Kennt ihr die Tage an denen sich nichts richtig anfühlt? Heute ist so einer. Obwohl ich nichts geplant habe fühlt sich alles falsch und „zu viel“ an.
An diesen Tagen versuche ich bewusst abzuschalten, viel Zeit an der frischen Luft zu verbringen, Yoga zu üben und meinen Hund/meine Katze zu verwöhnen. Außerdem beruhigt es mich aufzuräumen und Ordnung zu schaffen, dann habe ich das Gefühl mein Leben besser im Griff zu haben 😅

Was macht ihr wenn ihr komische Stimmung/schlechte Laune habt?
Heute in meinem Schüsselchen: Lebkuchen-Zimt Oats mit Apfelkompott, Mandarine, Erdnussbutter, 1 getrocknete Feige und Adventskalenderschoko.

COCONUTCAKE - This cake is everything if you need some inspiration for all the December food😍. You know I'm a big fan of coconut, so I don't have to tell you this is one of my favorites 😜😊. Happy Wednesday! Love, Melissa

Ingredients:
Cake:
- 250 g almond flour
- 3 eggs
- 250 ml almond milk
- 6 tbsp honey
- 40 g coconut oil
- 1 tbs baking powder
- 1 tbs baking soda
- A pinch of salt
Coconut layer:
- 50 g coconut oil
- 25 ml almond milk
- 125 coconut sugar
- 50 g grated coconut

How to:
Preheat the oven to 175 degrees (convection oven). Mix the eggs, honey, melted coconut oil and almond milk in a large bowl. Take a separate medium bowl and mix the almond flour, baking powder, baking soda and salt together. Add dry ingredients to wet ingredients and mix until just combined and batter is smooth. Put the batter in a baking dish. Bake for 20 minutes. On this moment, you can make the coconut layer. Mix the melted coconut oil, almond milk, coconut sugar and grated coconut. Add this mix on top of the cake. Bake again for 5 minutes. Cool down for a few minutes and you’re ready!

Ich liebe Porridge. Ich war und bin frühs kein guter Esser und dabei ist Frühstück ja eigentlich enorm wichtig. Wichtig, um den "Motor zum laufen zu bringen". Porridge geht schnell und einfach und geht irgendwie immer. Im Winter mag ich die Variante Apfel/Zimt gerne.
Neulich habe ich dann bei uns im Rewe durch Zufall dieses Porridge von #3bears entdeckt und dachte, das probiere ich einfach mal. Und was soll ich sagen? Es schmeckt echt überraschend gut, obwohl nicht mal Zucker drin ist. Es ist dennoch süß, durch die getrockneten Äpfelchen, die schon drin sind.
Kann ich nur empfehlen, wir kaufen es wieder 😍.

If you are wondering how to make oatmeal from last post I'll show it to you. It's really easy.
1. Prepare the ingredients:
-60g rolled oats
-1 banana (half sliced, half mashed)
-15g of dark chocolate (70%)
- vanilla extract 1tea sp
-10 g of raisins (optional)
-4g of coconut flour or flakes

2.Cook oats over medium/low heat. Water-oat ratio is 3:1(put less water in the beginning and add more if you need)

3.When reduced and cooked into a fine porridge add mashed banana and 1 tea sp of vanilla extract

4.Add chopped chocolate and cook until chocolate melt and every thing is nice and combined

If you are wondering how to make oatmeal from last post I'll show it to you. It's really easy.
1. Prepare the ingredients:
-60g rolled oats
-1 banana (half sliced, half mashed)
-15g of dark chocolate (70%)
- vanilla extract 1tea sp
-10 g of raisins (optional)
-4g of coconut flour or flakes

2.Cook oats over medium/low heat. Water-oat ratio is 3:1(put less water in the beginning and add more if you need)

3.When reduced and cooked into a fine porridge add mashed banana and 1 tea sp of vanilla extract

4.Add chopped chocolate and cook until chocolate melt and every thing is nice and combined

Warming Turmeric oatmeal with caramalised bananas by @vgnbites_, aka. a 'hug in a bowl" 🤗🥣 ⁣

For the turmeric oatmeal bowl :⁣
1 medium, ripe banana⁣
1 cup of rolled oats⁣
1 cup of oat milk⁣
1 cup of water⁣
Pinch of salt⁣
Pinch of cinnamon⁣
1 TBS maple syrup ⁣
1 tsp @iswariireland_uk turmeric and black pepper⁣

Method:⁣
In a small saucepan, mash the banana with a fork. Add all remaining ingredients (except the turmeric and black pepper powder). Bring to a simmer and cook until thick and creamy, stirring occasionally. It will take 10-15 minutes. ⁣
Then add the Turmeric powder, top with caramelised bananas, pecans, chia seeds, cacao nibs ⁣

For the topping caramelised bananas:⁣
1 tbp plant based butter ⁣
1-2 ripe bananas ( sliced in round or in long halves)⁣
3 Tbs brown sugar⁣

Melt butter in a small skillet on medium heat, once melted add the sugar and the banana. Stir continuously to coat the bananas in the brown sugar and butter. The brown sugar should melt almost immediately.⁣
Keep stirring for about 3 minutes or until the caramel sauce thickens. Remove from the heat as soon as it thickens as it can quickly burn if kept on the heat for too long,⁣

MAPLE GINGER OATS 🍂 somehow I forgot how gorgeous maple syrup is ~ rectified that this morning with these sweet warming autumn oats 🙌 RECIPE: 1/2 cup whole organic oats, 1 tsp ground @yumandyay_ flaxseed, 1/2 tsp cinnamon, 1 tsp ground ginger, 1/2 tsp @nielsenmassey vanilla extract + 1/2 cup oat milk ➡️ mix all ingredients together in a saucepan over a medium-low heat, adding more milk if you want it a bit creamier (I like mine thickkkk 🥰) topped with maple syrup, banana and a sprinkling of fruit + nut muesli 🤗
