Summer is hear and so are all kinds of ice cream options. With this recipe, you can have your cake (or ice cream) and eat it too – indulge your sweet tooth without feeling the added guilt:
-BLUEBERRY YOGURT SWIRL POPSICLES
Ingredients:
2 cups blueberries
2 tbsp. honey
2 cups plain Greek yogurt
½ tsp. vanilla extract
Special Equipment
Popsicle mold
Instructions
Blend blueberries in a blender until nearly liquified. Pour into a large bowl.
Stir in honey. Add the yogurt very gently until everything is mixed together.
Pour mixture evenly into mold. If your mold has slots for sticks, insert them before freezing. If not, freeze for two hours, then put a wooden stick in the middle. Continue to freeze for 4-6 hours or overnight.
Run popsicle molds under warm water to easily remove. Enjoy! Ever tried Zucchini Pancakes? They make a great pre-workou meal:
Grate the zucchini into a bowl using the large grating side of a box grater. Immediately stir in the onion and eggs. Stir in 6 tablespoons of the flour, the baking powder, salt, and pepper. (If the batter gets too thin from the liquid in the zucchini, add the remaining 2 tablespoons of flour.)
Heat a large (10 to 12-inch) saute pan over medium heat and melt 1/2 tablespoon butter and 1/2 tablespoon oil together in the pan. When the butter is hot but not smoking, lower the heat to medium-low and drop heaping soup spoons of batter into the pan. Cook the pancakes about 2 minutes on each side, until browned. Place the pancakes on a sheet pan and keep warm in the oven. Wipe out the pan with a dry paper towel, add more butter and oil to the pan, and continue to fry the pancakes until all the batter is used. The pancakes can stay warm in the oven for up to 30 minutes. Ingredients:
-1 1/2
-pounds assorted sweet potatoes, peeled and cut into 1-inch chunks -6
 heads baby bok choy, halved lengthwise -1/4
 cup minced fresh ginger -2
 tablespoons red or brown miso paste -2
 tablespoons lime juice -2
 tablespoons cider vinegar -2
 teaspoons maple syrup -2
 cloves garlic, minced -6
 tablespoons canola oil 
Recipe:
Cooked red or white quinoa
 Sesame seeds
Place a steamer basket in a large skillet or pot. Add water to just below the basket. Bring to boiling; reduce heat. Add sweet potatoes to basket; cover. Steam 10 minutes. Add bok choy; cover. Steam 5 minutes more or until tender.
Meanwhile, for Miso Dressing, in a small bowl whisk together the ginger, miso, lime juice, cider vinegar, maple syrup, and garlic. Gradually whisk in canola oil until combined.  Serve veggies over quinoa; drizzle with Miso Dressing. Garnish with sesame seeds.

PIZZA CRUST:  1 head cauliflower, "riced" (yielding 6 cups cauliflower rice*) 1 1/2 DIY flax eggs (1 1/2 Tbsp (10 g) flaxseed + 4 Tbsp (60 ml) water  1/4 tsp sea salt  3 Tbsp Vegan Parmesan Cheese (or nutritional yeast if avoiding nuts)  1 tsp dried oregano  1 tsp dried basil  3 cloves garlic  1 heaping Tbsp cornstarch  1 Tbsp cornmeal (or gluten-free flour // to discourage the dough from  sticking to the parchment)
TOPPINGS:  Puréed tomatoes or Easy Marinara  Vegan Pesto  Sautéed or fresh vegetables (e.g. bell pepper, onion, mushroom)  Fresh basil  Red pepper flake  Vegan parmesan cheese
INSTRUCTIONS:

In a large mixing bowl, prepare the flax egg and let rest 5 minutes. Tired of your usual grilled cheese sanswiches? Then try this post-workout “Roasted Tomato Basil Grilled cheese Sandwich”.
* Preheat the oven to 400°F.
* Line a baking sheet with parchment paper and place the tomatoes on the sheet. Roast for 15 minutes until the tomatoes are starting to burst.
* Place the tomatoes in a bowl and carefully mash with a potato masher to extract the juice. Strain the tomatoes completely and reserve the juice in a small bowl. Mix 1 tablespoon of the juice into ¼ cup mayonnaise until it has the consistency of a sauce (double the tomato juice and mayonnaise for extra sauce). Reserve the strained tomatoes and sprinkle them with kosher salt.
* Spread each slice of bread with tomato mayo. Top with 1/4 of the strained tomatoes, shredded mozzarella, and some torn pieces of basil. Sprinkle the toppings with a pinch of kosher salt and top with another slice of bread.

8 ounces Linguine Pasta
2 Tablespoons olive oil
6 Tablespoons butter
4 cloves garlic, minced
1 teaspoon red pepper flakes
1¼ pound large shrimp
salt and pepper to taste
1 teaspoon italian seasoning
4 cups baby spinach
½ cup parmesan cheese
2 Tablespoons parsley, chopped
1 Tablespoon lemon juice
INSTRUCTIONS:
In a large pot cook the pasta in boiling water according to package directions. Drain and set aside.  Using the same pan, heat olive oil and 2 Tablespoons of butter. Add the garlic and red pepper flakes and cook until fragrant.  Add the shrimp and salt and pepper to taste. Cook until the shrimp start to turn pink. Add italian seasoning and spinach and cook until wilted.  Add the pasta back to the pot with the remaining butter, parmesan, and parsley. Still until mixed and butter is melted.  Add the lemon juice before serving and serve while hot. ‭ ‭

Cravying bread? Then try this low carb Dark Rye Bread.
Serves:1 loaf
-Ingredients
1 cup blanched almond flour (not almond meal)
¾ cup brown flaxmeal
½ teaspoon celtic sea salt
½ teaspoon baking soda
¾ teaspoon cream of tartar
3  large eggs
2 tablespoons olive oil
¼ cup water
2 tablespoons caraway seeds
-Instructions
In a large bowl combine almond flour, flax, salt, baking soda, and cream of tartar.  In a small bowl combine eggs, oil, and water. Stir wet ingredients into dry, then mix in caraway seeds. Allow batter to sit for 2 minutes to thicken.  Transfer batter into a greased 7.5 x 3.5 inch magic line loaf pan or 7.5 x 3.75 inch fox run pan. Bake at 350°F for 35-45 minutes. Cool 1 hour. Serve.
