This morning...
I woke up at 8, headed straight to my kitchen, made a cup of tea, whipped up a batch of these fatty brownie cookies, shoot some pictures and watch netflix while eating these all day, until I forgot to share this picture!! 😂😂

Ризотто с курицей и тыквой
Eng: chicken&pumpkin risotto
Ингредиенты:
1 стакан риса арборио
1 куриное филе
300 грамм тыквы
1 средняя луковица
4 зубчика чеснока
0,5 литра куриного бульона
100 грамм тертого пармезана
Соль, перец, итальянские травы по вкусу
Приготовление:
1. Куриную грудку обжариваем, чуть подсалив с двух сторон. Остужаем и нарезаем небольшими кубиками или разбираем вилками на кусочки. Откладываем.
2. Тыкву нарезаем небольшими кубиками, выкладываем в сковороду, туда же добавляем очищенные зубчики чеснока и лук, порезанный на четвертинки. Обжариваем все вместе в течение 7-10 минут на среднем огне, пока тыква не станет мягкой. После данную смесь выкладываем в блендер и превращаем в пюре. Также откладываем.
3. В ту же сковороду выкладываем курицу и рис, заливаем куриным бульоном и тушим порядка 20-30 минут, помешивая, пока рис впитывает бульон в себя. В процессе добавляем специи: соль, перец, итальянские травы по вкусу. За пару минут до окончания тушения добавляем половину пармезана и все вместе перемешиваем.
4. Когда все готово, в сковороду быстро добавляем тыквенную смесь, все перемешиваем еще раз и снимаем с огня.
5. При подаче посыпаем оставшимся пармезаном каждую порцию.

PSA... At the tail end of summer (like, today!), before the first frost, I love finding huge bunches of basil🌿 at the farmers market and I do just this. Pesto! It keeps in the fridge, under an olive oil seal beautifully and freezes well for even later use. My favorite tip- freeze in ice cube trays so you can simply pop out just what you need. Recipe is on the blog (link in profile, search pesto) and I have a video posted to my highlights of you’d like to check it out! This magic happens with simply a few ingredients and doesn’t really require a formal recipe, so play around and create your own! And, yes, the pine nuts here are a bit over toasted. Life!🤷‍♀️ I wasn’t going to waste these and this batch was still delicious💚😋. #pesto #f52bowls #howisummer

When you’re in a pinch and you need a shortcut, it’s ok to use something pre-made and finish it in a way to make it your own. These fresh egg pasta triangoli filled with creamy pumpkin purée and crushed amaretti biscuits were so good! Toss them in a pan with brown butter, wilted greens, sage, Parmesan and toasted almonds and you have a delicious comforting meal .

Hello friends! Long time no talk. I have to be honest, it’s hard writing captions and something witty to say when instead your thinking about osmosis or fistulas (it was a very sad day when i woke up thinking the word fistula). ⁣

And its not like I’ve really been cooking either. If you guys saw the other night my dinner was ramen, and yesterday I had cereal and a microwavable freezer meal. Yes I completely agree that if I had taken 10 more minutes I could’ve made a better meal. Yes I have that time, but do I have that brain power? Thats a no for me, and this is when I’m okay with what’s happening, because I’m doing the best I can. ⁣

This whole lil’ rant was more to show y’all that we ain’t perfect. As much as I look polished on the outside I’m not. And thats why I always keep reminding you guys because we can so easily fall into that comparison trap. ⁣

Okay now I’m going to go eat and back to studying, but I wanted to say what was on my mind, and also that couscous is a wonderful grain I’m so glad I bought some.⁣

{Snack Alert🚨Alerta de merienda} Give potatoes a break and make these super crunchy Air Fried Plantain Fries. Here’s👇🏽how to make them, and my secret for crazy crispy fries😉

{Air Fried Plantain Fries}
2 green plantains
Avocado oil (or evoo)
Sea salt and garlic powder, to taste

Start by boiling water in a medium pot with a half tablespoon of salt on high heat. Peel and cut plantains french fries style. When water starts to boil, add plantains, and boil for about 7 minutes. Drain and gently pad dry. Place in air fryer rack, spray or drizzle with some olive oil, and sprinkle a little salt, garlic powder and pepper, to taste. Air fry at 300° for about 20-22 minutes until completely cook and crispy. Enjoy with garlicky avo-mayo or mayo-ketchup!

