Week 38 (tomorrow is our 9 month anniversaire), and what a journey it's been.
The past week has been stressful to say the least. We were all worried about Kev, but luckily and forever gratefully, all was good and he's back on fighting form, smashing his test results on Tuesday. It's been a big learning curve physically and mentally. Physically, I learned how sensitive Kev is in the heat & how careful I need to be when the temperature rises slightly. Moreover, the mental challenge is to stay rational and not let presumed anxieties and made up scenarios of kidney rejection take over my thinking. I know recovery is fluid and goes up and down, but when you're in the moment of a down, all rationale goes out the window. 
However, aside from this, it's been a fab week of meeting new people and making new friends,  seeing old friends, celebrating friendship, birthdays, weddings and partaking in new experiences. It's always a celebration of life, health and fitness in my world,  irrespective of what number week we're counting.

After 8 days, I managed to sneak back into my happy place this morning for a good upper body session. Working out at home is great, but it's nice to get it done uninterrupted and nothing but music in my ears 💪

Believe me- I get it all. I had a choice at my 10k- be disappointed that my race pace that was feeling hard was SO much slower & mentally give up. But I don’t do that. No matter my fitness, no matter what the day holds- I’ve fought & engaged & pushed to every finish line- I’ve never jogged it in. Sometimes there is the glory of a PR - but every time that is good practice for fighting for your best. It’s not the results that make you a champion- it’s the heart to fight for your best & believe in yourself that makes you a winner! Sow the seeds everyday into your future success. Show up, give your best with what you’re working with, stay positive & engaged, know that such AMAZING things are MEANT for you! You are a CHAMPION!🥊

🥦Why boiled vegetables?

🥦I'm gonna be super honest...

🥦... the starting point of me boiling vegetables was cos I thought that was the only way to lose weight. Y'know the whole no oil, no salt, no sugar thing. The whole "healthy" equals weight loss thing.

🥦I didn't enjoy it, not one bit. But I was willing to bite down and go through the "pain" if it meant I would lose weight.

🥦Of course all of that is a myth.

🥦Fast forward to today, I'm still boiling veggies. Not cos it's healthier, not cos it helps with weight loss, not cos I particularly like the taste (actually I've come to enjoy the distinct taste of each veggie), but cos of only one reason:

🥦It keeps longer in the fridge.

🥦I've tried baking, I've tried pan-frying, it usually only lasts for 1-2 days before it starts to taste or smell different from day 1. Boiling or raw on the other hand stays fine for 3-5 days. Which means I can make big batches of boiled veggies, keep them in the fridge and have instant access anytime I need them.

🥦I like making big batches of veggies also cos they’re my emergency snacks. On days I wanna stick to the plan but am craving to munch on something I’ll head over and grab as much veggies as I want along with a coke zero. That usually settles my cravings super easily.
-
🥦The way I like to boil my veggies is a simple 3-5 min from boiling point. I don't like them too cooked that they lose their crunch/crisp. If I could, I'd just eat all veggies raw, but some veggies are just really hard to chew.

🥦Broccoli, brussel sprouts, bell peppers, long beans are all on the top of my list cos they tend to last longer compared to the leafy greens. For the leafy greens like spinach I tend to cook & eat on the same day. Leafy greens don't seem to last long if cooked, they last much longer raw.

🥦Everyday I aim to eat 300g of any type of veggies.

🥦I like making big batches of veggies also cos they’re my emergency snacks. On days I wanna stick to the plan but am craving to munch on something I’ll head over and grab as much veggies as I want along with a coke zero. That usually settles my cravings super easily.

🥦The way I like to boil my veggies is a simple 3-5 min from boiling point. I don't like them too cooked that they lose their crunch/crisp. If I could, I'd just eat all veggies raw, but some veggies are just really hard to chew.

🥦Broccoli, brussel sprouts, bell peppers, long beans are all on the top of my list cos they tend to last longer compared to the leafy greens. For the leafy greens like spinach I tend to cook & eat on the same day. Leafy greens don't seem to last long if cooked, they last much longer raw.
