Pieczone kotlety mielone.
Domowe. Pyszne i pachnące. Nie ociekają tłuszczem a jednak są dość soczyste👌Wersja, którą zachwalam miała wczoraj wieczorem swoją premierę a że jest warta uwagi, zapisuję ją tutaj.

Składniki wymienione na ostatnim zdjęciu połączyć i porządnie wymieszać w dużej misce. Formować kotlety łyżką - u mnie taka łycha do nakładania sałatek (ostatnio zamiast bawić się w lepienie w dłoniach nie tykam mięsa, co też polecam!) i wykładać na blachę pokrytą papierem do pieczenia.
Piec w 180-190° ok 50 min (zależy od piekarnika). Można obrócić w trakcie.

It was a journey for us too ♥️ Food should be indelible. It should leave a print on you, because it is an experience, because it is wonderfully wrapped in full flavor, because it is created with love. It’s sustenance yes, but it’s also medicine and magic. Driving to Appleton Estate, watching the cane wave, smelling its cloying sweetness was like a rememory. Asking for a bottle of cane juice seems like a small request. But it had big meaning. Muddled light green in color, smelling still like grass, it’s the sweetness that made the world come to the Caribbean in the first place. How beautiful it was to reduce that freshly pressed cane juice and cane vinegar into a gastrique. That sticky, syrupy sweet and sour we infused with Appleton 12 year old Rare Blend to add a little sauciness. I think it did the trick! Thank you for letting us play with flavor and create an indelible meal. Creamy potato gratin, oyster mushrooms, onion marmalade, crispy kale chips, sweet corn crèma, sugarcane rum gastrique, toasted hemp seeds

TARTALETAS DE SALMÓN AHUMADO Y AGUACATE⁠
Toma nota de este sencillo aperitivo porque el éxito entre tus invitados está asegurado. En mi casa no falta el salmón ahumado en Navidad✨y este año les quiero sorprender con estas tartaletas. La combinación del salmón ahumado con maderas nobles de @clubroyalonline con el aguacate y la mayonesa de lima está buenísima. ¡Vete preparando tu paladar para esta exquisitez!⁠

📝INGREDIENTES (12 tartaletas)⁠
12 láminas cuadradas de masa wonton⁠
4 Cdas. de aceite de oliva virgen extra⁠
220 g de lomo de salmón ahumado Royal⁠
2 aguacates maduros⁠

🥛Para la mayonesa de lima⁠
1 huevo⁠
250 ml de aceite de oliva virgen extra o de girasol⁠
2 Cdas. de zumo de lima⁠
Ralladura de 1 lima⁠
Pizca de sal⁠

🍽️Para decorar⁠
Ralladura de lima⁠
Cebolleta picada⁠
Germinados⁠

ELABORACIÓN⁠
1/ Precalienta el horno a 200°C. Con ayuda de una brocha de silicona, unta los 12 moldes de magdalenas con aceite de oliva. Unta también una de las caras de cada lámina de masa wonton.⁠
2/ Coloca las láminas dentro de los moldes con la parte que has untado de aceite hacia arriba. Hornea a 200°C durante 3-4 minutos o hasta que estén doradas. Coloca las tartaletas en una bandeja para que se enfríen y queden bien crujientes.⁠
3/ Para la mayonesa de lima, pon todos los ingredientes en el vaso de la batidora. Empieza a batir y no levantes la batidora hasta que esté formada la mayonesa, solo al final para mezclar la parte de arriba. Prueba y rectifica de sal y de lima.⁠
4/ Corta el lomo de salmón ahumado en cubos de medio centímetro y reserva. Haz lo mismo con los aguacates y échales un poco de zumo de lima por encima para evitar que se oxiden.⁠
5/ Rellena cada tartaleta con unos trozos de salmón y otros de aguacate. Añade una cucharadita generosa de mayonesa en el medio. Ralla un poco de lima encima, coloca unos trozos de cebolleta picada y germinados al gusto.⁠

FOOD TASTES BETTER WHEN SHARED!
Ingredients:
- 4 peppers of mixed colours
- 1 lemon
- a handful of fresh coriander
- 1 lemon (juice & zest)
- Black pepper
- Sea salt
- Olive oil
- GR’EAT granola Glory
1. Turn on the oven on 180°C
2. Wash the whole peppers & dry them
3. Place the whole peppers on a baking tray (standing up), roast for around 45 min until the skin is bubbling, slightly golden/charred.
4. Remove from the oven & let it cool down (easier to peel off the skin & to avoid to burn your fingers 🔥)
5. Cut the pepper on one side to roll it open! Remove the seeds & stem. Unroll the flesh on a wooden plank.
6. Remove the peel & cut lengthwise in strips.
7. Lay the strips down on a big beautiful plate. Alternate the colours 🌈.
8. Sprinkle with lemon juice to preserve the vivid colours. Add a dash of olive oil, spice up with black pepper & sprinkle with sea salt.
9. Add some fresh coriander leaves on one line in the middle (torn for more flavour, whole for more food-for-the-eyes).

FOOD TASTES BETTER WHEN SHARED!
Ingredients:
- 4 peppers of mixed colours
- 1 lemon
- a handful of fresh coriander
- 1 lemon (juice & zest)
- Black pepper
- Sea salt
- Olive oil
- GR’EAT granola Glory
1. Turn on the oven on 180°C
2. Wash the whole peppers & dry them
3. Place the whole peppers on a baking tray (standing up), roast for around 45 min until the skin is bubbling, slightly golden/charred.
4. Remove from the oven & let it cool down (easier to peel off the skin & to avoid to burn your fingers 🔥)
5. Cut the pepper on one side to roll it open! Remove the seeds & stem. Unroll the flesh on a wooden plank.
6. Remove the peel & cut lengthwise in strips.
7. Lay the strips down on a big beautiful plate. Alternate the colours 🌈.
8. Sprinkle with lemon juice to preserve the vivid colours. Add a dash of olive oil, spice up with black pepper & sprinkle with sea salt.
9. Add some fresh coriander leaves on one line in the middle (torn for more flavour, whole for more food-for-the-eyes).

The boiler has broken. The heating is off. There is, at least, hot water and thankfully we still have a small store of logs from last winter for the fire. That’s where we huddled last night; there and under many layers of duvets and quilts in bed. These temperatures call for hearty meals and this short rib with a rich, deeply flavoured gravy and sautéed potatoes and swede will keep us going until Kevin the plumber can get the part and come back, "ooh, probably on Friday, that’s the earliest I can do it." First methi paratha of the season!! Is there anything that spells the magic of misty winter mornings like fresh fenugreek leaves, kneaded and tempered into flaky parathas?? To me, more than Palak (spinach), it’s methi that is the quintessential winter green.
Breakfast today is this cooked in desi ghee with some chilled yogurt and mango pickle.
