Easy Wednesday night dinner! I’m Italian and I loveeee some sausage and peppers (and onions for good measure) ☺️😋. I cooked my sweet Italian sausage in the air fryer to speed up the process (cooked them at 390 for about 12 minutes) so I could cook the peppers and onions in some olive oil and @kerrygoldusa butter (I also add garlic and some tomato paste for flavor). Once the sausages were cooked through I added them to the peppers and onions to incorporate everything. We are eating this with some spinach I wilted in the pepper and onion skillet. A little dose of my meal prep!
I eat two of these a day plus fruit for a snack in between. Since eating meal preps I am less sluggish and bloated and more energetic and prepared. I have found my proportions outside of meal prep have decreased significantly as well. In the beginning it’s super hard but now it’s all that I want 💪🏼🙌🏼

Chicken and Lentil Soup. I wanted some soup today and this is what I came up with. ⁣

INGREDIENTS ⁣
2 lbs (908g) chicken thighs ⁣
3/4 cup (180g) dry lentils ⁣
3 (230g) carrots ⁣
1 (200g) onion⁣
3 cloves (15g) garlic ⁣
3 stalks (100g) celery⁣
2 (400g) potatoes ⁣
2 tbsp (30mL) Lemon juice ⁣
3 tbsp (45ml) soy sauce ⁣
1 cup (100g) frozen peas ⁣
1 tsp (5g) sriracha ⁣
10 cups (2400ml) water ⁣
Salt and pepper ⁣
2 tbsp (30g) olive oil ⁣

INSTRUCTIONS⁣
1. Cut the carrots, celery, onion and garlic into a small dice. ⁣
2. Heat oil over medium heat in large pot. Add onions and sauté until they have begun to soften. Add the carrots, celery and garlic. Cook for 3-5 minutes. ⁣
3. Add the chicken to the pot with the 10 cups of water. Bring to a boil and then reduce the heat to medium low and simmer for 10-15 minutes. ⁣
4. Add in the potatoes and lentils and continue boiling until they have both softened, probably around 10 minutes.⁣
5. Remove the chicken and shred. Return to the pot and add lemon juice, soy sauce, sriracha and peas. Season with salt and pepper to taste. Top with parsley/cilantro if you want. ⁣
6. Nutrition information above is if you split it into 6 servings. ⁣

❓I don’t have lentils. ⁣
❗️Then just use rice. ⁣

❓Can I use chicken breasts?⁣
❗️Yes. Obviously but chicken thighs are better. ⁣

❓How many servings does this make?⁣
❗️Any number greater than zero and less than infinity minus one. Serving sizes are arbitrary. You can make them as big or as small as you want. The nutrition information above is for 6 servings. The nutrition information for the whole dish is:⁣

I’m back 😂. Well after dealing with back problems and life... I decided too complete this journey. I actually got down to 228lb and hurt my shoulder. Pretty discouraging but I should have worked around it. I feel spiritually ready this time and I’m not quitting so one year from day I will be 195lbs. I’m currently 255. Time to get to work! - post workout: protein shake, babana, vitamines.
- breakfast: spelt toast, half an 🥑, mixed veggies and 2 eggs+ 1 eggwhite.
- lunch: chicken fajita bowl
- snack: salad made from cucumber, tomato, hummus and egg.
- dinner: chicken stirfry with broccoli, zucchini, mushrooms and tomato + nutritional yeast and lettuce on the side.
- dessert: last but of lactose free yoghurt + piece of banana with chili infused peanutbutter. ( goes pretty together.. It's Just very Hot peanutbutter 🙈)
-snack: cashews
- pre bed snack: skyr, mixed seeds, oats, coconut and a soon of spicey peanutbutter.

Today was better than yester Day, tried to distract myself.
Still pushing on, committed to the gain and getting stronger 💪.
Hopefully my mood Will lift about soon.

Weight Loss vs. Weight Gain with BBQ Shredded Chicken. Some of you guys have asked for more simple and cheap meals. Here is a start, it doesn’t get a whole lot easier than this one @themealprepmanual

As always these are meant to be used as visuals for what your eating could look like if you had a goal of weight gain or weight loss. One meal is not going to make you lose or gain weight. It’s about your relationship to calorie balance over time. If you had one of these goals and your meals began to look more like the ones here, you’d likely be on track to success. The left has less oil to cook the potatoes and a bit more green beans. The right side has an extra .5lb of chicken and .25 cup BBQ sauce as well as 3 extra potatoes and 1 tbsp of oilve oil added to the recipe. ⁣

INGREDIENTS ⁣
2lbs chicken breast ⁣
3/4 cup vinegar based BBQ sauce (I use Gates)⁣
5 medium sized potatoes⁣
2 tbsp olive oil ⁣
2 bags of frozen green beans (20-24oz)⁣
Salt and pepper .⁣
.⁣
PREPARATION⁣
1. Cook the chicken with 1 cup of water or broth in a crockpot on low for 6 hours or high for 2-3. ⁣
2. Once cooked remove from liquid and shred. Mix in BBQ sauce. ⁣
3. Preheat oven to 425F⁣
4. Cut potatoes into wedges and toss in olive oil. Season with salt and pepper. ⁣
5. Bake for 10 minutes and then flip. Cook an additional 10 minutes or until desired product is achieved. ⁣
6. Cook green beans as instructed on package. Season with salt and pepper. ⁣
7. Divide evenly 5 ways. Nutrition information is 438 CALS 48g C | 39g P | 10g F⁣

A few things about this lift:
1-this complex is torture and I’m probably going to not talk to @teamhercwl for at least like 2 days
2-the PVC can’t stop me from sucking
3-Theo the gym dog is still in training and I’m glad we had a couple supervisors for him😂
