Tonight's dinner was a veggie soup with onion, carrot, potato, peas, zucchini, cabbage, beans, lentils and brown rice. It was not only satisfying and delicious, but full of vitamins and minerals! Preparé estas deliciosas #arepas de plátano maduro rellenas de pollo (deslizar 👉).
📍 Así estuvo mi #desayuno. Las demás arepas son para la lonchera de mis hijos, las llevan al colegio. 🎒
📍Sencillo,  básico y práctico.
✔Ingredientes:
*Un plátano maduro cocinado.
*Dos cucharadas de harina integral de maíz (se puede usar cualquier harina).
*Pollo desmechado para el relleno (relleno al gusto).
✔Preparación:
*Cocinar el plátano y volverlo puré.
*Revolver con la harina, amasar y dejar reposar por mínimo 10 minutos. La harina es para darle firmeza a la masa.
*Hacer la arepa, tamaño al gusto, yo la hago en mi mano. Poner el relleno y cerrar como una bolita. *Luego, la pongo en una superficie plana y le doy su forma.
*Listo, al sartén a asar por ambas caras.
📍Me salieron 5 arepas.
✔Muy fácil, con los mismos ingredientes que uso frecuentemente, pero varío la presentación por mis hijos 😍

Once upon a time I was someone who gave up easily. I tried a “diet”, didn’t see results immediately, and quit. I would tell myself I would try to start exercising, hate it, struggle and quit. I would say I will get out and make mom friends, get nervous, and stay in. Tomorrow I will eat healthier. Next week. Someday. ..Once upon a time. This was my story for years. .

Nothing good will ever come easy, or be immediate and happen overnight. What I came to realize is consistency is the magic potion. When I began to show up daily for myself, push myself out of my comfort zone, and NOT GIVE UP- that’s when I saw change and growth. .
.
Was it hard? Hard as hell! Worth it? Yes. Every second of it has been worth it. Not just for my physical self, but for my mind as well. Because when you stick to something - your confidence grows alongside with your physical strength. .

Not a good day for food yesterday, work lunch took me just over planned cals (I stole packets of biscuits to take back for my colleagues but ended up eating them all myself 😂🤦🏻‍♀️)

I didn’t do a workout last night and ended up being sucked into the tv, which isn’t like me, and then got the munchies...🤷🏻‍♀️ I still logged it all tho. With lots of cals and very little activity, no deficit...rather unsurprisingly!!

4 Skinless boneless chicken breasts about 1 1/2 lb.
1 Tsp Italian seasoning mix
1 Tsp Garlic Powder
1 Tsp Smoked Paprika
Sea salt and pepper
12 Asparagus stalks end trimmed
1 oz Sun-dried Tomatoes chopped
4 slices Mozzarella Cheese
1 Tbsp Olive Oil

Instructions
Preheat your oven to 400 F.
Place the chicken on a clean chopping board and sprinkle with Italian seasoning, garlic powder, paprika, salt, and pepper.
Start cutting each one lengthwise to create the pockets. Be careful not to cut all the way through.
Add 3 sprigs of asparagus and a couple of pieces of sun-dried tomatoes to a mozzarella slice, then roll it to hold them inside. Stuff the chicken breasts with it.
Close the pocket with a toothpick. Heat oil in a large and cast iron skillet over medium-high heat.
Add in the chicken and sear it until nicely golden brown, about 3-5 minutes per side.
Bake the chicken for 15-20 minutes, or until the cooked through and no longer pink in the inside. Enjoy!

Tired of boring plain chicken breast?STUFF THEM!🌿🧀🍗Get creative with ingredients that for your lifestyle.

4 large chicken breasts
1 tsp salt
2 tbsp olive oil
2 garlic cloves, minced
1/4 cup pesto
4 tbsp cream cheese
3/4 cup mozzarella cheese
½ cup sundried tomatoes
½ cup roughly chopped spinach
¼ cup parsley, minced
Heat your oven to 375 degrees F. Place the chicken on a cutting board. With a sharp knife, carefully cut a pocket into the side of the chicken breasts. Take care not to cut all the way through. You are creating a "pocket" for all the filling to bake in. Season the chicken with salt, inside and out. In a small bowl, mix the garlic, pesto, cream cheese and mozzarella. Set aside. Layer the inside pockets of your chicken with the cream cheese mixture, sun-dried tomatoes and spinach. Secure the opening with toothpicks if desired. Heat the olive oil in a cast iron pan, or oven proof skillet over medium heat. Sear the chicken on both sides for 3-4 minutes each, until golden brown. Place all four breasts back into the pan (or on a baking sheet if you are bot using an oven proof skillet) and place them in the oven until the internal temperature of the chicken breast is 165°F. This takes about 16-18 minutes longer depending on the size of the breast.

To make the pancake, I finely chopped and roasted about half of a large Japanese sweet potato with some bay seasoning. To make the pancake, I finely chopped and roasted about half of a large Japanese sweet potato with some bay seasoning. After roasting, I mixed it in a bowl with some sautéed onions, 1 egg, salt, and pepper. Then I fried them in a pan in some oil for about 2 minutes on each side. YUM. This made 2 small pancakes.
