Ground Beef⁠
Guacamole + Sour Cream (for dipping)⁠

1. Cook ground beef with taco seasoning. Set aside.⁠
2. Layer a small amount of shredded cheese in the bottom of large cupcake tin moulds, about 1cm thick.⁠
3. Melt the cheese in oven until it starts to bubble on top.⁠
4. Add cooked taco filling to each cheese taco shell, filling it only on my one side.⁠
5. Fold over other side, and wah-lah! You have mini tacos! Filling can be changed to suit whatever you crave!⁠
6. Enjoy with guacamole and sour cream dipping bowls!⁠

KETO GARLIC PARMESAN GREEN BEANS WITH BACON😍
INGREDIENTS
2 pounds green beans
½ pound bacon, diced
1 tablespoon butter
3 cloves garlic, minced
3 Tablespoons parmesan cheese, grated
salt and pepper to taste

INSTRUCTIONS
Start by trimming the ends of your green beans and slice into 2 inch pieces. Bring a large pot of water to a boil and add the green beans. Cook until tender 5-8 minutes and drain and put the green beans in an ice bath.
In a medium sized skillet cook the bacon until crisp. Remove with a slotted spoon and drain the fat. Add the butter to the skillet and garlic and saute until tender. Add bacon, green beans, and parmesan cheese to the skillet and cook until heated through. Salt and pepper to taste.

1 lbs Bottom round steak, thinly sliced
2 Bell peppers
Bell peppers, sliced thinly
Red Onion, sliced thinly
White Onion, sliced thinly
Pickled Jalapeños, chopped
1/2 lbs Monterey Jack Cheese shredded
Trader Joe’s onion salt
Sea salt
Pepper

Directions *Pre-heat over 350 degrees *Cut Bell peppers in half and core them
*Drizzle avocado oil on them *Bake 17-20 mins *Preheat a large frying pan to medium-high and add olive/avocado oil *Season steak with onion salt, pepper and sea salt. *Sear each side of steak about 1-2 mins and pull off to let rest a couple. *Cut steak into small 1/4”-3/8” square pieces *Preheat frying pan to medium and add avocado/olive oil once warm *Add thin sliced onions and Bell peppers to pan and cook while stirring often for about 10 mins
*Mix Steak, cheese, bell peppers, onions and jalapeños in a bowl
*Fill bell peppers *Bake 10 more minutes until Cheese is melted

Pear tarts, 1, 2, 3.

Vegan tart shell dough:
100g cake flour
100g bread flour
1/2 tsp of salt
1/2 tap of light brown sugar (optional)
1/2 tsp of baking powder
60ml olive oil
50ml cold water (add more if the dough comes out too dry)

1. Mix all dry ingredients with a fork.
2. Add olive oil. Gently mix it until it forms small lumps. Break the lumps into pea size pieces with your finger tips.
3. Gradually add in cold water and mix it until the dough starts to hold together.
4. Roll it out to your desired size.

LOW CARB FRUIT PROTEIN PIZZA for supper tonight. 😋 The WHOLE THING is 378 kcal, 11 C (net), 17 F, 36 P. This is super quick and easy to make.
RECIPE: • 1 @kboshfood Cauliflower Dessert Crust, baked from frozen at 375 for 12 mins. Allow to cool. • FROSTING: • 1 oz. 1/3 less fat cream cheese, softened (sub for fat free cream cheese for less calories and fat, but slightly higher carbs)
• 1 oz. @twogoodyogurt Plain Greek Yogurt (again, sub for Fage fat free for lower calories and fat, but slightly higher carbs)
• 1 scoop (28 g) @bowmar_nutrition Frosted Cookie Protein
• 2 Tbsp. Liquid to thin. I used @skinnymixes Caramel Creme Cheesecake SF syrup
• mix well and spread on your pizza crust after it’s cooled. • add fruit. I used an ounce of each Strawberries, Blueberries, Blackberries and Raspberries. I cut/measured them and sprinkled on a little @swervesweetie confectioners sugar substitute and threw them in the freezer while I waited for my crust to cool.

Healthy Pumpkin Muffins! 🎃

Gluten Free ☑️
Dairy Free ☑️
No Added White Sugar ☑️
Husband Approved ☑️
Kid Approved ☑️
Mom Approved ☑️ 🍂 Pumpkin Muffins Two Ways:
Version A: Full Size Pumpkin Muffins topped with Oats! (Completely dairy free. SO HEALTHY! AND SOOOOO GOOD!) Version B: Mini Pumpkin Muffins with Chocolate Chips! (A tiny bit if dairy in the optional chocolate chips.)
In both versions I made some health-conscious substitutions, including switching out the All Purpose in favor of Gluten-Free Oat Flour. I'm happy to report they were still incredibly moist, with an excellent taste AND texture, especially the full size ones! If you haven't made muffins with Oat Flour yet, it's definitely worth trying! The only downside was making these wore Mama out! Not sure if it was all the steps or being in my 8th month of pregnancy, (probably a little of each.) But now that they're gone, I'm wishing I'd made more!

