I was SO excited to find romanesco brocolli at @momsorganicmarket this week so I’m making this 1-PAN DELICATA CHICKPEA BAKE with ALMOND BUTTER “GRAVY” for dinner tonight! 💃 If you’ve never tried romanesco broccoli, it’s kind of a cross between cauliflower and broc, and it rocks. Buffalo Cauliflower!

With a little extra time I had this morning, I quickly threw this awesome recipe together. It's going on top of some homemade mac n' cheese so I always have something throughout the week. And it's so simple even your fish could do it!
I used about a tablespoon of melted butter and 2-3 more of oil, about 2 tsp of garlic powder and paprika, and 2-3 tbsp of hot sauce. Then I added a touch of oregano to mellow and ground the flavors. You could easily add in more hot sauce or some cayenne pepper if you want to turn it up.
Roast your cauliflower at 425 for about 20 mins after you've tossed it in some more oil to coat it. I usually use a sheet pan for this, but this time I used a glass one and it made a difference. Once it's barely started to brown on the edges, take it out, pour the hot sauce over it and then toss it around to evenly coat it. Sprinkle with salt (you can also do this later). Back into a hotter, 475 oven for another 5-10 mins or until it browns some more. Super easy!

Oven roasted Onion Blossoms😀🌷🌷They are so fun and easy to make, and I love how pretty they are! We like to add a couple of onion blossoms into a baking dish with some other veggies, which also adds some delicious onion flavor to the potatoes/squash/pumpkin! Once cooked the onion blossoms are super soft and caramelized. We like to eat them hot with other roast veggies for dinner, or cold/warm with a salad 😋🌿🌿 I hope you will give the recipe a try! Roasted parsnip with creamcheese (philadelphia 😉) sesame dip. It's late fall and thus season for roasted veggies. I promise, its not the only thing I eat, I also make soups and stews 🤣
Gotta love roasted parsnips - they turn sweet but not unbearably so and the darker bitsvget crunchy without burning. Perfect vegetables for roasting!

Roasting veggies is a great way to add some variety to your meal prep. You can also save time and buy pre-chopped. Throw them on sheet pan and spray with cooking spray and season with your favorite spices. 400-425 degrees for 30-40 min is usually just right. You can have them as a side or toss them in a blender with some broth for a delicious soup! Loving all the fall flavors 🤗 🍂 🥕🍠

‘Tis the season for roasted root veggies! So easy to make these extra delicious with some parsley, olive oil, rosemary, paprika and garlic. I threw in a few onions for the others, but if they bother you, keep them out of the mix!

BUTTERCUP SQUASH SOUP:
.
This soup is a great way to enjoy winter flavors with a lighter, veggie-filled meal.
.
INGREDIENTS:
.
1 buttercup squash
.
2 cloves garlic
.
1 small onion, chopped
.
½ tsp fresh thyme leaves
.
2-4 cups vegetable broth
.
Olive oil
.
Salt & pepper
.
DIRECTIONS:
.
1. Preheat the oven to 400 F.
.
2. Cut buttercup squash in half and spoon out the seeds. Place cut side up on a baking tray, drizzle with olive oil and sprinkle generously with salt and pepper.
.
3. Add two cloves of unpeeled garlic to a small cocotte, drizzle some olive oil over them and cover.
.
4. Roast for 40-50 minutes or until squash is nice and soft.
.
5. Heat a large pot over medium to low heat & add chopped onion and thyme leaves to hot oil and fry until onion is translucent.
.
7. Peel squash and garlic and add to pot with onion and thyme.
.
8. Add 2-4 cups of vegetable broth. Start with 2 cups and add in more later if the soup is not liquid enough.
.
9. Use an immersion blender or regular blender and blend until smooth.
.
10. Season with more salt and pepper to taste.
.
11. Decorate with a couple of drops of heavy cream (optional) and a few sprigs of fresh thyme.

Roasted chicken wings and veggies went into the Instant Pot with aromatics and an hour later I had gorgeous broth, some of which was strained over a mirepoix with plenty of garlic. It’s all simmering with a tinned bean mix and will feed us for a while.

Do you have a favourite winter squash? Mine is delicata squash by a landslide! 💛 I love how easy it is to chop (it’s way easier to cut than butternut IMO) & roast up in 30 minutes with minimal effort. Oh, and you don’t have to peel it because the skin is edible!

Try this easy roasted delicata squash recipe:
- 1 medium delicata squash
- 1 tbsp olive or avocado oil
- salt and pepper to taste
- optional: other spices! I love either cinnamon or garlic powder.

