Lettuce wraps with broccoslaw from the supermarket, alfalfa 🌱 and avocado 🥑 💚 the broccoslaw has broccoli, red cabbage, golden beetroot, Daikon radish, kale. I throw away the packet dressing 🥗 the salad comes with and replace it with a keto friendly aoli mayonnaise and apple 🍎 cider vinigar fir a bit of tang 😊

MAYO-FREE TUNA SALAD LETTUCE WRAPS 🥬 This is one of my go-to lunches when I haven’t meal prepped for the week. It’s quick, easy, and packed full of protein + healthy fats to fuel my studying all afternoon 🤓⁣

Ingredients:⁣
1 can wild tuna (we love @safecatchfoods )⁣
Half a small avocado (also great with hummus if you don’t have avocado!)⁣
Half a carrot, diced⁣
1 green onion, sliced⁣
1 tbsp diced red onion⁣
1 tsp minced garlic⁣
1/4 tsp cracked pepper⁣
1/4 tsp pink salt⁣

Method:⁣
Mash all ingredients together in a bowl until well combined. Load onto romaine lettuce leaves and enjoy!

Thai Chicken Lettuce wraps are on the lunch menu this week! If you like spicy, these are 🔥🔥🔥🔥! One thing #whole30 has forced me to do is meal prep which in turn has gotten me away from eating same things for breakfast and lunch week after week (which is when I tend to get bored and order Postmates 🤣) so it’s been great having lots of different things to eat these last few weeks! 🥬🥘

Lunch deets 🍽
➖ For the sauce ➡️ 3 tbsp of coconut aminos, 1 tbsp toasted sesame oil, grated fresh ginger, minced fresh garlic, shredded carrots, cabbage, juice from 1 lime, 1 tbsp rice wine vinegar, fat from the top of canned coconut milk, roasted cashews (roasted with coconut aminos, garlic, lime zest, sambal at 350 for 15 min) chopped fresh parsley and basil. Heat up the coconut aminos, sesame oil, ginger, garlic, lime and vinegar in a pan and bring to a boil then add the coconut milk, shredded carrots and cabbage and simmer for 5-10 min. Add the shredded chicken and then cook another 3 minutes coating the chicken. Top with parsley and basil.

➖For the chicken ➡️ 2 pieces of chicken breast, 1 tbsp coconut aminos, grated fresh ginger, minced garlic, minced shallot, sesame seeds, lime juice, lime zest. Cook in the oven at 425 for 22 minutes and then shred and add to the sauce pan. Top with more basil, parsley and sesame seeds.

• lettuce (bibb or iceberg)
• ground turkey
• carrots
• zucchini
• minced garlic
• ginger
• cashews
• SAUCE: coconut aminos, peanut butter, honey, sriracha ————
• Season ground turkey with s&p, paprika, garlic powder. Heat olive oil in a pan & cook.
• Meanwhile, in a bowl, mix coconut aminos, little bit of peanut butter, honey & sriracha. Whisk well & set aside.
• In a separate pan, spray oil and sautee minced garlic & ginger. When fragrant, add diced carrots, zucchini & a bit of water. Cover & let cook.

1.5 lbs sirloin steak, fat trimmed, diced into cubes just under 1-inch
1/3 cup low-sodium soy sauce
3 Tbsp stevia( monk fruit)
3 garlic cloves, minced (1 Tbsp)
2 Tbsp avocado oil
Green onions or sesame seeds, for garnish (optional)

INSTRUCTION
.
Place steak pieces in a gallon size resealable bag.
In a mixing bowl whisk together soy sauce, stevia and garlic. Pour over steak, seal bag while pressing out excess air then rub marinade over steak.
Transfer to refrigerator and let marinate 1 - 2 hours.
Heat 1 Tbsp oil in a heavy non-stick skillet over medium-high heat.
Remove half the steak from marinade, transfer to skillet (spaced apart) and let sear until golden brown, about 1 minute then flip to opposite side.
Let continue to cook to desired doneness, about 1 minute longer (internal safe temperature is 145 degrees). Transfer to a plate and repeat with remaining steak.
Serve warm garnished with green onions or sesame seeds if

What’s THAT?! @hardeespakistan has launched their low carb Angus burger for people who wanna have yummy food but are precise about the calorie count as well. The good part was that the lettuce wrapped burger did not taste as weird as I thought it was INFACT it was super light and I could clearly taste the sauces. The fusion of lettuce with the sauces was way too good for healthy food 😍.