This keto salted caramel cheesecake

Ingredients
Base
3/4 cup almond flour
1/4 cup coconut flour
1 Tbsp unsweetened cocoa powder
2 Tbsp Erythritol @sonourishedinc ,granular
1/4 tsp salt
3.5 oz salted butter melted
.
Filling
16 oz cream cheese softened
10 fl oz heavy whipping cream
1 tsp vanilla extract
1/2 cup Powdered Erythritol @sonourishedinc
3 Tbsp @temple_nutrition Salted Caramel Collagen Powder
1 Tbsp gelatin powder
.
Instructions
.
Base
In a large bowl, combine the almond flour, coconut flour, unsweetened cocoa powder, salt and erythritol. Mix until uniform in color
Pour in the melted butter, mix until well combined. Spread into the bottom and sides of a pre greased, parchment lined 20cm (8") cake tin.
You can either set this in the fridge (for no bake option), or bake in the oven at 350F (180C) for 15 minutes. (This is what I did)

Filling
Place the softened cream cheese into a large mixing bowl, using an electric hand mixer combine with the heavy whipping cream until well mixed through.
Add the vanilla extract, powdered erythritol, salted caramel collagen powder and gelatin powder. Continue to mix through until no lumps are visible in the mixture.
Pour on top of the base, and smooth out the top section. Set in the fridge for a minimum of 2 hours.
Keep in the fridge for up to 5 days, or can be frozen for up to 2 weeks.

There are ways around for the sweet stuff. Especially for those pesty chocolate cravings. This recipe has been a godsend. And soooo delicious:

1 1/2 c. heavy whipping cream (I use coconut cream for lactose free)
2 tbsp. 
unsweetened cocoa powder
3 tbsp. 
Swerve or Stevia (taste test to get the sweetness you desire)
1 tsp. 
pure vanilla extract
Pinch kosher salt
Refrigerate for up to 20 minutes

You can also turn this into a yummy frosty by scooping the mixture into a Ziploc bag and freezing it for 30 to 35 minutes, until just frozen. Enjoy!

Ok this right here might be my favorite thing I’ve ever made. Honey rosemary roasted sweet potatoes 😍 they’re so easy to make.
Preheat oven to 400. Cut a sweet potato into wedges. Drizzle honey, a little olive oil, Himalayan salt, and throw in some fresh rosemary. Bake for 20 min, stir, then 10-15 more min. Herby and delicious. I had some pumpkin pie spice and sprinkled some of that on top too

First off, you would never be able to tell that this is lowcarb wine! Never! It's extremely tasty, not vinegary at all, and very smooth going down the hatch!😁
This made for some awesomely delicious
Sangria Frosted Cookies, so ENJOY!

1c. @seccowineclub Ciliegiolo Red wine
2TB Allulose from @hoosierhillfarm
1 stick butter, softened
1/2c powdered Monkfruit/Erythritol Blend sweetener
1/4tsp vanilla extract
1pkg. @ketocandygirl lemon cookies, made according to package directions.

Simmer @seccowineclub red wine & allulose in a small saucepan, over med/low heat till reduced down to 2 tablespoons. This should take 20-30 minutes.
It will turn into a syrup as it cools. Set aside to cool completely.
Cream butter till fluffy, around 1-2 minutes.
Add the wine syrup and vanilla extract & mix till combined.
Add in powdered sweetener & mix till thoroughly blended. I chilled this frosting a little before frosting cooled cookies.
Garnish (optional)

✨How often do you celebrate the simple things in life? ✨ I’ve mentioned a few times in my stories that I feel like I have nothing important to talk about because I’m not on some fancy vacation or doing something cool every single day, most days I’m at work (not exciting). ‼️ MY ALL TIME FAVORITE DESSERT ‼️ these @yasso pumpkin cheesecake bars (120 calories) are PHENOMENAL!! Like seriously, even if these weren’t healthy I would gobble these up so it makes them THAT much better that they are not bad for you!! It’s a combination of my two favorite things - pumpkin & cheesecake and even has graham cracker swirls to make it that much more mouth watering 🤤🤯. I’m seriously obsessed ... i need to have 12 more boxes in my freezer before they stop selling them for the season 🎃🍂

