Here are the reasons why:
1. it is full of nutritious, tasty food that makes us feel full and energised
2. by shifting focus away from fear of fat towards insulin resistance and inflammation, it will help: • lose excess body fat
• reduce risk of developing type-2 diabetes • manage or reverse impaired blood glucose conditions • reduce high medication loads, and prevent and treat heart disease • get us on the road to significantly reducing risk of developing dementia and cancer

Enjoy
- three meals a day and eat until feel full - at least two to four tablespoons of extra virgin olive oil daily - one small handful of tree nuts (walnuts, almonds, hazelnuts, macadamias) daily - at least five portions of fibrous vegetables and one low sugar fruits a day
- sweet potatoes not as often:-)
- vegetables with at least two meals daily, preferably three:-) Avoid
- all added sugars (it’s everywhere), fruit juice, honey and juices
- all packaged (there is another reason why to shop low waste, unwrapped, unprocessed produce), refined carbohydrates, in particular anything flour based, including bread, pastries, cakes, biscuits, muesli bars, packaged noodles, pasta, couscous and rice - industrial seed oils typically used for cooking (i.e. no sunflower, canola, rice bran, corn or soya bean oil)
If you are struggling with a desire for something sweet - we can try a piece of low sugar fruit. From week three we can introduce a square of dark chocolate greater than 85 percent cocoa solids, as it has the least amount of added sugar.

We had house made bread with zataar butter, the roast eggplant with pomegranate, lentil kofte, rock oysters with a squid ink cracker, spiced cauliflower and the slow cooked lamb shoulder. Absolutely worth breaking the diet for 👌

This is favourite ‘accidental’ creations from the lovely Gut Health Doctor. She started throwing in a bit of this & it turned into something pretty magical 🦄 ⁠⠀

It’s loaded with fibre too, my favourite nutrient, with over 5g per slice!⁠⠀
⁠⠀
It does have a uncommon ingredient though - but its totally worth hunting it down (online is my recommendation)⁠⠀

What’s the deal with teff? Her new book doesn’t use many ’fancy’ ingredients as she wanted it to be practical. BUT this is one that she really wants you guys to try. It’s a gluten-free grain that packs quite a nutritional punch, with 10g protein & 7g fibre per cooked cup 🙌 It also gives a slightly sweet taste with undertones if cocoa & hazelnut 👩‍🍳 Perfect for Sunday baking.⁠⠀

INGREDIENTS⁠⠀
Base:⁠⠀
100g teff grain (not flour)⁠⠀
120g wholewheat spelt flour⁠⠀
2tsp baking powder⁠⠀
2tsp cinnamon⁠⠀
A pinch of salt🧂⁠⠀
40ml extra virgin olive oil⁠⠀
3 large eggs🥚⁠⠀
2tsp vanilla extract⁠⠀
3 extra-ripe bananas🍌 mashed (300g peeled)⁠⠀
70g dried figs, diced⁠⠀
1/2 small zucchini, grated (80g)⁠⠀
1 large carrot🥕grated (100g)⁠⠀
50g walnuts, roughly chopped⁠⠀
⁠⠀
Toppers:⁠⠀
1 banana (100g peeled)⁠⠀
10g coconut flakes (optional)⁠⠀
⁠⠀
METHOD⁠⠀
1️⃣ Preheat the oven to 170°C fan.⁠⠀
2️⃣ In a large mixing bowl, combine all the dry ingredients (teff, spelt, baking powder, cinnamon & salt).⁠⠀
3️⃣ In a separate bowl, whisk together the wet ingredients (olive oil, eggs & vanilla extract) with an electric beater. Then add the banana, figs, zucchini, carrot & walnuts. Fold in the dry mixture.⁠⠀
4️⃣ Line a loaf tin (approx. 23x13cm) with baking paper, then pour in the loaf mixture. Top with banana halves any way you fancy and coconut flakes, if using.⁠⠀
5️⃣ Pop in the oven for 70 mins, until cooked through. Cover with foil after 30 mins of cooking to prevent burning the coconut.⁠⠀
6️⃣ When cooked, allow to cool for 5 mins in the tin, before lifting out with the baking paper on to a wire rack to cool completely.⁠⠀
7️⃣ Then slice & enjoy! And remember to share 😋⁠⠀

This week's Friday Favorite is one is my new favorite snack obsessions....a hard-boiled eggs with a spoonful of @traderjoes Kale, Cashew Pesto. It's the perfect bite of creamy, a little salty and a tad pesto-y (it's a word in my book, get on board).