2 plátanos verdes
Aceite de aguacate (o extra virgen)
Sal y ajo en polvo, a gusto

Comienza hirviendo agua en una olla con media cucharada de sal a fuego alto. Pela y corta el plátano a la mitad al estilo de papitas fritas. Cuando el agua hierva, agrega las papitas de plátano. Hierve por unos 7 minutos. Drena y sécalas presionando suavemente con papel absorbente. Coloca en la canasta de la freidora de aire, rocía con aceite de oliva, sal, ajo en polvo y pimienta a gusto, y fríe por unos 20-22 minutos a 300° F, o hasta que estén completamente cocidas y crujientes. ¡Disfruta con avo-mayo o mayo-ketchup con ajo!

A garden can be one child-friendly plant such as cucumbers, sungold cherry tomatoes or peppers...or a sensory garden with flowers and herbs...or salad crops for wraps with homemade vinaigrette. Crops can be planted in a simple container or in a bag of soil, with or without raised beds, or raised beds are easy to build or purchase. I’ve been known to be a bit (and by bit I mean a lot) picky about bread that isn’t sourdough... but this spelt loaf is blowing my mind. It started as a means to make my baby tomato on toast without leaving the house but I can see an obsession forming... this loaf is sooooo good, yeasty, a bit nutty and deeply savory - the perfect partner for tomato, vegemite and I’m guessing avocado. I’ll report back

Hope everyone had a great long weekend🤗. Have you seen this type of spring roll before? Inspired by a dish I had in California, this crunchy netted roll paired with crisp greens & aromatic herbs is a dish for you who likes texture and flavors.🥰

Recipe (yields 8-10 rolls)⁣
Ingredients:⁣
~ 1 pack of Vietnamese roll wrapper 'bánh tráng rế' (found at frozen section) - sub with normal spring roll wrapper⁣
~ 3 cups shredded cabbage⁣
~ 1/2 cup shredded purple cabbage⁣
~ 1/4 cup shredded carrots⁣
~ 8-10 caps shiitake mushrooms, soaked until soft & sliced (omit or sub with tofu👌🏻)⁣
~ 3 cloves garlic - minced⁣
~ 2- 3 teaspoons soy sauce/tamari⁣
~ 1/2 teaspoon toasted sesame oil⁣
~ oil for frying⁣

🍃Garnishes: Green lettuce, mint, Thai basil⁣
🍃Dipping sauce: Mix sweet and sour sauce (used @maeploy_kitchen )with a squeeze of lime juice⁣

✔️Thaw wrapper to room temperature or prepare wrapper of your choice based on package instructions.⁣
✔️In a heated non-stick pan with drizzle of oil, sauté garlic until fragrant, then add mushrooms & cook for 1 minute by stirring continuously.
✔️Add in cabbage, season with soy sauce, sesame oil & cook until cabbage is fully cooked through. Drain cooked cabbage well, if any & place in a bowl.

✔️Set up a wrapping station. Take two wrappers & place one on top of each other, add 1 tablespoon cabbage mixture on the bottom corner (the side closest to you), then top with purple cabbage, & carrots. Roll like a burrito & press to seal (moisture from veggies will seal the side naturally.)👀🎥➡️

Fry each roll until light golden brown. To serve🍽️: Wrap spring roll with greens, herbs, and dip in the sweet and sour sauce. Enjoy!⁣🤩

500 ml santan kental
500 ml air
300 gr gula pasir
2 lmb daun pandan
Bahan kering: (campur dlm 1
mangkok)
250 gr tepung sagu
125 gr tepung terigu protein sedang
1/2 sdt garam
Bahan tambahan:
pasta pandan secukupnya
Cara membuat:
Rebus semua bahan cair hingga gula larut (jangan sampai mendidih ya Moms). Angkat. Biarkan hingga hangat.
Tuang bahan cair secara bertahap ke dlm mangkok berisi bahan kering sambil diaduk rata menggunakan whisk. Saring.
Panaskan kukusan dan alasi tutup panci dgn kain. Siap kan loyang 18x18x6 cm. Oles loyang dgn sedikit minyak sayur.
Timbang adonan 120 gr. Tuang ke dlm loyang. Kukus 5-6 menit. Ulangi sekali lagi untuk lapisan putih.
Timbang kembali adonan 120 gr. Beri 1 tetes pasta pandan. Aduk rata. Tuang ke dlm loyang. Kukus 5-6 menit. Ulangi sekali lagi.
Timbang kembali adonan 120 gr. Kali ini beri 2 tetes pandan. Aduk rata. Utang ke dlm loyang. Kukus 5-6 menit. Ulangi sekali lagi.
Lakukan yg sama dgn menambahkan 1 tetes pasta pandan setiap 2 lapis hingga adonan habis.
Terakhir kukus lagi kue lapisnya selama 30 menit. Angkat. Dinginkan.
Keluarkan dari loyang. Potong sesuai selera.
Tips untuk memotong kue harus menggunakan pisau plastik atau pisau yg dilapisi plastik.

