In un pentolino con un filo d'olio aggiungi uno spicchio d'aglio. Dopo qualche istante aggiungi la passata di pomodoro e le foglie di basilico. Mescola e cuoci con coperchio per 25 minuti. Una volta cotto elimina l'aglio e sala a piacere.⁠

Taglia le #melanzane a fette di 2-3mm di spessore e friggile nell'olio a 170°. Scola su carta assorbente.⁠

Taglia le pagnotte a metà e tieni da parte la calotta. Scava eliminando la mollica. Versa un cucchiaio di sugo, 3 fettine di melanzana, un altro cucchiaio di sugo, una cucchiaiata di parmigiano, altre 2 fette di melanzana, qualche foglie di basilico, ancora pomodoro e formaggio. Trasferisci i panini farciti su teglia con carta forno.⁠
Aggiungi anche le calotte, spolverizza con parmigiano. ⁠

Cuoci in forno caldo a 200° per 10 minuti, poi modalità grill a 240° per un paio di minuti, facendo attenzione a non far bruciare il pane. Servi la #parmigiana nel #panino ben calda!⁠

Poi sforna e lascia raffreddare.⁠

Condisci la passata di pomodoro con olio, sale, origano e mescola.⁠

Srotola la pasta sfoglia e taglia, per il lungo, delle strisce di larghezza 6,5cm.⁠
Distribuisci la passata su tutta la striscia, spolverizza con il parmigiano e disponi 5 fette di melanzane, lasciando 1cm in basso. Ripiega il lembo di pasta sopra le fette di melanzane. Arrotola la striscia di sfoglia in modo da ottenere una rosellina. Dovrai ottenere 8 #roselline.⁠

ГАЛЕТА С СЫРОМ И КАРПАЧЧО ИЗ КУРИЦЫ.
Галета - это самый быстрый, вкусный и эффектный пирог из всех, которые мне известны.
У меня в профиле уже есть несколько разных-прекрасных, вот вам ещё одна.
Здесь шикарное тесто на пиве, благодаря которому получается слоистая, рассыпчатая и невероятно вкусная основа.
Можно печь и сладкие, если добавить в тесто немного сладости, и закусочные галеты, в любом случае получится просто пальчики оближешь)
Начну с закусочного варианта😋
⠀
• 250г муки
• 80г светлого пива
• 80г кокосового масла (любое другое растительное)
• 3г соли
• Чёрный кунжут для обсыпки
• 1 яйцо
• 150г моцареллу для запекания • 120г твёрдого сыра
• 150г карпаччо из курицы или любого другого мяса (можно даже двух видов, добавив буженину получите больше нежности)

Тесто замешиваем в даже миксера, насадкой весло.
В муку всыпать соль, влить пиво и кокосовое масло и быстро вымешать до гладкости.
Сформировать плоскую шайбу, затянуть в плёнку и убрать в холод, мин. на 30.
Тем временем нарезать тонкими слайсами карпаччо.
Если добавите буженину, её соломкой.
Моцареллу порезать мелким кубиком.
Твёрдый сыр натереть.
Отдохнувшее тесто тонко раскатать в круг.
Раскатывать удобнее сразу на тефлоновом листе или бумаге для выпечки.
Перенести вместе с бумагой или тефлоровым листом на противень.
Уложить мясо и моцареллу, отступив от краёв 5 см.
Сверху посыпать натёртым сыром.
Загнуть края, формируя круг, смазать тесто взбитым яйцом (оставшееся яйцо вылить в начинку) и посыпать черным кунжутом.
Печь в нагретой духовке до 190-200°С около получаса или чуть дольше, до румяной корочки.
Готовой галете дать отдышаться минутку-две и немедленно резать её на куски и наслаждаться ещё горячей!

Recipe 👇
1 medium size eggplant, cut into rounds and then halved (make sure the slices are not too thin)
2 tbsp neutral oil
1 tsp ground turmeric
1 tsp coriander powder
2 tsp cayenne (use more of leas to suit your taste - I like it spicy here)
1 can unsweetened coconut milk
1 serrano pepper (optional)
Curry leaves (optional)
1 tsp garam masala
Juice of 1/2 lime 
Salt, to taste .
Instructions: 1. Heat oil in a cast iron skillet, add the eggplant, sprinkle salt
2. Add the ground turmeric, ground coriander, cayenne, 1/4 cup water and stir fry on medium heat until the eggplant slices have wilted and somewhat crisp. I stir fried (stirring occasionally), for 20 minutes. 3. Add serrano pepper and curry leaves, if using. 4. Remove the pan from the heat and stir in the coconut milk, then return to heat (low heat) and simmer for about 4-5 minutes.
5. Sprinkle the garam masala, adjust the seasoning, if needed. 6. Squeeze fresh lime juice just before serving with rice or any flat bread