Preheat oven to 400F. Prepare squash by washing the outer skin, then slice lengthwise and remove seeds. Slice again into half-moon shapes and transfer to a bowl. Drizzle with oil and add spices, tossing to combine. Place squash on a greased rimmed baking sheet and arrange evenly. Bake for 25 minutes, flipping halfway. Remove from oven and enjoy on it’s own, in salads or nourish bowls! ✨

I wanted to make roasted broccoli to bring to lunch at work today. I haven’t had it in a while and it sounded good and somewhat healthy. I put the broccoli on a sheet pan and put a little olive oil that I rolled the broccoli in. Then I sprinkled just a little Montreal steak seasoning and some ponzu sauce. Then I baked it. When I took it out of the oven I added some seasoned almonds. @imusausa

LEFTOVER ROASTED VEGGIES

Mondays are the best day “not to cook”. You’re busy with admin and another week’s workload, you probably don’t have that much time to eat when comes lunch time..
So you’re going to want to improvise some lunch with what you already have in your fridge!

MY TIP: ROAST VEGGIES ON SUNDAYS , and cook more than what you need, so you have a variety of “healthy prepared food” batched up in your fridge for those days😉

In TODAY’s plate:
- roasted jerusalem artichokes (a must try if you’ve never had them!)
- roasted acorn squash (with a hint of maple syrup🤗)
- toasted sweet potatoes
With:
-organic broccoli sprout
-pastured egg (pan fried)
Olive oil/salt&pepper and voila!

Loaded with digestible fibers, protein, healthy fats and phytonutrients from your greens!

Cinnamon & Chili Spiced Honeynut Squash

Yes, another recipe of roasted vegetables. But can you blame me? And this one is all about how just two spices can dramatically change it up. My two favorite spices to add to winter squashes: chili powder and cinnamon. While they don’t work on all roasted vegetables, winter squash like delicata, butternut, and kabocha are hearty enough for these strong spices. The balance of heat and cinnamon also brings out the sweet flavors of the squash.

Из тыквы можно испечь прекрасные пирог, пирожки и печенье. И, к слову, я хочу освоить эти, ещё мало мне знакомые, кулинаные горизонты. А сегодня я просто запекла яркий образец тыквы в два этапа: сначала без начинки до полуготовности, а затем с миксом из творога, изюма и тыквенных семечек. В этой простоте много вкуса, красоты, цвета и пользы.
Аппетит особенно хорош в компании. И такой солнечный обед как нельзя кстати разделить с другом. Благодарю @and_m за компанию в этот понедельник. 🧡

Hello !
Bon pour être honnête je voulais poster ma photo ce midi mais j’étais en cours du coup j’ai oublié 🙄.
Mais peut importe aha je vous la post maintenant !

Hier je vous ai posté une recette sucrée/salée avec du fenouil, des pois chiches et de la pommes rôtis et je voulais vous montrer avec quoi je l’avais accompagné 😊.
Du coup, très simple comme toujours aha, du quinoa et du tofu fumé. Rien de fou mais l’association est parfaite je trouve !

Petit plus ? C’est une assiette riche en protéines ! Pour les curieux on est à un peu plus de 30 gr de protéines ce qui est vraiment pas mal je trouve aha.
Voulant prendre du muscle, j’essaye plus ou moins d’atteindre une certaine quantité par jour mais ce n’est pas toujours facile. Y’a des jours ou j’y arrive et d’autres moins mais je me prends pas trop la tête non plus je fais à l’œil 👀 .

Je sais qu’il y a des sceptiques parmi vous pour la recette mais promis c’est délicieux 🙈 .

Roasted carrot fries!⁣

These have become a new favorite for me! They are super easy and simple, and taste delicious. ⁣

Preheat oven to 400°. ⁣

I used an entire small bag of baby carrots for this, and cut each carrot in half lengthwise. This seems to work well. I tossed the carrots in a little olive oil, salt, pepper, garlic powder, paprika, chili powder, and chili lime seasoning. I didn’t measure- sorry :)⁣

Then I placed the carrots in a single layer on a baking sheet, and baked for 20 minutes, tossing them mid way through. I then pulled them out of the oven, sprinkled some Parmesan cheese on top, and stuck them back in for 5 more minutes. ⁣

Then I drizzled some Litehouse Greek Yogurt jalapeño ranch dressing on top. ⁣

And then I ate all of it! So, I ate an entire bag of baby carrots 🥕 YUM

I was SO excited to find romanesco brocolli at @momsorganicmarket this week so I’m making this 1-PAN DELICATA CHICKPEA BAKE with ALMOND BUTTER “GRAVY” for dinner tonight! 💃 If you’ve never tried romanesco broccoli, it’s kind of a cross between cauliflower and broc, and it rocks. This is always the best recipe to give delicata squash a go if you’ve been wanting to try! Bake the veg up with chickpeas for protein and then we drizzle it with a creamy oil-free almond butter GRAVY. Yes, gravy. Which leads me to my next suggestion— make this 1-pan meal for your plant-based thanksgiving spread!!! 😍 Grab the recipe 👇🏻👇🏻👇🏻 — link is clickable through my profile cuties!
