This Pretty in Pink Smoothie from @jackiebowker goes down a treat! This must be your go-to healthy summertime smoothie!

~Ingredients⁠~
- 1 cup plant based milk
- 1/2 cup raspberries⁠
- 1 tbsp almond butter
- 1 tsp essential REDS - 1 serve clean protein
- 1 serve quality collagen
- And the jackie bowker way, please add some veggies! Trust me it doesn't change the flavour! 1/2 cup frozen zucchini or cauliflower, both work well⁠

- Natural sweetener of choice, I used a few drops of @nirvanahealthproducts stevia⁠

“Monday, thanks for having the word ‘mon’ in you. That’s French for ‘mine’ and makes me think of you more as ‘my day’ and that sounds like a much more promising start to the week”✨ .

Feeling refreshed and ready to take on this new week after a happy and restful weekend. Our oven broke Friday night so I wasn’t able to bake so in a way it forced me to be more present and take a break. Im starting my day with warmed up protein pancakes that I made yesterday & a long walk in the chilly air with Tater before a to-do list kinda day. Also!! Be on the lookout for something exciting tomorrow!! Happy MONday🧡

For the pancake recipe, search ‘whole wheat pancakes’ on my website! I added 2 scoops of @nuzest_usa plant based vanilla protein into the batter and topped it with a nut butter/maple syrup mixture + butterscotch chips + banana slices

MAPLE PECAN DATE BALLS😍 A result of a broken oven and an afternoon sweet tooth😋 Made with only 4 ingredients and minimum effort required! Tasty easy grab on the go snack for when you just need a little something sweet. Maple & pecan is one of my favorite combos! —
Just got back from running errands & an early OTF workout! Hope you all are having a great day so far🧡 & also hoping this snow melts and it warms up about 30 degrees😅 —
Recipe:
1/4 cup gf oats
2 tbsp maple syrup
1 c pitted dates
1 cup pecans .
Add all ingredients to a blender/food processor and blend until smooth consistency.
Form into small balls (I had to wet my hands a little with warm water for this part because it was sticky)
Place on parchment paper lined baking sheet and refrigerate for 30 min
Enjoy! :)

▪2-3 tbsp plant-based cream cheese or cashew ricotta *
▪3 tbsp pine nuts * toasted (optional)
▪2 tbsp nutritional yeast optional
▪salt and pepper to taste

1. Mash thawed peas (and toasted pine nuts, if using
3. Heat the oil in a pan and sauté the onion for 1-2 minutes. Add the garlic and spinach and sauté 1-2 minutes
longer until spinach is wilted. Let cool slightly and squeeze well to remove excess liquid. (Optionally, use
frozen spinach. Just thaw, squeeze and combine with roasted onions & garlic).
4. Chop the spinach mixture coarsely and add to the mashed peas. Mix everything together, season with
nutritional yeast, salt, and pepper to taste.

🧁Well now that Halloween is over it brings another of my FAV flavor seasons…PEPPERMINT!! Yes, it is among us! And what better way to start off the yummy peppermint-y flavor season then with a delicious peppermint-y protein cake😍

Ingredients
🔸1/2 Scoop @pescience White Chocolate Peppermint Protein Powder (or other flavor of choice)
🔸14g(2 Tbsp) Coconut Flour
🔸60g (1/4C) Pumpkin Puree
🔸1/2Tbsp No Cal Sweetener
🔸30g Liquid Egg Whites
🔸2g Peppermint Extract (total must)
🔸1-2 Tbsp Unsweetened Vanilla Cashew/Almond Milk
🔸2g (1/2Tsp) Baking Powder

▪1/4 cup white wine, or vegetable broth
▪6 cloves fresh garlic, minced
▪2 Tbsps fresh thyme chopped
▪1 Tbsp chopped rosemary
▪2 Tbsps fresh parsley chopped
▪2 Tbsps avocado oil
▪1/4 tsp fresh ground pepper ,or to taste
▪1/2 tsp sea salt, or to taste

Instructions:

1. Trim the mushroom stems to 1/4-inch and using a mushroom brush clean thoroughly to remove any dirt.
2. In a large skillet over medium-high heat, add avocado oil
3. Add mushrooms, and cook, stirring gently, until mushrooms are golden brown and tender, about 5-10 minutes, depending on size and personal preference.
4. Stir in your minced garlic, thyme, rosemary, sea salt and black pepper.
5. Pour in your wine, and continue to cook for an additional minute or two, or until the liquid is cooked down by half.