2-Grass Fed Boneless Ribeye Steaks
Head of Cauliflower
Bundle of Asparagus
1/2 lb of medium Shrimp
5 slices of Black Forest Bacon, chopped
6-7 tbs Butter
4 tbs Avocado Oil
3-4 oz. Bourbon Gouda, shredded
5 cloves Garlic
Sprig or Thyme
Sprig of Rosemary
Kosher Salt
Pepper
Creole seasoning
1 tsp Erythritol
Lemon Pepper seasoning

INSTRUCTION .
1. Heat Grill pan to medium-high and add 1 tbs Avocado Oil.
.
2. Season Ribeye well with kosher salt and pepper. In a separate large frying pan heat to medium-low and add 3 tbs of butter. Once melted add 2 cloves of Crushed Garlic, Thyme and Rosemary sprig .
3. Grill Ribeye in Grill pan approximately 2 minutes each side, turning opposite direction after 1 minute to get criss-cross marks. Hold steak on fat side down to sear fat cap, 45 seconds
.
4. Transfer Ribeyes to pan for butter basting and baste each side approx a minute. .
5. Take Ribeyes out of the pan and let rest 7-8 minutes —
Sweet and Spicy Garlic Shrimp *Mince 3 cloves of Garlic *Make sure Shrimp are cleaned well, I take out the vein and intestinal track. *Heat frying pan to medium and add 1tbs Avocado Oil
*Dry Shrimp off and add 1 tbs Avocado Oil, Then season with Creole seasoning and Erythritol *Add minced Garlic and simmer 1 minute *Toss the Shrimp In with the garlic and simmer a couple minutes. Add a tbs of butter and flip shrimp over and simmer a couple more minutes. Once Shrimps are opaque and Caramelized they are done. 📷 Recipe from @tagsketojourney .

I know it’s the season of butter, cheese, turkey, and stuffing...but you’ll want to bookmark this one. In between all the holiday food, I like to have a fresh, light meal. I whipped up these quick Asian-Style Turkey Lettuce Wraps for lunch and they were soooo quick to make and I almost ate them quicker than that! Check out the recipe below and let me know what you like to eat in between the heavy holiday food!

Ingredients:
- 1 lb ground turkey
- 1 chopped yellow onion
- 1 diced red pepper
- 1/2 package of diced baby bellas
- 1/2 can of water chestnuts
- 2 tbsp hoisin sauce
- 1 tbsp sambal oelek - 1 tbsp coconut aminos
- Olive oil spray
- Salt, pepper, garlic powder
- Baby Bibb lettuce

Directions:
1. Brown your seasoned turkey meat in a large frying pan or wok with olive oil spray and coconut aminos.
2. Once mostly cooked, add in all of your vegetables. Cook for about 5 mins.
3. Add sambal and hoisin sauces. Stir until meat and veggies and are completely combined. Taste for flavor and add more garlic/garlic powder.
4. Serve in Baby Bibb lettuce, a salad, or rice!

I use a few chicken breasts bone-in, radishes, zucchini, yellow squash, cabbage, carrots, tomato, onion, cilantro, garlic and tons of other spices/seasonings. Carrots are not keto but it give great flavor 😉 ⁣⁣

{NEW} PB Chicken Lettuce Wraps 🌱😍 makes 6 servings

Ingredients:
1 1/2 lbs. skinless boneless chicken breasts
2 heads butter lettuce
8 oz. Cremini mushrooms, diced
2 carrots, peeled and very small diced
6 green onions, sliced
4 fresh cloves garlic, minced
1 Tbsp freshly grated ginger
3 Tbsps olive oil, or avocado oil, divided

Peanut sauce:
4 Tbsps creamy peanut butter
4 Tbsps coconut aminos, or reduced sodium soy sauce, or Bragg's liquid aminos
Juice of 1 fresh lime
1 Tbsp raw honey
1 fresh garlic clove, minced
2 tsps freshly grated ginger

lime wedges, and cilantro leaves for garnish if desired
Instructions:

Make your peanut sauce first; in a small mixing bowl or glass jar, whisk all your sauce ingredients together. Add in 3-4 tablespoons water slowly, and whisk or shake until you achieve your desired consistency; set aside.

Next, cut the chicken into large chucks and toss it into your food processor. Pulse a few times until small chopped (as shown in the pictures). Do not overdo it, we want very small chopped pieces, not ground.
Heat a heavy skillet over medium-high heat.