Rebus semua bahan cair hingga gula larut (jangan sampai mendidih ya Moms). Angkat. Biarkan hingga hangat.
Tuang bahan cair secara bertahap ke dlm mangkok berisi bahan kering sambil diaduk rata menggunakan whisk. Saring.
Panaskan kukusan dan alasi tutup panci dgn kain. Siap kan loyang 18x18x6 cm. Oles loyang dgn sedikit minyak sayur.
Timbang adonan 120 gr. Tuang ke dlm loyang. Kukus 5-6 menit. Ulangi sekali lagi untuk lapisan putih.
Timbang kembali adonan 120 gr. Beri 1 tetes pasta pandan. Aduk rata. Tuang ke dlm loyang. Kukus 5-6 menit. Ulangi sekali lagi.
Timbang kembali adonan 120 gr. Kali ini beri 2 tetes pandan. Aduk rata. Utang ke dlm loyang. Kukus 5-6 menit. Ulangi sekali lagi. 
Lakukan yg sama dgn menambahkan 1 tetes pasta pandan setiap 2 lapis hingga adonan habis.
Terakhir kukus lagi kue lapisnya selama 30 menit. Angkat. Dinginkan.
Keluarkan dari loyang. Potong sesuai selera. 
Tips untuk memotong kue harus menggunakan pisau plastik atau pisau yg dilapisi plastik.

The first stop [at the farmers market] is Roots Farm where I get my lettuce. Jacob knows my order and will set aside a case of the lettuces that I like, and tuck them out of sight. They have this very light pastel radicchio that’s pearly pink. Even if I get there late, he has it waiting for me. 🍽
I like to get there before the market bell rings though, because the farmers market is quite the social thing in Santa Barbara. You’ll bump into everyone, which is so nice — if you have the time. But I’m usually trying to get in and out as soon as possible. 🍽
Then I’ll go see Tom who has the most beautiful baby carrots and really nice, spicy, wild arugula. Then I go to my fruit stand for gorgeous plums, peaches, and apricots. BD is my favorite of all the stands. He has the most gorgeous flowers and herbs and is the sweetest human being who always asks about my family and Lulu. 🍽

ANOTHER recipe?! Why yes, here's another recipe for you dears. It's the FRESH PRINCE: a chocolate shortbread sandwich cookie with mint vanilla filling, like a bigger (dare I say better?) mint Oreo! I struggled a bit with photos for this guy because the icing came out thicker than I'd hoped for the photos (it still tasted amazing though!). If I redo a shoot in the future, I want more of a drizzle look. But as far as eating these babies goes, it's still the most devilishly delicious thing you'll see this week 😉⁠

1️⃣ It has a slight nutty flavor, perfect to add to dressings, sauces, and beverages like smoothies
2️⃣ its low smoke point doesn’t make a great candidate for high heat cooking

Schön wenns draussen wieder kalt ist oder?! Also Salate sind ja ganz nett aber bissl deftiger ist dann doch eher meins 😀. Und Ihr wisst ja, ich mags gern unkompliziert! Da kam mir diese Pfannenlasagne ganz gelegen. Ich hab noch nie so einfach eine Lasagne gemacht. Klar, das ist nicht das Original aber der Geschmack ist gaaaanz ähnlich und unglaublich gut 🤩🤤! Und die Extraportion Soulfood ist gleich inclusive. Davon brauch ich aktuell auch ne Menge🙄. Mich hat nicht nur ne Erkältung erwischt sondern in dem rechten Handgelenk hab ich noch ne Sehnenscheidenentzündung - bissl unpraktisch als Rechtshänder. Und als Krönung ist mein Mann 4 Tage weg... Brown butter lobster pasta with some super sweet sungolds, minced tomato, garlic, parsley and lots of lemon to give the dish some brightness. Give yourself some time to take apart the boiled lobster or buy it already shucked from your local fishmonger. Serves 2-ish.

