Nice meal @elisabarga. Top quality ingredients treated with respect and presented beautifully with some interesting touches from the chef showcasing foraged produce from Garfagnana.
We felt the wine list was a little limited and on the expensive side. Although we can't complain about the wine we ordered, which was delicious.
If you want to taste something a little different from the traditional garfagnana fare then this place is worth a try.

This week's specials feature 'everything mullet'! No, we're not talking about Chef Gabriele's or Giulio's hairstyles - but, rather, our delicious dishes showcasing wild Red Mullet!

Not all Tuscan food is truffles and panzanella. This week, Chef Gabriele pays tribute to the coastal city of Livorno, and its emblematic triglia, or red mullet. .

Traditional triglia alla Livornese features red mullets cooked in a pan of spicy tomatoes, the piquant red sauce a legacy of Sephardic Jews arriving in the area from Spain in the 1600s. .

In the specials menu this week, you'll find a nod to this unique history in Chef Gabriele's modern renditions, such as in the fettuccine and risotto alle triglie. You'll find as well a pastiche of a special red mullet dish created by his idol, Antonino Cannavacciuolo (one of Italy's most famous chefs, and Masterchef Italy judge), in the triglie con melanzane. .

And despite what some people might say about pairing white wine with fish—in Livorno, it's always red. Ask Giulio @giuliosomm for his favourite Sangiovese recommendations!

First Michelin experience at @ristorantegiglio in Lucca last night. We opted for the set menu of the restaurants classics as I thought this would give us a little taste of the best dishes they offer. The food was absolutely delicious, and the service was 10/10! A great experience! 🤗

Starter - We started with beef tartare, with aromatic herbs and bread mayo - this wasn’t really up my street.
Course 1 - Parmesan risotto with Chianti wine reduction - this was absolutely delicious!! My favourite dish.
Course 2 - Veal cheek, with whipped potatoes and Chianti wine reduction
Palate cleanser - lemon sorbet with tonic water foam
Desert - Gianduja foam on vanilla ice cream

One Pot Tuscan Chicken Mac and Cheese - When a meal comes together in one pot or pan like this one does, it’s a serious selling point. (I mean, you don’t even have to pre-cook your noodles. They just simmer right there in the sauce until they’re nice and al dente.) But the main selling point on this quick pasta is definitely the amazing combination of flavors. This year the end of summer brought a mixture of nostalgia and relief.
Days slipped away, while we were juggling with our new family of four and with the most intense season of cooking classes since I started, eight years ago.
All this put together meant that summer passed unnoticed in the background.
To silence those mixed feelings of nostalgia and expectation, I went to the vegetable garden and picked up those green tomatoes that at the end of the season are struggling to ripen on the fragile branches.
Together with the green tomatoes, I collected some basil.
I already know that I will miss it in the coming weeks, so I used it generously in the two recipes I shared today on the blog, made almost with the same ingredients: first an end of season pesto with green tomatoes, almonds, pine nuts and Parmigiano Reggiano, then a savoury galette with green tomatoes, pine nuts and goat cheese.

🇮🇹 La fine dell’estate quest’anno ha portato con sé un misto di malinconia e sollievo. Le giornate sono scivolate via dietro alla nostra nuova famiglia a quattro, dietro alla stagione più intensa di corsi di cucina da quando ho iniziato, otto anni fa.
Tutto questo messo insieme ha fatto sì che l’estate scorresse in sottofondo.
Per mettere a tacere quel misto di nostalgia e aspettativa, sono andata nell’orto e ho raccolto i pomodori verdi che a fine stagione stentano a maturare sui rami.
Insieme ai pomodori verdi ho raccolto un po’ di basilico.
Già so che mi mancherà nelle prossime settimane, quindi l’ho usato con generosità nelle due ricette di cui ti racconto oggi sul blog: prima un pesto di fine stagione, con pomodori verdi, mandorle, pinoli e Parmigiano Reggiano, e poi una galette con pomodori verdi, pinoli e caprino.

Troppo presto per pensare a Pasqua? Io ho già fatto qualche ricetta a tema e non vedo l'ora di condividerle con voi 😊 La prima però risale allo scorso anno ed è un classico della tradizione umbra e marchigiana (ebbene sì, in Toscana ci arriva solo di striscio). Ha tanti nomi, a seconda delle zone: torta di Pasqua, pizza di Pasqua, crescia...da me si chiama "ciaccia" di Pasqua, un nome che spesso fa ridere chi non lo conosce. La sostanza però è molto simile ovunque: un #lievitato ricco di uova e #formaggio (sia grattugiato che in pezzi), pepato e saporito.
Io la adoro 😍 Si mangia la mattina di Pasqua, accompagnata da salumi e uova sode, ma a me piace tantissimo anche da sola perché è un impasto molto condito.
E va be', il post di stamani se lo è accaparrato tutto lei, ma se lo merita, credetemi 😉