Just because Halloween was last Thursday doesn't mean that we've stopped craving sweets! 😋 Thanks to @coupleofoodies for this healthy Twix Bar recipe! ⠀

#dEATS
Shortbread Layer🍪:⠀
-1/2 cup coconut flour, 1/2 cup almond flour, 1/3 cup extra virgin olive oil, 3 tbsp maple syrup⠀
-Preheat oven to 350 degrees F. Combine ingredients in a large bowl and stir until thoroughly combined. Line 8x8 baking dish (or bread loaf tin for thicker bars) with parchment paper and pack down mixture into the dish. Bake for 10-12 minutes, or until starting to turn golden brown. Remove once done & let cool completely.⠀

Caramel Layer🍯:⠀
-1/2 cup almond butter (or other nut butter), 1/4 cup extra virgin olive oil, 1 tsp vanilla extract, 1/4 cup maple syrup, pinch sea salt⠀
-Combine all ingredients in a saucepan over the stove on med-low heat & heat until completely liquified, whisking together, about 2-3 min. Remove from burner & let cool completely⠀

Chocolate Layer🍫:⠀
-1 dark chocolate bar (we used @theochocolate), 1 tbsp extra virgin olive oil⠀
-Warm the chocolate bar and olive oil in the microwave in 30-sec intervals, stirring in between, until completely liquified.⠀

LAYER IT🍪🍯🍫:⠀
-Once shortbread & caramel have completely cooled, pour caramel sauce over the base layer, spreading out evenly. Set in the freezer until it completely hardens. Remove from the freezer & pour chocolate over the top, spreading out evenly. Set back in the fridge for 5-10 min to harden. Once chilled, remove hardened mold from pan by pulling on sides of the parchment. Lay flat on cutting board, use a large knife, slice into 1/2-inch bars. ENJOY🤩⠀

#ketofriendly fudge! My mom said the taste reminded her of fudgicles!
Inspired by @savory.tooth ••••••••••••••••••••••••••••
Ingredients:
6 oz unsweetened baking chocolate (I used @lilys_sweets baking bar)
1.5 cups @swervesweetie confectioners sugar
1 cup butter (used I can’t believe it’s not butter)
6 tbsp heavy whipping cream
2 tsp vanilla

1. Add all ingredients in a microwave safe bowl
2. Stir and microwave in 30 second intervals until smooth and fully mixed together
3. Pour mixture into an 8x8 foil lined baking dish
4. Put in freezer for about an hour
5. Slice into 16 pieces and serve!

What makes a dessert healthier?? There is a lot of misconception out there that just because white sugar is swapped with some honey or maple syrup it all of a sudden becomes healthy. Or some almond flour instead of wheat. Or labeled with #keto, #glutenfree or #norefinedsugar. The truth is it may be a bit healthier, meaning its not gonna give you such a sugar high and crash, but is it chock full of nutrients that your body needs? Is it packed with good fats, protein, vitamins and minerals? Do you feel better after and ready to slay the day?
Don't get me wrong, it fine to indulge every once in a while in a treat-and it might as well be a little healthier. But if it's replacing a real food meal, we need to take a closer look.

A favorite treat of ours is a rice cake with peanut butter or almond butter and berries. It’s become a very satisfying dessert. If I’ve ate a larger meal and do t have room for this, yet still crave an after meal sweet, I’ll just eat a tiny spoon of pb with a few berries and call it good.

Brownies/muffins /donuts de chocolate.
Es la misma base usada en distintos moldes.
☘ 1 taza de harina de frutos secos (yo usé avellanas y almendras) ☘ 125 gramos de chocolate mínimo 75 % cacao* ☘ 2 cdas soperas de aceite de coco ☘ 4 huevos ☘ un toque de vainilla ☘ bicarbonato 1/2 cdita 👉 derrite el aceite de coco con el chocolate 👉 mezcla los ingredientes secos luego añade el chocolate y los huevos hasta tener una masa homogénea 👉 rellena moldes, decora con nueces (opcional) y hornea 25 min aprox a 180°
* esta ocasión decidí usar chocolate 75% porque tenía visita en casa, no he añadido ningún endulzante y el sabor es muy aceptable (para nuestro paladar) aún así puedes añadir 20-30 gramos del endulzante que utilices o bien añadir más, sobre todo si vas a usar un chocolate de mayor % y no te gusta el sabor amargo que aporta. ✔ súper fácil y delicioso .

