

Still embarking on a journey to learn more about vegan Chinese cooking, a cuisine I haven’t experimented w/ too much yet ✨ This is another recipe from @hannah__chia & it was so delicious! It is her take on Sichuan Kung Pao Chicken (as opposed to the Americanized version), w/ tempeh as the protein. Followed her recipe exactly besides adding in some chopped zucchini bc I had some to use up. Dried spicy peppers 🌶 , spices, various sauces & plenty of aromatics make this dish burst w/ flavor. Served w/ jasmine rice 🍚 & Chinese smashed cucumber 🥒 salad from @omnivorescookbook . Perfect meal ❤️

If something is important to you, you'll make it happen no matter what. Excuses are for people who don't really want to do something in the first place. I want to be raw right now so I'm making it happen even when I'm in summer mode with the kids. Fruit is fast food! Threw these apples, some date rolls and half a juice in my snack bag (cuz with 3 boys you know I always need road snacks) and we're good to go!

1 head celery, chopped finely 
1 onion, chopped finely
4 cloves garlic, minced
3 c almond milk 
1/4c +2 tsp 🌱butter, divided
1-2tsp salt
1tsp white pepper
1 tbs+1 tsp Apple cider vinegar, divided
1 tsp Dijon mustard 
1 pkg Gardein teriyaki chick’n (optional), (set sauce aside for another meal) cut into small chunks
1/2 tsp Italian seasoning
1/2 tsp parsley flakes
1/4 tsp Smoked paprika
1/4 tsp Chili powder
1/4 tsp garlic powder
1/4 tsp onion powder
1/4c nutritional yeast (nooch)
Salt and pepper to taste
7.8 oz FYH American cheese slices, chunked
8 oz Tofutti cream cheese
9 oz Miyokos RH cheddar sauce
1c shredded cheeze
1 10 ounce can original Rotel, undrained
1 lb spaghetti, cooked to pkg directions

1. Add 2 tsp butter to hot pot at medium heat. Then add onion, garlic, and celery. Let sweat for 5 minutes.
2. Deglaze pan with 1 tsp ACV. Slowly add milk, 1/4c butter, salt, white pepper, remaining ACV, and Dijon. Let slow boil for 5 minutes then turn to simmer for 15 minutes. Add chik’n now if using.
3. Add spices. Italian, parsley, smoked paprika, chili powder, garlic powder, onion powder, nooch, salt and pepper.
4. Add cheeses and Rotel. Let melt stirring constantly. Taste and adjust accordingly. 
5. Remove from heat. Add cooked pasta and let infuse 5 +minutes.
6. Enjoy!

Thai stirfry with a chilli peanut sauce recipe 🦊🥕 (vegan). Excuse the oven burned hands 😂🤭😑 I wanted to try and recreate a Thai stirfry that is both delicious and nutritious. 
For the ingredients, it’s really up to you. Choose whatever veg you would like, I chose:
Brocolli
Capsicum,
Carrot
Spring onion
Mushrooms 
Bok choy 
Ginger 
Garlic 
I simply sautéed the veg and added in some glass noodles.

For the peanut sauce:
1/2 cup coconut milk
2 tbsp Thai red curry paste
2 tbsp coconut aminos
2 tbsp apple cider vinegar
1 tbsp brown sugar

This sauce will get you 3-4 servings 👨‍🍳 let me know what you think of this recipe!

I've been on this nooch kick lately, for whatever reason. I swear it's been going on everything I eat. It's funny though because I also have periods of not wanting to have anything to do with it 😂.

So I had the opportunity to try out bbq sauce from @thepioneerwoman , but ummm as a standalone sauce - I'm not a fan. Therefore, I had to doctor up the sauce sauce up a bit. Recipe: 8 Servings 👇
Dough:⠀
1 kg potatoes⠀
80 g white rice flour (1/2 cup)⠀
40 g cornstarch or tapioca flour (1/3 cup)⠀
salt, pepper, nutmeg (to taste)⠀
Filling:⠀
250 g mushrooms, sliced (about 3 cups)⠀
1/2 of a zucchini, diced⠀
1 onion, chopped⠀
1 bell pepper, diced⠀
2 cloves of garlic, minced⠀
salt & pepper to taste⠀
spice mix: 1 tsp Italian spice blend, 1 tsp onion powder, 1 tsp garlic powder, 1/2 tsp cumin, 1/4 red pepper flakes⠀
Additional ingredients:⠀
oil for frying⠀
vegan cheese to taste⠀
Instructions⠀
Dough:⠀
Peel potatoes, cut into small pieces and cook in salted water for about 20 minutes.⠀
Season with salt, pepper, and nutmeg and mash them with a potato masher. (@elavegan suggest to not use a food processor, otherwise, the mashed potatoes will be sticky).⠀
Allow the mashed potatoes to cool (in the meantime you can prepare the filling), then add flour and cornstarch and mix well with a spoon or your hands.⠀
Filling:⠀
Chop the veggies, fry the onion in a pan with a little bit oil for about 3-4 minutes, add the mushrooms, garlic, and also the diced peppers and the zucchini. Sauté everything for a couple of minutes, season with salt, pepper, and the spice mix.⠀
Split the dough into 8 parts (about 1/2 cup or 120 g each). Form into balls, make a well in the middle and add about one and a half tablespoons of the filling. You can also add some vegan cheese in addition. Carefully "seal" the balls with a little bit more dough and flatten them slightly to make them look like thick pancakes.⠀
Heat approximately 2 tablespoons of oil in a pan and fry the potato cakes at medium heat until golden brown on both sides. They will be crunchy on the outside and soft on the inside. If you want them to be slightly more crunchy, you can bake them additionally for about 20 minutes at 375 degrees Fahrenheit in the oven.

Recipe: 1/2 cup raw cashews
2 cups filtered water
16 ounces cremini mushrooms
1 tbsp avocado oil 
1 tbsp vegan butter 
2 tbsp nutritional yeast
2 tbsp tomato paste
5-7 sundried tomatoes, sliced
1 tsp garlic powder
1/2 tsp Salt
1/4 tsp Pepper

To serve:
Brown or white rice
Cilantro or fresh herbs 
Directions:

1. To a large pan over medium heat add 1 tbsp avocado oil or oil of choice. Add mushrooms and sauté for 5 minutes, season with salt and pepper.... then add 1 tbsp vegan butter and sauté for an additional 5 minutes.
2. In a blender combine raw cashews (no you don’t have to soak cashews ) and filtered water. Blend on high until smooth and creamy. Takes 1-2 minutes.
3. Pour the cashew milk over mushrooms, then add nutritional yeast, garlic powder, tomato paste, chopped sun dried tomatoes, stir to combine and lower heat & let simmer until the sauce slightly thickens. Simmer for 3 minutes, taste and adjust seasonings as needed. Adding salt and pepper to your liking.

Prepare salad: 1/2 small cucumber (chopped), about 15 baby tomatoes (halved), 1/2 of 1-15oz can rinsed and drained garbanzo beans (or 1 cup cooked), 1 small bunch kale (chopped), handful fresh watercress (optional).
Dressing: blend on high: 4 tsp apple cider vinegar, 2 tbsp water, juice 1/2 lemon, 2 tbsp tahini, 1 tbsp Dijon mustard, 1 tbsp maple syrup, 2 minced cloves of garlic, about 2 tbsp fresh parsley (optional), salt/pepper to taste. In a large bowl, pour some of the dressing onto the kale and massage until kale has wilted a little. Mix in chopped veggies, marinated mushrooms and remaining dressing. Serve with air fryer (or oven roasted) herbed potatoes and avocado.
