Splish splash I was takin' a bath in this soup of #autumn BOUNTY 🙏❤️🍁 roast 1/2 kabocha squash (zucca delicata) on 200C (390F) with olive oil, salt, and sumac if you have for 25 minutes. In the meantime, sauté 1 whole leek (porro) in a large pot with olive oil. Add mountains of chopped kale (cavolo nero) and move around the pot with the leeks. Fill half the pot with water and let boil down by a 1/4 with a sprig of rosemary and freshly peeled ginger. Remove the sprig and blend with the squash. Save it, freeze it, or just eat it 😋 #buonappetito

My weekly cranberry sauce, for topping oatmeal, dolloping on PB toast, swirling into yogurt and, sure, serving at Thanksgiving. Cranberry sauce is my jam...like literally, I use it like jam. 😋

Here’s my recipe: 4 heaping cups fresh cranberries (mine come in a 1 quart box), 1.5 cups apple cider, zest of 1 orange, 1 cinnamon stick, 1 inch knob ginger peeled and grated, 1/4 cup raw sugar (I like it tart — add more if you wish) >>> simmer until cranberries are broken down and the mixture has thickened, about 20 min >>> stir in 3 tbsp orange juice. Enjoy!

Grilled Tomato Soup

Ingredients:

Tomatoes
Onions
Red pepper
Orange Pepper
Olive Oil
Salt and Pepper
Pesto

Method:

Roast the veggies for 30 min~
Blend all the ingredients~
Add two tablespoons of the pesto~
Cook the soup on medium heat for 5-7 min~
Serve with basil ghee toast.

GIVEAWAY 🍪 I’m an unrelenting cookie purist. Nothing turns me into your local scrooge faster than a chopped up candy cane in a perfectly decadent chocolate chip cookie. This is one of my least favorite things about cookie swaps—the need to guild the lily with five pieces of cookie flare. The second, of course, is that no matter how simple or over-the-top, chances are I won’t be able to eat your cookies.

Which is why, to get into the holiday spirit a little early, I decided to whip up a batch of chocolate chip cookies at home that are not only #glutenfree, but #VEGAN! The recipe is from my friend @hummingbirdhigh new book, #WeeknightBaking. It’s a brilliant concept, especially for a remedial baker like myself: Michelle has packed her pages with both quick and accessible projects that take less than 30 minutes and only one bowl, and recipes that are more involved, but can be divided and conquered over the course of the week in smaller, after-work time increments.

Her vegan chocolate chip cookies are made all the more moist and gooey thanks to almond butter and coconut oil. And the chopped almonds add a good dose of crunch while still being true enough to the traditional plain Jane version for my purest self. I of course used GF1:1 flour, which made them come out slightly thicker and more Levin-like...but this New Yorker had no complaints about that.

Every year on Thanksgiving, I feel a little sorry for my dad.

He is the lone plant-based dude in the family. And when your family’s holiday table includes 50 people, being the one anything can make you feel a little left out.

As the lone gluten-free person who can’t eat the normal stuffing or gravy, I should know. Over the years, I’ve amended my own situation by being the volunteer who brings her own stuffing to the potluck meal. Every year is something different. (I'll link to past recipes in stories). But since my dad’s only homemade delicacies are oatmeal and smoothies, he’s been remiss to contribute anything, let alone a vegetarian main event for himself.

So to save him from side city, I thought this year instead of a new stuffing combination, I’d figure out something to stuff that he can actually eat. Enter: these vegan stuffed portobello mushrooms with leek and fennel croutons. Now that I can eat alliums again, I must say that leeks are my favorite addition to Thanksgiving stuffing. But even more so, it comes down to the bread. Especially when you’re the lone GF weirdo making a side for fifty, whatever you choose has to taste legit. SOUP! Is there anything more comforting? This red lentil + tomato bisque is probably the easiest (and cheapest!) bowl to make. Start by sauteeing an onion in some fat (olive oil/coconut oil/ghee..) then layer flavour from there. garlic! ginger! carrots! leeks! leftover sweet potatoes! open the spice cabinet and choose a few favourites (mine are cumin + smoked paprika) and add those to the pot. toss in some @flourist red lentils and coat them in all that goodness, then add in a can of diced tomatoes. add enough water to cover (or coconut milk or stock) and season generously with salt and pepper. bring to a boil then simmer for half an hour or until the lentils are soft. blend and adjust seasonings as needed. top with what you have; lemon zest! feta! toasted nuts and seeds or fresh herbs. serve with bread. always bread 👌

This gorgeous Pumpkin Cheesecake is raw, vegan, and gluten/grain free, but will seduce even the biggest healthy-food-hater. 🎃🍰 Trust me! I was the biggest skeptic of desserts like this until I finally tried one and now I'm a total believer. The flavors and textures are spot on - creamy, tangy, sweet, perfectly pumpkin spiced and totally melts in your mouth. 🙌🏼 PLUS, it's actually easier to make than a traditional cheesecake and requires no baking at all. Oats Milk
Ingredients:

1 cup rolled oats (@quaker_india)
3 cups water
1 – 2 dates
1/2 tsp. vanilla extract
a pinch of salt

Method:

Blend all the ingredients together for 15-30 seconds until smooth.
Strain through a nut milk bag or a cheesecloth.
Transfer the oat milk to an airtight container. You can store the oat milk keeps for about 1 week in the fridge.

✨Plant-Based✨ eating is gaining popularity - not quite as “hard core” as a vegetarian or a vegan 😉, but clearly devoted to gaining nutrients and vitality through all the incredible bounty that nature has to offer 🙌🏼.

Often when people start eating more plants and less animal products, they don’t quite feel full enough... they blame lack of protein, where truly the culprit is lack of fiber.

