obligatory post workout selfie that is appearing deceptively un-sweaty. Do not be fooled. I did week 5 day 3 today, which was back & arms, ended with steady state on the elliptical. Sweat for daaaaays. Perks: the gym had the Seahawks game so I was about to catch the end of the 1st quarter, which is about the most I’ve seen of a game all season 😭 one day of week 5 left to do for this week and then I’m finally caught up and on week 6, on the sixth week! I can’t believe this challenge is almost over!! .

I am obsessed with baked tofu lately. It is so versatile for leftovers. I use it for
tacos scrambled with eggs and spinach,
alongside rice and vegetarian curry,
stir fries with or without noodles and rice,
atop a bed of greens with hummus and chickpeas,
and so much more!

Here's my favorite way to make it, thanks to a recipe I adapted by @cookieandkate:

1) Cube up 2 blocks of firm or extra firm tofu. I just quarter up the entire block length-, height-, and depth-wise.
2) Press out the moisture between two towels and two cutting boards. Place canned food on top for more pressure. Leave it for at least 30 minutes.
3) Toss pressed tofu cubes in 2tbsp cornstarch and 2tbsp of soy sauce OR seasoned with salt.
4) Lay out in one layer on a baking sheet sprayed with oil (I use avocado).
5) Bake for 20-25min at 425F on the most bottom rack of your oven. This will ensure that the bottoms of the tofu cubes will crisp up - what you see in this photo are those golden brown crispy bottoms!

My face when someone says our body can only handle x amount of protein. 🤦🏼‍♂️ We’ve all heard it, and it’s a load of crap. Here’s why.

1️⃣ Saying the body can only handle so much protein makes the assumptions that everyone’s protein requirements are the same. A 200lb person is going to need a lot more protein than a 130lb person.

2️⃣ Protein turnover is constant in the body. While muscle protein synthesis is capped ~30g of protein (muscle full effect), that doesn’t mean everything gram after that will automatically be expelled. It will be used elsewhere in the body.

3️⃣ Not all proteins digest at the same rate. Whey Isolate will digest faster than beef or chicken. Adding in carbs or fats will slow down the process further. This will slow down the rate at which amino acids enter the blood stream.

I could go on and on, but the bottom line is that you don’t have to worry about that extra protein in your meal going to waste.

Easy, healthy grilled chicken margherita topped with melted mozzarella cheese, pesto, and tomato basil garnish.

INGREDIENTS:
4 boneless skinless chicken breasts, pounded to less than 1 inch thickness
salt and pepper to taste
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon Italian seasoning (OR ½ teaspoon dried oregano + ¼ teaspoon dried basil + ¼ teaspoon dried thyme)
4 slices mozzarella cheese
½ cup basil pesto (try my easy 5 minute pesto recipe - it's the best!!)
½ cup cherry tomatoes, halved
1 tablespoon fresh lemon juice