Köz versiyonu,
Bazen meze, bazen bir salata olarak mevsiminde sık sık soframda yer alır.
Köz kapya biber tarifi de yazmıştım.
Bu tarifimle de artık ‘seri köz getir’ grubuna dahil oluyorum sanırım. 🤣
Eskiden patlıcanları közmatik ile közlüyorum fakat alüminyum olduğunu anlayınca fırında közlemeye başladım.
Direkt ocağın üzerinde de közleyenler var ama ben onu beceremiyorum niyeyse.
Sanırım evi komple yakarım diye de bi korku var içimde. 🙈😂
Fırında da oluyor. Hem de gayet lezzetli oluyor.

Ben 1,5 kilo patlıcandan yaptım.
Bol bol yapıyorum, kavanozluyorum.
Buzdolabında saklıyorum ve 1 hafta içinde tüketiyoruz.
Fırını önceden 180 derecede ısıttım.
Patlıcanları yıkayıp kuruladım ve çatalla delikler açtım.
Fırın tepsisine dizdim ve tepsiyi fırının orta kısmına koydum.
Ortalama 40 dakikada fırın alt-üst ayarında közleniyor.
Ara ara açıp kontrol edin.
Bu salatayı köz soğanlı yaptığım için 4-5 adet minik minik soğanlardan da attım.
O soğanların da kabuğunu soyup, bütün şekilde tepsiye koydum. 
Minik soğan yoksa orta boylardan da koyabilirisiniz.
Patlıcanları kolay soymak için, derin kaseye koydum ve üzerini streç filmle kapadım.
10 dakika böyle terlediler ve soymam daha kolaylaştı. Kaşık yardımıyla içini aldım.
Patlıcanları soyduktan sonra bıçakla minik minik doğradım.
Köz soğanları doğradım.
2 yemek kaşığı tahin,
1 yemek kaşığı elma sirkesi,
1 yemek kaşığı limon,
2 diş ezilmiş sarımsak,
Tuz, karabiber ve
3 yemek kaşığı salatalar için olan @ataagac zeytinyağından koydum.
Limonu veya sirkeyi hangisini baskın isterseniz ondan biraz daha fazla koyabilirsiniz.
Limon hem güzel bir aroma veriyor hem de kararmasın diye ekliyorum.
Şahane oluyor şahane!

Maghmour is a simple Lebanese stew with grilled eggplant, freshly cooked chickpeas , onions and tomatoes. Absolutely easy, delicious and nutritious! By @yummyyayra 👌 it’s a must-try!

Ingredients:
1 large eggplant, cut into round slices
2 large tomatoes, finely chopped
2 yellow onions, thinly sliced
1 cup of chickpeas (soak about 1/2 cup of dry chickpeas/garbanzo beans in hot water for about 2 hours or room temperature water, overnight. Then, cook (or pressure cook) the beans until tender
1/4 cup + 2 tbsp olive oil, divided 
6 cloves of garlic, minced
1/2 tbsp tomato paste (unsalted)
Salt, to taste
1 tsp dried mint
1/4 tsp paprika
1/4 cup Chopped parsley, optional

Instructions:
Heat a cast iron or a non-stick skillet (medium heat), add 1/4 cup olive oil and arrange the eggplant slices, sprinkle some salt, paprika and let it brown on one side for about 4-5 minutes. Carefully, flip the eggplant slices with a pair of tongs, let the slices brown and wilt for another 4-5 minutes. Transfer to a plate and set them aside 
Heat a wide pan, add 2 tbsp olive oil, 6 cloves of minced garlic and 2 large sliced yellow onions, sprinkle some salt and sauté for 3-4 minutes. 
Now add 2 large chopped tomatoes, 1/2 tbsp tomato paste, 1 cup cooked chick peas, 1/2 cup water and 1 tsp dried mint. Stir well and cover and let it simmer for 5 minutes.
Remove the cover, add the eggplant slices, gently mix, cover and cook for another 7-10 minutes.
Add parsley before serving. 
Serve with your favorite toasted flat bread.