To find yourself a comfortable and satisfied full feeling after a plant based meal, make sure it has each of these components:
1. Cruciferous vegetables - these fiber and sulfur rich veggies are so full and and so flavorful!!
2. Beans or legumes - if these trusty protein sources tend to cause digestive discomfort in you, try soaking them before cooking. This extracts the lectins that the plant contains, and leaves only protein-packed goodness for you :).
3. Leafy greens - these clean and crunchy veggies bring a nutrient quality that is different than cruciferous vegetables, and assists your gall bladder and pancreas in doing their job of escorting toxins out of your bod 💪🏼
4. Nuts and seeds - pumpkin seeds have the most protein, and almonds have the best track record of longevity. Spice them up and toast them in a pan first for added luxury 🙌🏼
5. Gluten free grains - if you have followed me for a while you know I love gluten (thankfully I have no allergies!), however, as Americans we just eat TOO MUCH of it, and often consume products that are nutrient void. So start clear of pastas and choose grains that add nutrients to your meal 💪🏼

Homemade Miso Glazed Eggplant (ภาษาไทยด้านล่างนะคะ) For this #meatlessmonday I'm making Miso Glazed Eggplant, which is a classic Japanese side dish made with eggplant sliced in half, scored and brushed with a sweet and savory miso glaze. In Japan, they would grill the eggplants over a fire. However, my version is a little different – I bake them for about 20 minutes until the miso glaze caramelizes and bubbles. It's tender, tasty, and goes very well with rice. Plus, the recipe requires minimal cooking time and tools, which means less cleaning up time!

I challenge anyone who thinks they don't like cauliflower to try it roasted & then tell me what they think??🤔⁣

My Roast Curried Cauliflower is such an easy way to use up all the cauliflower including the stalk & inside leaves meaning no food waste!! Drizzle a bit of curry sauce made using @gleniskinsta⁣ yoghurt on top & you're done😋⁣

Roasted Squash Ballz 😋 rolled in chopped pumpkin seeds and rosemary I made for @storykitchen.re open mic night on Wednesday's 1 kabocha squash = about 50 ballz. Peel and chop the squash, pan roast with 1 large white onion, olive oil, salt and pepper until cooked through. Let cool and mash with a potato masher. Optional, but delicious, add 100g FRESHLY grated parmigiano reggiano cheese. Chop some toasted pumpkin seeds with rosemary. Slightly wet your hands and roll the squash into ballz. Roll them in the seeds, and serve with traditional balsamic vinegar (not the di Modena IGP garbage that has caramel coloring added). Buon appetito! •

The countdown has begun! I can’t believe it’s 3 weeks until turkey day. Do you have a favorite turkey day tradition?
I thought I would share this recipe today in case you are in need of a delicious side dish for your holiday table. It’s filled with cartelized onions, apple and fennel with mixed into a mustard sage sauce. Caramelized onions are one of my favorite things to make they are a labor of love but well worth the time.

Three weeks until Thanksgiving! Have you planned your menu yet? ⁣

This beauty is in the running for the salad course here. I cannot get enough of persimmons and pomegranate this time of year so it made sense to incorporate them into this holiday salad. To make it dairy free and plant based I whipped up a cashew ricotta to dollop on the top. This turned out so pretty and delicious I think I need to add it to the blog later. Yes? ⁣

There's an indescribable joy I feel when I cook for people ❤️ the moment I stopped trying to replicate other people's recipes is the moment I fell in love with cooking. To watch friends and family gather around the table, share laughs and stories...memories both happy and sad ... looks, exchanges, passing of plates...enjoying something you created from your heart...something you can so easily criticize, but you still love to watch them enjoy. Here’s my recipe: 4 heaping cups fresh cranberries (mine come in a 1 quart box), 1.5 cups apple cider, zest of 1 orange, 1 cinnamon stick, 1 inch knob ginger peeled and grated, 1/4 cup raw sugar (I like it tart — add more if you wish) >>> simmer until cranberries are broken down and the mixture has thickened, about 20 min >>> stir in 3 tbsp orange juice. Enjoy!

I know, I know — it’s April, but it was freezing today and all I wanted was this creamy vegan tomato and white bean soup. Hump day treats…you’re welcome 🐪These salted oatmeal, walnut + chocolate chunk cookies are my current cookie obsession. They have crisp edges with a soft interior, and each toothsome bite is filled with buttery-nutty-salty-sweet flavor and studded with dark chocolate chunks (swoon!). Citrus season still going strong 🍊✨Between the snow storm today (our third in 2 weeks 😩) and the time change on Sunday, this sunny pick-me-up is much needed. Blood and and cara cara oranges + creamy yogurt + nut butter + bee pollen + my crispy buckwheat granola — love this combo👌🏻Granola recipe in blog archives. It’s easy and addictively delicious. You know the saying... "When life gives you lemons (or any citrus for that matter), ask @onepartplant for all the best citrus tips and tricks." Well, we did just that. Check out her tips👇and today’s Story for more 🍊goodness.

How’s your citrus month going?! Besides juicing it, using it for dressing and sauces, and eating an entire bag of clementines in one sitting…there are so many other ways to use it! Here’s three of my favorites! 🍊
1. Take your leftover citrus peels (Navel, Sumo, and Cara Caras work great here) and simmer them with some cinnamon sticks to make your whole kitchen and house smell cozy and fresh. Hot tip: this is a great way to cover up any pet odors when having guests over. 🍋
2. Dry slices of lemons and oranges to make pretty cake/cupcake decorations or string them together to make fun citrus garland for party decor. 🍊
3. Squeeze fresh lemon juice down your disposal to freshen it up and fight any sink stink aka sank stank. Plumbers advise not putting the whole peel down the disposal because overtime it can clog the drain…but in case of extreme sink stink emergencies, you do you. 🍋
