Tomatoes are still going strong. It’s not quite fall yet, we’ve got about a week left! I’m getting as many summery recipes banked for next years editorials and magazine spreads AS POSSIBLE. This heirloom tart was a home run, @425magazine is in for a delightful August 2020!
Plums are up on the shoot list this week as well 😍🙌🏻. What are you trying to squirrel away? Every year I’m like, I’m going to freeze everything in season to have mid winter. Nope, I never do it 😂😂🙄. Do you manage to freeze any wonderful fresh summer fruit?
This week is kicking my butt, both kids aren’t getting to bed till 10 & 11pm. Milo can crawl out of his crib now and the transition is rough and keeps my 8 year old up while we TRY TO GET THE BEAST to stay in his bed at night. Naptime? No thanks. I am trying to get a full work load done with a very busy toddler wrapped around my feet and sometimes we both cry while making tarts 😂😂🙌🏻🙌🏻. hashtag mom life. My hope for myself and you today-
I hope you keep pushing, keep going and take lots of pictures of those wild kids while they crawl outta bed 1000 times at night because one day they will hopping on a plane with their buddies to see the world and your heart will ache for the times their entire little bodies fit into your arms still. #gothursday #realtalk

🍅 So fresh. Super easy. Always fabulous.
Pumpkins are arriving but but my garden — and markets — are still full of great tomatoes and basil🙌. As long as that’s so, I say summer’s not gone yet!

SERIOUSLY TASTY BRUSCHETTA
INGREDIENTS: * 2 LBS TOMATOES seeded & cored * SEA SALT * 3-4 CLOVES GARLIC, minced (my family likes a few more 😉🧛‍♀️) * 1/4 c FRESH BASIL, chopped * 1/2 CUP OLIVE OIL (good quality) * 1 BAGUETTE

DIRECTIONS:

1. PREP TOMATOES: Dice tomatoes small. Combine with 1/2 tsp salt and let them drain for about an hour. Discard the water. Don’t get impatient with this step - removing the water makes the final product less soupy and much better😊

2. MAKE CROSTINI: Meanwhile, preheat oven to 375 F. Slice baguette thin and arrange pieces on a baking sheet. Pour half of the olive oil into a small bowl. Stir in 1 or 2 cloves minced garlic. Brush the pieces lightly with the garlic flavored oil. Salt lightly. Flip the pieces over and repeat. Bake for 10-15 min until golden brown turning the pieces when halfway done.
3. MAKE CHECCA: Combine drained tomatoes with remaining 1/4 cup oil. Mix in basil, 1-2 cloves minced garlic, salt and pepper. Adjust each of these to taste. Let the checca sit for an hour or so to allow the flavors to mingle. Taste again before serving and adjust flavors as needed.

4. SERVE: If you plan to serve the bruschetta pre-assembled, top the crostini just before serving (assembling them too far in advance will make the crostini go soggy). I prefer to serve the crostini and checca separately and let people DIY — like chips and salsa Italian style😋. Depending on the size of the baguette you should get around 25 crostini. There will be more than enough checca for topping these.

I'm on a roll, more specifically, whole wheat rolls with brie in the center. Bread and cheese is probably my favorite food combo ever 🤔🤗 recipe via @kingarthurflour
100% whole wheat sandwich bread. It's their most popular recipe and I adapted it into rolls (I stuck a blob of cold brie in the roll during shaping and I used muffin tin for uniform size but watch closely because it burns easily). .