Boil a 1 ½ lb. live lobster in rapidly boiling water for about 10 min. Carefully remove from hot water and set aside until cool enough to handle. Take lobster apart, scooping the meat from both claws, the tail, and if you have patience, all the meat from the little legs.

Cook about ¼-½ lb. of pasta of your choice according to package directions. Drain and reserve about a cup of pasta cooking water. Set aside.

In a saucepan large enough to fit all the pasta you just cooked, melt about 2 Tbsp. butter on med-low heat. Stir occasionally and keep cooking until the butter and milk solids start to turn golden brown and things smell pleasantly nutty. Reduce heat to low, add in a minced garlic, stir until fragrant, about 30 sec, then add in the reserved pasta. Stir to combine, then add in the reserved lobster, continue to stir to warm through everything. If things look dry, add in a small amount of reserved pasta water. You probably will not use the entire cup. Before serving, add in a chopped small tomato and some sungolds, minced parsley, and lots of fresh lemon juice. Salt, pepper, chili pepper flakes to taste. Serve with more lemon at the table.

Seared salmon with a flavorful chickpea salad--a satisfying dish that provides you with a healthy dose of good fats and lean proteins. Everything comes together in minimal time so make this asap! The recipe serves 2-ish. (The photo only shows one serving!)

Chickpea salad: Drain and rinse a 15 oz. can of chickpeas. Drain again and place into a large bowl. Add in juice from about ½ a lemon (more or less to taste), salt + pepper, chili pepper flakes and a healthy pour of olive oil. Toss to combine, taste, and adjust seasoning. Add in a few pitted and roughly chopped kalamata olives, thinly sliced super small red onion or shallot (optional), a handful of sliced grape tomatoes, some minced parsley and lemon zest. Toss again and set aside.

Cut 1 lb. of salmon into ½ inch slices. You should have about 6-8 pieces. In a hot cast iron pan (or nonstick pan), add some neutral oil and sear the salmon slices (in batches if necessary as you don’t want to crowd the pan), about 2-3 min on one side, flip and cook for about 30 sec-1 min on the other side. Spoon some chickpea salad on a serving plate, place the salmon on top. Top everything with more lemon juice and/or olive oil if you’d like!

Zucchini blossoms are one of my ultimate summertime treats ☀️ They’re slightly sweet, delicate-tasting and so perfect when fried. These are dipped in a simple chickpea batter and shallow-fried to a pleasantly nutty and slightly crunchy goodness, then seasoned with sea salt and a generous squeeze of lemon.

Gently clean + open about two dozen zucchini blossoms and carefully pull out the pollen-y stamen part of the flower. If your blossoms come with long stems, feel free to either trim them off or keep them as a handle for when you’re dipping the blossoms into the batter. They’re edible and taste like a sweetly bitter version of the zucchini itself.

Chickpea batter: in a shallow bowl, gently stir together ½ cup chickpea flour with a bit of salt and about ½ cup of seltzer (or a light beer as @lokokitchen recommended). Mix until chickpea flour is no longer lumpy.

In a large cast iron pan set on medium-high, heat a generous amount of neutral oil until shimmering and not quite smoking. Dip the blossoms into the batter, drip off excess, and carefully lay them in the oil. Work in batches if necessary, don’t overcrowd and add more oil when needed. Shallow-fry the blossoms for about 3 min. on one side until golden, then flip and cook the other side for a minute or two more. Remove from pan and place on a paper towel-lined plate.

To serve: sprinkle everything with a generous amount of lemon and sea salt (I used a black lava salt from Iceland, courtesy of @rosie_cotton_corgi) Enjoy as an appetizer or a fancy snack!

At first glance, this may look like another caprese salad, but it’s actually a sea scallop crudo! Just slice them in half or thirds and pair with tomatoes. Douse with extra virgin olive oil (use your best) and a little squeeze of lemon. Top with homegrown pea shoots and some baby scallions (or substitute with chives). Sprinkle with some sea salt + grains of paradise, which imparts a warming citrusy-black peppery kick.
