My favourite meal with some healthy substitutes 💚

Gnocchi with a meat sauce and fresh grated Parmesan cheese. 😍

I used whole wheat and spelt flour in place of white flour.

Why?
White flour is highly processed, therefore lacking nutrients and empty carbohydrates. .
With whole grain flours you will find you eat less, feel equally satisfied, and for longer.

Spelt, is definitely one of my favourites. It is a good source of dietary fiber, protein (which it contains more of than common wheat), and vitamins and minerals. This grain is also more water-soluble than wheat, which makes it easier for the body to digest.

For the sauce, I simply lightly sautéed some garlic and rosemary in EVOO.

I added some organic ground chicken and sautéed until cooked through.

I then added a tin of whole tomatoes, which I crushed in my hands as I added it to the pan. 🍅
Hint: make sure it is only tomatoes in your tin, nothing added. 🙏🏼 .
Prepared sauces tend to have added sodium, sugar, sometimes MSG, and other preservatives you don’t need.

Bring that to a boil, season with salt and lower temperature to simmer for about 10 minutes. That’s all!

I still don’t know how to use a hairbrush 💀😂 but I do know how to take better care of myself physically and mentally. As we begin this new year... keep in mind that it’s the perfect time to start over or just start at all. Italian Wedding Soup 🍲
Ingredients:
6 cups chicken broth
1 1/4 cups 93% Lean ground beef
2 TBSP olive oil, divided
2 cloves garlic, minced
1/2 a yellow or white onion, diced
1 egg
1/4 cup grated parmesan cheese, divided
1 tsp Italian seasoning, divided
1/4 tsp salt
4 cups riced cauliflower
4 cups raw spinach

Directions:
1. Meanwhile, combine beef, egg, half of parmesan cheese, half of Italian seasoning, and salt in a medium-sized bowl.
Form mixture into small meatballs, about 1/2 inch in diameter.
2. Heat 1 TBSP of oil in large skillet over medium high. Add meatballs and cook, turning occasionally, until browned. (3-5 minutes - no need to cook completely through as they will continue to cook in broth). 3. Heat remaining TBSP oil in pot, add onions and garlic and sauté. Add broth and remaining Italian seasoning and bring to a boil.
4. Add cauliflower rice, greens, and meatballs and simmer until meatballs are cooked through and spinach is wilted (About 5-10 minutes). 5. Serve soup topped with remaining parmesan.
Optional garnishes: red pepper flakes, squeeze of lemon.
Yields: 4 servings
Per Serving: 1 lean, 3 green, 3 condiments

Lately my posts are all about cookies but what can I say 🤷🏻‍♀️ it’s the season people.. All we need it’s Christmas lights and cookie smell! Oh and of course love! 🥰 Here’s a SNACK idea from my fav @feeding_little_man
APPLE & CINNAMON BITES
Ingredients:
240g rolled oats ⁣
360ml milk of your choice ⁣⁣
1 mashed banana
1 ½ tsp cinnamon ⁣⁣
1 tsp baking powder⁣⁣ ½ tsp vanilla extract ⁣⁣
120ml maple syrup ⁣⁣
120g unsweetened applesauce

Instructions:
•In a large bowl mix together the oats and milk
•Then add the banana, cinnamon, baking powder, vanilla extract, maple syrup and unsweetened applesauce. Mix well •Fold in a finely chopped and peeled apple •Spoon mixture into a greased mini muffin tray •Bake in the oven at 180 for approx 23 min
Tips:
Tops should appear set and the edges golden brown
You can use whatever apples you want
Can be kept in a container in the fridge fort about one week or wrapped individually and frozen for about 3 months.
To reheat just place in oven at 180 for 4-5 min

Directions: ⁠
- Preheat oven to 350°F⁠
- Blend sugar with eggs and stir well.⁠
- Add a drizzle of olive oil and honey, stirring constantly, until ingredients are well mixed.⁠
- Gradually add flour, cinnamon, fennel, and baking powder.⁠

1 tablespoon unsalted butter
Filling:
4 oz (120 g) cream cheese at room temp
4 oz (120 g) frozen spinach thawed
1/4 cup finely grated parmesan cheese
2 teaspoons minced garlic
Salt and pepper, to taste
Optional Garlic Butter:
1 tablespoon unsalted butter
1 tablespoon minced garlic
1 tablespoon lemon juice
INSTRUCTIONS
Place each salmon fillet on a flat surface. Season both sides with salt, pepper, 1 tablespoon olive oil and lemon juice. Cut a slit or pocket about 3/4 quarter of the way through, being careful not to cut all the way.
Squeeze excess liquid out of the spinach discard liquid. In a medium-sized bowl, mix together the spinach, cream cheese, parmesan cheese and garlic. Season with salt and pepper.
Fill salmon 'pockets' with 1-2 tablespoons of the spinach dip, spreading evenly with the back of the spoon. .

Crispy Salmon Coconut Noodle soup
1/2 cup coconut cream, 1 1/4 cups water, 2 tsp turmeric, 1.5 tsp ginger, 1 tsp garlic powder, 1/2 tsp salt
boil all then reduce. Add rice and noodles and cook. Top with avocado, salmon, tomatoes, kale chips, mushrooms, cilantro, cabbage + scallions