A humble BEEF pot pie using up leftovers!You can follow along in stories and save the recipe below with @wabeeflove
Recipe
💯
Beef Pot Pie
Makes one 9 inch deep dish Pie
Prep time 30 minutes
Bake time 1 hour 20 minutes 💯
Butter Pastry
2 cups flour
Pinch of kosher salt
1 cup cold butter cubed
1/4 cup ice water 💯
Filling
1/2 medium onion chopped
2 tablespoons olive oil
2 carrots peeled and sliced
3 cups potato’s cubed
1/2 cup fennel chopped
1 rib of celery chopped
1 medium Sized tomato diced
4 cups low sodium beef broth
2 tablespoons butter
1/4 cup flour
1 cup heavy cream
3 cups chopped cooked roast or steak
Salt and pepper to taste 💯
Buttery peas
1 cup frozen peas, thawed.
1 tablespoon butter 💯
Egg wash
1 egg
1 tablespoon cold water 💯
Pastry: In the bowl of your stand mixer or by hand mix the butter into the flour and salt until it’s roughly the size of a large pea. Slowly stream in your water until it forms a shaggy dough. Pour the pie crust out onto a floured surface and divide in half. Form each half into a round disc and wrap and Chill for 20 minutes. Now, make the filling. Sauté the onions in the olive oil over medium heat until soft, about 3 minutes. Add the vegetables And cover with the beef stock. Season with salt and pepper and bring to a simmer. Cook the veggies for roughly 15 minutes until the potatoes are knife tender. Add the butter and evenly sprinkle in the flour, stir. Add the chopped meat and check for s&p. Remove the filling from the heat and gently stir the cream into the mixture.
Remove the pie crusts from the fridge and generously flour a clean surface to roll each crust out. Roll the bottom crust into a roughly 12 inch circle. Gently tuck the crust into your pie dish OR aluminum cake pan. (This is what I chose)
Preheat your oven to 350 degrees with a baking tray inside the oven as it pre-heats.
Roll the top crust out to a roughly 10 inch circle. Fill the pan with your filling. Lay the top crust on top of the filling and crimp to seal. Trim excess pie dough. Give it a little vent with a fork. Bake on the tray for 60 minutes. The rest continued below in comments

When you can’t decide which photo to post from a recent shoot, so you make a little video and share a whole bunch at once. 😁 🥂 This was probably the biggest table scape shoot I’ve ever done and I could not have done it alone. The team at @royalprestigeofficial did so much work to help pull this off. Just look at all that food! They are such a talented and fun group and I’m so glad I got to be a part of this.

Le Plateau-Mont-Royal

Subtly spicy, softly hot, slightly sweet beef stew from Everyday Dorie by @doriegreenspan @hmhcooks .
Such an irresistible title, it sounded just what I felt like eating on a chilly evening.
The beef is marinaded for a couple of days in a bottle of red wine (minus a glass for the chef😜), soy sauce, gochujang with ginger slices and garlic. It’s then browned and cooked with carrots, onions, more garlic & ginger and cranberries. I was told dismissively 'c’est pas la saison, madame' by the fruit & veg guy at my grocery store so I subbed some red currants I had bought to decorate a lemon tart that never happened. Star anise, a cinnamon stick and orange peel also add a fantastic discreet flavour to the stew.
Served with egg pappardelle noodles and a tasty gremolata made with green onions, ginger, coriander, garlic & orange zest.
This month we are cooking along to this brilliant book at the #rainydaybitescookbookclub .

One-bowl white pesto pasta by @bonappetitmag’s @lallimusic is my adult mac-and-cheese hopes and dreams, realized. I’ll be packing my life away into boxes this week (when, exactly, does one pack her kitchen? 🧐) and something tells me we’ll have these noodles on repeat. It’s like your fav white slice in pasta form! #bareaders

Got what may be *the* last tomatoes of the season earlier today (up next: tomato butter!) along with McIntosh apples at @leapmarkets West End. My grandma always uses this variety in pies and they’re hard to come by in VA markets! As always, you have my heart @leapmarkets. #sharewithpeople

maple bourbon peach upside down cake. slices of yellow peaches, maple sugar, butter, and bourbon at the bottom of the pan = a superb topping for the cake. this was a mishmash of a few different recipes and ideas; the cake batter happened to be vegan, but i chose to use butter for the caramely topping. i found the cake part rather bland, but the juicy and fragrant topping made up for it - everyone seemed to enjoy the whole thing so it was good. #peachesfordays.
メープル&バーボン風味の桃のアップサイドダウンケーキ。果物を型の底に並べた上にケーキ生地を入れて焼き、出来上がりは上下逆さまにする #アップサイドダウンケーキ 。 今回は(まだ)旬の黄桃で。型の底にバターとメープルシュガーを散らして黄桃を並べ、バーボンを少し振っておいてみました。生地そのものはちょっとあんまり味のないケーキだったな、、という感じだったのですが、桃の部分はしっかり味がしていて、全体的にはおいしかったと喜んでもらえたようなのでよかったです。