Such a great time this week with @nichollsstate Dietetic Interns! Today we demonstrated in store after Facebook live. We made a super simple pizza for #familymealsmonth using @missionfoodsus tortillas along with @rousesmarkets sauce, topped with mozzarella cheese, fresh tomato, and @organicgirl fresh spinach! Bake at 400F about 5-10 minutes.

Yakir's Crazy Concoction That Turned out Delicious!
Yakir made an open-face sandwich with a fruit and vegetable topping that had a lovely combination of sweet, salty and hot flavors.

He sauteed sweet onions in Greek extra virgin olive oil, then added minced garlic, roasted Hatch chile and carissa fruit from our garden. Next he added quartered figs from our tree, diced tomato, and chopped cooked purple brussels sprouts.
He cooked the mixture for a few minutes while he pitted some Greek Throumpa Thassos black olives, which he then added to the pan. Last he added pine nuts.

Next Yakir spread labne (strained yogurt) on whole wheat bread and spooned the fruit-vegetable-nut mixture on top.

Thanks to Melissa's Produce for the vegetables and pine nuts and to George Menzelos of Arianna Trading Company for the Greek olives and the Yanni's Olive Grove olive oil.
The labne that Yakir used is Karoun Mediterranean Style Original Labne Kefir Cheese, and we like it.

What I do explain is that to make them I prepared a velouté with cornmeal and part of the concentrated broth that I made with "the blonde" and I can get here.  To not seem presumptuous I will not explain that they are the best croquettes I have ever eaten 😎

Mediterranean or plantbased Keto is a great option for weight loss + fatty liver + even metabolic syndrome management ... but not forever! Make sure to add back those whole healthy grains or risk harming your gut health + microbiome! •

This sandwich has labaneh, tomatoes, Greek olives, fresh mint, zaatar and olive oil. #zaatar is an Arabic seasoning made with thyme, sesame seeds and a spice blend.

VEGETARIAN MOUSAKKA.

ADAPTED RECIPE: 1 eggplant (sliced), 1 potato, 1can lentils (drained), 2 carrots (grated), 1 onion (chopped), 1 garlic clove (minced), 1 400g can tomatoes, 100ml vegetable stock, 2tsp tomato paste (optional), 2-3tsp dried oregano, tasty cheese (grated).

1-Bake sliced eggplant in oven for 15-20mins and set aside
.
2-Spike potato with a fork and cook in microwave for 5mins and set aside to cool (when cool, slice)
.
3-Meanwhile, in an oiled pan cook onion, garlic and carrot for 4-5mins, add oregano and tomato paste and stir for 1min further
.
4-Add lentils, canned tomatoes and stock and let simmer for 15mins
.
5-In a oven safe dish place a layer of the lentil mix down and top with a layer of eggplant. Repeat and finish with the lentil mix on top. Place potato slices on top and sprinkle with grated cheese and some extra dried oregano
.
6-Bake in oven for around 30mins or until the top is golden.

ADAPTED RECIPE: 1 eggplant (sliced), 1 potato, 1can lentils (drained), 2 carrots (grated), 1 onion (chopped), 1 garlic clove (minced), 1 400g can tomatoes, 100ml vegetable stock, 2tsp tomato paste (optional), 2-3tsp dried oregano, tasty cheese (grated).

1-Bake sliced eggplant in oven for 15-20mins and set aside
.
2-Spike potato with a fork and cook in microwave for 5mins and set aside to cool (when cool, slice)
.
3-Meanwhile, in an oiled pan cook onion, garlic and carrot for 4-5mins, add oregano and tomato paste and stir for 1min further
.
4-Add lentils, canned tomatoes and stock and let simmer for 15mins
.
5-In a oven safe dish place a layer of the lentil mix down and top with a layer of eggplant. Repeat and finish with the lentil mix on top. Place potato slices on top and sprinkle with grated cheese and some extra dried oregano
.
6-Bake in oven for around 30mins or until the top is golden.