Heat 2 Tablespoons of oil, then quickly stir-fry the ginger and garlic until it starts to releasing its flavor; just a minute.

Immediately add in your chicken, and cook until golden brown; season with sea salt and pepper, then set cooked chicken aside on a plate.

Into that same skillet, heat remaining oil. Add in your mushrooms, carrots, and green onions then cook stirring occasionally for 8 minutes or so.

Return your chicken to the pan and stir everything well to reheat and combine with the veggies. Remove the pan off the heat and drizzle in half of your PB sauce. Stir well to get everything coated.

To assemble; lay out lettuce leaves on individual plates, or onto a large serving platter as shown. I like to double up my butter lettuce leaves so that they hold together better while eating.

Add two big spoonfuls of chicken mixture into the center of each leaf.

Drizzle with remaining peanut sauce if desired, then serve while still warm. Enjoy! ❤Rachel

Chicken Salad with all the flavors of a bacon lettuce tomato and avocado sandwich, without the heavy bread! This chicken salad is so flavorful and so hearty, and even carb lovers will love this lettuce wrap recipe!

📝INGREDIENTS
* 1/2 cup plain fat free Greek yogurt
* 1/4 cup mayonnaise (I used full fat for richer flavor)
* 2 tsp fresh lemon juice
* 2 tbsp thinly sliced green onions
* 1 Tbsp minced parsley
* Salt and freshly ground black pepper
* 3 cups diced cooked and chilled chicken breast
* 6 slices bacon , cooked and chopped
* 1 1/2 cups grape tomatoes , halved
* 1/2 cup diced celery*
* 1 medium avocado (fairly firm but ripe), diced
* Romaine lettuce leaves , for serving

👩‍🍳PREPERATION
1. In a medium mixing bowl stir together Greek yogurt, mayonnaise, lemon juice, green onions, parsley while seasoning with salt and pepper to taste.
2. Add chicken, bacon, tomatoes and celery to a large mixing bowl (if you want some of the ingredients to show through set some aside to sprinkle over the top of the salad before serving). Add in the dressing mixture and toss to coat. Gently toss in avocado. Serve over lettuce leaves (or in bread slices).
3. *I didn't add celery the first time I made it which is why it isn't pictured but the second time I decided to try it and I like it much better with the celery. I like the crunch it adds.

🤣I was doing another closet purge just now and found my size TWENTY-TWO wedding dress buried in the back. I haven’t tried it on since my wedding 5 years ago and thought it might be great Material. The craziest part is that I had already lost 35 lbs and I was feeling super skinny on my wedding day. What a crazy journey!

Sliced turkey lettuce wraps with half an avocado, apple slices, walnuts, olives, grain free crackers and a hard boiled egg. I’m heading to the dentist today and not looking forward to it. I can’t wait to just get it over with and get on with my day. Does anyone else fear the dentist as much as I do? I hope your week is off to a good start.

How did I start keto?

1. Started with Atkins to transition myself into a low carb life and wean myself off of carbs.~1 month with exercise.
2. Heard about keto- did an insane amount of research on it and decided that processed foods and sugar alcohols weren’t for me so I started removing those from my life slowly.
3. Did lazy keto for 7 months (no macro tracking, keep under 20g net carbs, clean eating).
4. In November I had been stalled for 3 months so I did a DietBet with molsinspire started macro tracking and intermittent fasting.
5. Gradually transitioned my #
fasting to OMAD (one meal a day by January/Feb).
6. Hit my goal weight in February of 160lb (I’m 5’9”)
7. Exercise 3-4 days per week the entire time.
8. Went off keto for every vacation (4 total) and went back to keto when I returned.
9. Did bulletproof coffee for like 2 weeks otherwise I drink black coffee.
10. Never chased ketone readings- always knew by how I felt if I was in ketosis or not (no appetite, focus, energy, brain fog gone, decreased bloat and inflammation).
11. Used Pinterest and google for all my keto recipes, never bought a cook book until a few months ago.
12. Supplement with vitamins the entire time.
13. Use goultima for electrolyte replacements.
14. Drink apple cider vinegar and aloe Vera whole leaf juice every night.
15. Realize that it is a life long decision to be healthy, it’s not an over night fix.

This took time, it took hard work, it took dedication. I wasn’t always motivated but I was determined.