Sigh, whatever they’re called, these were 💯. Also, I’ve never been a fan of peanut hoisin sauce, but this almond butter one is 🤤👏🏻.

Mermaid summer rolls with crispy Berkshire pork belly, blue rice noodles, cucumber, mint, cilantro, romaine, nuoc mam cham + almond hoisin sauce 🍚🍜🍖🥒🥬.

Nuoc mam cham
3 tbsp sugar
1/4 c hot water
3 tbsp fish sauce
5 tbsp white vinegar
3/4 c cold water
4 cloves garlic
Dissolve sugar in hot water. Add remaining ingredients. Store in fridge. Lasts 4ever or until u eat it all 😂 Yield: 2 cups.

Almond hoisin dipping sauce
2 tbsp @costco almond butter, unsalted
2 tbsp water
1 tbsp @wholefoods hoisin sauce
1 tbsp @fixhotsauce sriracha
1 tsp fish sauce
1/4 tsp lime
1 garlic clove, finely minced

A proportional plate of egg rolls (some folks call this spring rolls??? But I call the fresh ones that). Let’s just call them chả giò. 😬 Sometimes when you’ve got too many greens and herbs, you have to balance it with fried food and fish sauce...right? To be honest, I didn’t eat that many salads at home while growing up. Not because I hated greens but because as a child of Vietnamese parents, you learn from a young age to integrate herbs into your dishes. Now, that’s still a large source of my greens and my favorite is “fish mint,” called diếp cá, not pictured here because I ate all the tangy leaves. 🙃 *

Made a new batch of these glorious Brown Butter Apple Blondies with Salted Butterscotch Glaze over the weekend and they disappeared in one sitting ✨Gotta whip up a new batch, fast—it’s a good thing they’re so quick and easy to make! f i g t o a s t i n g for ✌🏻 made these little figgy toasties for da hubs + me this AM and paired it with his & her lattes 👫 post pic i added a pinch of smoked @maldonsalt, squeeze of lime + teensy drizz of @madhavafoods honey. Brightened these puppies right up 🤩. Which coffee would you choose ☕️? Have the best start to the week, y’all! Happy Monday 🤗.

Dark roasted pb, gf sprouted toast, tiger figs, crushed roasted peanuts 🥜🍞🐯 // viet coffee for him 🥛☕️, honey almond milk latte for her 🍯🥛☕️.

Adaptogenic lattes for 2
2 tbsp @allegrocoffee half caff French roast grounds
1.5 c water
1/2 tsp @nature.restore cordyceps powder
@madhavafoods honey, to taste
@malkorganics unsweetened almond milk, hot

I brewed my coffee in a @bialettiofficial espresso maker (linked on my amazon shop under “kitchen favorites” ☝🏻). Sweeten 3/4 c of coffee with honey then top w/ hot almond milk. Sweeten the other 3/4 c of coffee with homemade condensed grassfed milk & top off with more hot water. Mugs are 11oz & from @daiso_usa. #diningwithdiana

Spiced granola from Everyday Dorie by @doriegreenspan @hmhcooks .
During the week my family eat natural yogurt for breakfast and like to add roasted fruit & granola to it. I often make it myself because a)it’s so much cheaper and b)so many great recipes for it. This is one of those granolas, that bumps all the others down a notch. It includes oats, almonds, hazelnuts, cashews, coconut flakes, millet (I subbed with puffed quinoa) and pumpkin seeds drizzled in a honey glaze. It’s spiced with cardamom & ground ginger and I love the addition of grated ginger & lemon rind, reminding me of a favourite childhood cookie. I didn’t have any crystallized ginger left, but definitely adding it next time- love it! It says you can keep it for a month but it’ll be gone by Friday 😋.

