The same compounds that deliver these amazing hues and aromas also deliver amazing health benefits.... think anti-inflammatories, antimicrobials, hormone balancers and circulation boosters to name but a few. So- get them into your diet everyday, whether dried or fresh, in main meals, desserts or teas. Aim for at least 3-4 different herbs and spices daily.

What’s really important though? Storage and use. Throw away any jars that have been languishing in the back of your cupboards for months / years! Oxidation damages the medicinal compounds. Also- NEVER shake the contents out over a hot steaming pan. The steam will enter the jar and the moisture will more quickly degrade the herbs/spices. Sweetcorn is not just for the BBQ.... this creamy sweetcorn chowder recipe is super simple and does not include one drop of cream 😉

RECIPE👇
1 white onion finely chopped 
2 cloves of garlic finely diced or grated 
4 potatoes scrubbed and diced 
4 cobs of corn kernels cut away from the cob
1 good quality vegetable stock cube
Sea salt
Freshly ground black pepper
Olive oil

HOW TO MAKE THIS DELICIOUS SOUP 👇

1. Warm a large saucepan over a medium heat and drizzle in 1 tablespoon of olive oil. Tumble in the onions and garlic then allow them to gently soften stirring regularly.

2. Dissolve the stock cube in 750ml of boiling water and set aside.

3. Add the potatoes and corn kernels to the pan and mix them into the onions and garlic before pouring over the stock. Season with salt and pepper to your taste then simmer for 30 minutes or until the potatoes can be crushed with the back of a spoon.

Sweetcorn is not just for the BBQ.... this creamy sweetcorn chowder recipe is super simple and does not include one drop of cream 😉

RECIPE👇
1 white onion finely chopped
2 cloves of garlic finely diced or grated
4 potatoes scrubbed and diced
4 cobs of corn kernels cut away from the cob
1 good quality vegetable stock cube
Sea salt
Freshly ground black pepper
Olive oil

HOW TO MAKE THIS DELICIOUS SOUP 👇

1. Warm a large saucepan over a medium heat and drizzle in 1 tablespoon of olive oil. Tumble in the onions and garlic then allow them to gently soften stirring regularly.

2. Dissolve the stock cube in 750ml of boiling water and set aside.

3. Add the potatoes and corn kernels to the pan and mix them into the onions and garlic before pouring over the stock. Season with salt and pepper to your taste then simmer for 30 minutes or until the potatoes can be crushed with the back of a spoon.

We sprung a leek! 🌱 Summer leeks don't typically get so enormous, but we've been upping our leek game over the past few years.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Here's our leek growing process:
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1. Start seeds in open flats.  Our favorite variety is Chinook F1 from @highmowingorganicseeds 
2. Transplant leeks into bulb crates filled halfway with potting soil (we use @vermontcompost fort v)
3. Let leeks grow to pencil size in the bulb crates
4. Prep beds by harrowing, adding compost, and raking
5. Using a dibbler, make 6" deep holes, 5" apart (we made a dibbler that allows us to make 6 holes at once), 3 rows in a 30" bed
6. Transplant one leek per hole, making sure the roots go all the way down
7. Cover to keep leek moths out
8. Cultivate as needed
9. Harvest!

We do remove the row cover once the plants get too tall for it.  If you're in an area affected by leek moth, be especially sure to cover at night, as that's when they lay their eggs. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Right now leek moths are flying around looking for places to overwinter, so keep your fall leeks covered.

To limit overwintering in the field, we trim and clean the leeks in our wash station, and put debris in the compost pile.

Have you tried millet? Millet is an ancient grain that is eaten mostly in Africa, Asia and India. It is gluten free and can be fluffy like rice or creamy like mashed potatoes or polenta depending on how you cook it. I chose fluffy to accompany another Ethiopian inspired bowl.
👉Mushroom and TVP “Tibs” a dish which is traditionally made with chicken, beef, or lamb with roasted yams, millet and buttery, ripe avocado
🤘Mushroom Tibs Recipe
-reconstitute 1 cup Texturized Vegetable Protein I used @bobsredmill 
And reserve for later
-saute 4 garlic cloves chopped, 1/2 a chopped yellow onion and 2 inch nub of fresh ginger peeled and chopped in olive oil until fragrant and toasty
-add 2 cups baby bellas quartered season with salt and black pepper cook until mushrooms are well seared about 4 mins stirring or flipping depending on your skillz
-add 4 compari tomatoes diced to hot pan season again with salt and pepper cook 3 minutes until tomatoes start to release their liquid
-add 1 cup water, add TVP and 2tsp berbere spice
-boil for 5 minutes stirring occasionally, taste for salt.
🤘Millet Recipe
I used @bobsredmill 
Toast 1 cup millet on medium heat with a tiny bit of evoo for 2 minutes until you smell the nutty fragrance
Add 2 cups water, a pinch salt, 1tsp vegan butter @meltorganic and 1/2 tsp @traderjoes umami seasoning. 
When it boils turn to low and cover. Cook until liquid is absorbed about 15 min and fluff with a fork.
PRO TIP: When cooking grains, never stir them with a spoon during cooking process. Always bring to a boil and cover, trust the process, it has been working for thousands of years!! Spoons will break up the grains and make them mushy which is never good. Millet is like a hybrid between rice and quinoa, very similar to cous cous but without the gluten. 
I am really enjoying the adventurous flavors I have been working with lately. What do you think, am I getting too “out there” or should I keep them coming?

dEats: #glutenfree rainbow radiatore, snacking tomatoes, fresh asparagus, grilled marinated artichokes, fresh parsley and mint, topped with a generous drizzle of olive oil and sprinkling of flaky sea salt.