✅Ингредиенты:⠀ ▫ 1 большой баклажан
▫ 1 ст. л  соли
▫ 3 ст. л масла по вкусу, желательно термостойкого, такого как авокадо (кокосовое, оливковое)
▫ 1 средний лук, мелкими кубиками
▫ 1 небольшой перец чили, такой как кайенский или Фресно, измельченный
▫ 3 зубчика чеснока, измельчить
▫ ½ ч.л молотого тмина
▫ ½ ч.л молотого кориандра
▫ 1 ½ стакана вареного нута
▫ перец черный молотый, по вкусу
▫ 2 стакана измельченных помидоров (4 шт.)
▫ 1 стакан овощного бульона
▫ 1 ст. л. свежего лимонного сока
▫ ¼ чашки нарезанной петрушки ❤️ ПРИГОТОВЛЕНИЕ⠀

1. Удалить стебель баклажанов и нарезать кубиками. Засыпать кубики в дуршлаг и перемешайте их с 1 ст л соли. Отложите на час в раковине.

2. Через час баклажаны промыть (чтобы убрать лишнюю соль) и обсушить бумажным полотенцем.

3. В глубокой кастрюле с толстым дном нагрейте масло на среднем огне. Партиями обжарьте баклажаны до золотисто-корочки
и размягчите. Баклажаны выньте и положите на тарелку, выстеленную бумажным полотенцем.

4. Если необходимо, добавьте масла в кастрюлю и уменьшите огонь до среднего. Лук и острый перец обжаривать, пока лук не станет прозрачным, около 4 минут. Добавить чеснок, тмин и кориандр и перемешать до появления аромата, около 30 секунд. Добавьте нут, соль и черного перца по вкусу, перемешайте, чтобы покрыть нут специями. Добавить помидоры и овощной бульон.

5. Доведите рагу до кипения и варварите, не накрывая крышкой и периодически помешивая, в течение 10 минут. Добавить баклажаны обратно в кастрюлю и довести до кипения еще раз. Добавьте лимонный сок и петрушку.

Full House, also Full Tisch 🤣, die Beilagen waren fürs Bild schon fertig, das Fleisch durfte noch im Kühlschrank chillen 😎. INGREDIENTI PER LE MELANZANE⁠
Melanzane 800 g⁠
Timo 8 rametti⁠
Rosmarino 4 rametti⁠
Aglio 2 spicchi⁠
Olio extravergine d'oliva 20 g⁠
Sale fino 1 cucchiaino⁠
Pepe nero 1 cucchiaino⁠
PER IL RIPIENO⁠
Bulgur 100 g⁠
Pomodorini datterini 250 g⁠
Cetrioli 50 g⁠
Feta 40 g⁠
Sedano 25 g⁠
Basilico 10 foglie⁠
Olio extravergine d'oliva 10 g⁠
⁠
Spunta le #melanzane e dividile a metà per il lungo, poi incidi la polpa in profondità con la lama di un coltello ⁠
creando una sorta di scacchiera ma avendo cura di non intaccare la buccia. Strofina la superficie delle melanzane ⁠
con lo spicchio d’aglio.⁠
⁠
Condisci con sale, pepe e olio e adagia sopra i rametti di timo e rosmarino. Cuoci le melanzane per 20 minuti in forno statico preriscaldato a 220°C.⁠
⁠
Trascorsi i 20 minuti di cottura delle melanzane, rimuovi ⁠
le erbe aromatiche, copri con la carta stagnola e inforna ⁠
nuovamente per altri 10 minuti.⁠
⁠
Fai cuocere il bulgur in acqua bollente salata per circa 10 minuti.⁠
⁠
Una volta cotte, le melanzane risulteranno molto morbide: rimuovi la polpa con l’aiuto di un cucchiaio e aggiungila ⁠
nella ciotola dove avrai precedentemente tagliato i pomodori, i cetrioli e il sedano. Aggiungi anche le ⁠
foglioline di basilico e il bulgur. Infine condisci con un filo d’olio e mescola bene per amalgamare il tutto.⁠
Riempi le melanzane svotate con il ripieno di #bulgur e verdure, poi aggiungi la feta sbriciolata e una macinata di ⁠
pepe.⁠

When summer comes in Turkey , it is an eggplant roasting time at homes , breakfast -lunch-dinner type . I am not exaggerating, there are so many different version of just roasted eggplant salads , eggplant is one of the most commonly used and loved vegetable in Turkish cuisine . .
. Eggplants are roasted over stove top , it is easy and smoky flavor from char makes your house smell amazing . Use simple grilling  pan that has holes in it so you do not create extra mass ! .
. Here’s my recipe of Roasted eggplant . .
. We are going to roast every vegetable except onions in the same pan , unpeeled. ✅

.4 large eggplants ,peel after roasting .1 med . tomatoe
.3-4 garlic .1-2 spicy pepper . Julienned onion . Olive oil + salt + 1 tbsp vinegar .
.🍆🥗 Chopped and mix everything along with good olive oil , and vinegar . .
You can serve this as side dish to red meat or fish ( vinegar works perfectly ) or just simple wholesome main dish the way I like it . .