Do you enjoy a good food and wine paring? It’s something that’s always interested me and today I’m sharing this duet: grilled shrimp & burst cherry tomatoes over polenta in concert with bright and fruity @cakebreadcellars Chardonnay!

Let’s call it (almost) Meatless Monday and Almost Fall (but not quite!). In any case, a meal centered around burrata is gonna work just about any day! Hidden under the pickled onion and vinegary greens is a slice of crispy pancetta. Otherwise we have tomatoes two ways, roasted and fresh heirloom, and some blanched French green beans. A no-cook summer-y dish (because it’s still technically summer 😅) of prosciutto wrapped around juicy + sweet mini honeydew melons from @. The skin is so thin you can actually eat it! Douse everything with your best olive oil, top with a bit of lava sea salt + freshly ground pepper and you’ve got yourself an appetizer, light meal or a fancy snack🍈!

Many, many random food thoughts at the moment but I didn’t want to forget to share this Soft Chocolate and Fig Cake from @yossyarefi’s Sweeter Off the Vine cookbook that I made a couple of weekends ago. It was my first time pairing chocolate and fig and they go together quite nicely.

It's hard to let go of summer when raspberries are still in abundance! I find them a bit tart but when stewed in compote or paired with some nut butter, they're irresistible! Pumpkin season has just gotta wait! 😁 .

Peanut butter raspberry choats jar:
🥜 soak 2 T of oats with 1 tsp of chia seeds in 1 cup of plant based milk.
🥜 mix in 1 T of @happywayau peanut butter protein powder.
🥜 mix in 1 T of fav nut butter.
🥜 1 tsp of maple syrup. Let it sit for 1 hour at least or overnight.
🥜 layer raspberry compote and then nut butter and then your choat mixture.
🥜 enjoy!! .

In reality, it’s cloudy and raining, and we’re packing a bag of gear to take the girls to the swimming pool to play.

Wild blueberry pie! I've made a lot of pies in the past and I've learned quite a few things: 1. Always make more filling/dough than you need or else you may run out for the details like the lattice or cookie cutter shapes. You also want your lattice to sit nicely on top of your filling or too little will cause it to droop. Also make sure your butter or shorterning and ice water is ICE cold. Makes all the difference!

Recipe for an 8 inch tart pan.
4 cups of wild blueberrys. 🍇 1 T of lemon juice.
🍇 3/4 cup of maple syrup or any sugar.
🍇 wash and pour lemon juice and sugar into a bowl with blueberries. Sit for 5 minutes. Then transfer into a pot and simmer for 10 minutes. Sieve and discard extra liquid.

Pie:
🍇5 T of dairy free butter. The sticks. Cold.
🍇 4 T of shortening. Cold.
🍇 1 and 1/4 cup of flour.
🍇 1 T of sugar of your choice 🍇 a dash of salt.
🍇 ice cold water.
🍇 in a stand alone mixer with paddle attachment , combine sugar salt and flour. Add half of your cold butter and mix on low until butter is broken down add the rest and continue until large pieces are seen. Stop the mixer and then use your hands to mix the rest. Place back onto mixer and add 5-6 t of ice cold water slowly. The dough should form. 🍇 try to avoid over kneading. With your hands make a square and then fold the dough over. Spread it out again into a square and fold it over itself two or three times. Repeat 2 more times. Place into fridge or freezer until ready to use. .

saturday night feasting with this grilled romaine cobb salad, loaded with all the goods - crispy bacon, grilled chicken, arugula, sweet cherry tomatoes, creamy avocado, shaved radish, tangy blue cheese, hard-boiled eggs and fresh chives. plus my grandma’s special cobb dressing. it is just TOO good. i’ve got the recipe linked in my bio!!