Shredded Cheese⁠
Taco Seasoning⁠
Ground Beef⁠
Guacamole + Sour Cream (for dipping)⁠

👨🏼‍🍳 INSTRUCTIONS:⁠

1. Cook ground beef with taco seasoning. Set aside.⁠
2. Layer a small amount of shredded cheese in the bottom of large cupcake tin moulds, about 1cm thick.⁠
3. Melt the cheese in oven until it starts to bubble on top.⁠
4. Add cooked taco filling to each cheese taco shell, filling it only on my one side.⁠
5. Fold over other side, and wah-lah! You have mini tacos! Filling can be changed to suit whatever you crave!⁠
6. Enjoy with guacamole and sour cream dipping bowls!⁠

Oaty Treat Muffin 💋

- 40g @flahavans oats
- 1/4 tsp baking powder
- 1 egg
- sprinkle of cinnamon
- 2 tbsp natural Greek style yogurt
- 1 sachet of chocolate sylliflor @rocahealthcare (optional) this is great for your gut and filling feeling
.
Mix together in your cup and pop into the microwave for 2 minutes, turn cup over and pop onto your plate!

- top with more yogurt, raspberries and some @sweetfreedomuk chocolate syrup 🥰

Orthorexia doesn’t stem from wanting to loose weight, it stems from wanting to have the “perfect” diet. It has less to do with poor body image & more to do with fear of illness & disease. It isn’t obtaining from eating out because of the fear of food, it’s turning down social events in fear of having no “healthy” options. It’s not starving yourself at family holidays; it’s bringing all your own food because of fear of not knowing what’s in theirs. It means avoiding all & any From of chemicals, additives, preservatives, inflammatory oils, etc. It looks like becoming so obsessed with the quality/prep of food that it’s almost impossible to eat anything not made at home. It looks like being so caught up in the thoughts of when, what, & how you’ll eat that it ultimately takes over. It looks like isolation, sadness, & a life limited by fear.

But isn’t it healthy to avoid these things? Well, yeah. But “healthy eating” can become a dangerous obsession, limiting yourself & all you & your life have to offer.

After Thomas’s diagnosis, my orthorexia hit an all time high (for obvious reasons). Slowly but surely, I’ve made strides to get my life back & be able to live around food without fear. I spend my days consumed in thoughts of things other than what I’ll eat next, where it’s from, or how it’s prepared. & I want to be a light for those who feel they’re in a similar spot & to show that you can pull yourself out of it! & ITS WORTH IT. You can be healthy without obsession & your new quality of life WILL help you thrive ❤️

On another note, caught a case of the sniffles this weekend. I haven’t been sick in years so I’m doing everything in my power to fight it off.. also doesn’t help the temps are rapidly dropping over here in the PNW. I saw the funniest meme this morning “It was so cold outside, I farted snowflakes”. 😂 I think everyone can use some light hearted humor to start off Monday. Hope everyone had a wonderful weekend!

The one sentence every girl wants to hear from their significant other.... “I brought you food.” Okay okay, I’m easy to please 😂 There’s a reason two people stay together; they give each other something nobody else can. Not to get all sappy on ya, but it’s so true! All of our relationships (friends, family, partners) all play a huge role on our mental wellbeing, affecting all aspects of our health. Assessing these relationships, filtering out ones that aren’t suiting your life, & putting effort into those who give it back, can work WONDERS.

I just wanted to take a second to express gratitude for the angel I have 😍 Thomas couldn’t have come into my life at a better time. Do I NEED him to live? No. But I wouldn’t want to do life without him because of the value he adds to it. He saved me from my downward spiral. He supports my every move. & the first time he allowed me to have the first bite of his food, I knew I was keeping him 😂

Thomas is leaving for Florida for a big skateboard contest tomorrow morning & I couldn’t be more proud of him. Beating cancer & using it as fuel to chase his dreams rather than feeling sorry for himself. It makes me feel real freakin proud to have such an amazing soul by my side. I think it’s important To not stress about finding your someone. They’ll come when the time is right (even when it may not seem so). But good relationships, can add so much damn value to your life ❤️ Keep your fingers crossed for him at the contest!

2-ingredient frozen chocolate banana bites! have spotty bananas sitting on your countertop?! reuse them for this snack my kids love 😍
for 2 bananas:
melt 1/2 c chocolate chips over stovetop. slice bananas into coins and using a fork dunk them into the chocolate mixture. place on a tray with parchment paper, sprinkle with anything you want! i used shredded coconut, sea salt and peanut butter for a couple of them. freeze overnight or for at least 2 hours. ENJOY!
