paired all my favorite summer fruits with this LOADED bagel. definitely a breakfast for the books!

At the beginning of the summer I was 20 pounds heavier. Yes, 20. I was working out relatively consistently, but my nutrition was a dumpster fire. Prior to today, my last workout was on August 22nd. In September I decided enough was enough and completed a Whole 30. In October I worked on finding a balance of eating right and living my life. Today, I returned to a workout I love. I lifted extremely light, modified a ton, and was very mindful of not pushing myself too hard. In case what I wrote isn’t clear—3 months of eating right enabled me to lose almost 20 lbs. Its ok...I have food freedom🤦🏻‍♂️ Oops I mean...its low in fat🤦🏻‍♂️🤦🏻‍♂️ Wait wait wait...no no, its plant based!🤦🏻‍♂️🤦🏻‍♂️🤦🏻‍♂️ We are really just hanging on the edge of sanity here. I'm sure the obesity and T2D epidemic have nothing to do with our pristine food supply. Sugar is essential and clearly cancers, brain related illness and auto immune conditions are just pure chance. The "food" we eat has NOTHING to do with our body's ability to function.

Whistling past the graveyard people⚰ Sure we all end up there someday but I'm going out on my terms. The choice is yours if you want to think synthetic foods are harmless and just a way to enjoy life. I see people each day who want to reverse disease in order to spend more times with loved ones or be there to see someone grow up etc...a life full of these fake foods eventually will catch up with you...no matter how lean or healthy you think you are now.
You can laugh at people who take health or nutrition seriously. You can very easily just say "oh come on, just live a little." But someday these companies will have taken not only your money...but also your health...and you allowed it.
Nutrition is simply really. Humans make it seem complicated to sell you "foods" you do not need, supplements you should not take and finally drugs you will not want. No other animal struggles with what to eat. Our percieved choices have made it this way. This is the new life cycle we have created. We do have the power to change it...but does it matter to us? It is simple but not easy. Start today committing to yourself and your health. Reject these everyday foods and start eating a human diet. Nobody else can do it for you!

Sometimes the best food you can find are at the street vendors. These chicken cheese fried momos would unquestionably be rated the best if it goes on a competition with every big brands out these. Piping hot huge momos filled with cheesy chicken-ey goodness, served with super spicy chilli chutney? You got my attention. BTW I'm not sure of the name of this street stall but it's on 27th Main, HSR. If that helps 🤷‍♀️

dEATS: In a pot, bring 1/2 cup @bobsredmill + 1 cup nut milk to a boil. Reduce to a simmer. When it starts to get thick, add 1 Tbsp ground flax seeds, 1 Tbsp chia seeds and several dashes of cinnamon. In a pan, sauté 1-2 tsp of coconut oil with a chopped organic apple🍎 + cinnamon, stirring then around and covering for a few mins till they’re soft. Posting this little Apple dessert I made for Craig and I the other night while we watched a Christmas movie! Clearly I’m obsessed with apples lol 🍎🍎 I have nothing to show for breakfast because I spent my morning working on the perfect almond milk latte with the nespresso I got with some of my wedding gift cards 🤗 and the verdict is in!! I like the original line way better than the vertuo!! I’ll share my healthier (AND CHEAPER) version of the vanilla almond milk latte soon! But for now: APPLES 🍎🍎

Used my @lecreuset pan from my work wedding shower 😍 sprayed them with coconut oil and added 2 tsp of coconut sugar + 1 tbsp @enjoylifefoods mini chocolate chips. Bake at 450 for 30 min and top with whatever you like (yogurt would be good) but I did almond butter and extra choco chips! -

Being sick for two weeks means this girl got to have allll the bone broth 😷 This was super easy to make and is honestly 10x better than all the other store bought ones I’ve had — easily became a weekly meal prep staple this winter. pumpkin mac and cheese... oh how I adore you 😍❤️
a simple weeknight meal that you can easily prep ahead and have leftovers for days!
I love making a big batch of turkey burgers and storing them in the freezer, and I try to always wash and chop my vegetables ahead of time to cut down the prep-time!
this is the style of “meal prep” that works for me, and helps me stay as sane as possible 😅

pumpkin mac and cheese sauce 🎃 recipe from @chocolatecoveredkatie!) - yields about 3 cups sauce!
•2 cups pumpkin purée
•2 tsp minced garlic
•1/2 tsp salt
•2 tbsp olive oil
•1 cup milk of choice
•3/4 cup nutritional yeast
-combine all ingredients in a pot and bring to a complete boil. reduce the heat and stir until everything is combined well!

I paired it with some @eatbanza chickpea pasta, a @rachaelsgoodeats turkey burger, some @primalkitchenfoods ketchup, and some asparagus!

I was getting ready to make grated egg avocado toast ™️ UNTIL I realized my microplane was soooo dirty 🤣. I guess I could’ve washed it but i had meal prepped soft boiled eggs. So instead, we went back to the soft boiled egg life. 🤗. Lately I’ve been varying up the types of eggs I eat and it’s been nice because I forgot how darn good scrambled eggs are! What is your fav way to cook em?
In the meantime, my life until Friday will be finishing two problems sets and my presentation. I always say this is a busy time until I realize the busyness during the semester just never stops. Ya feel? Also if my life seems kind of boring ATM, it just real life and I’m not apologizing for it 🤣. Sometimes we all need to sit behind the computer!

Sesame Garlic Brussels Sprouts. They're insanely good and will probably be the first side dish to go come Turkey day ☺️ amazing plate! .
For best results, I recommend cooking them one batch at a time and then keeping them warm in a 200F oven as you prepare the rest. The vinaigrette takes exactly 43.5 seconds to make and can be done ahead of time. .

Paleo Apple Crisp 🍎🍏 Took my single serving apple crisp and made it regular sized because the single serving was nowhere near enough 😉 Seriously this is so simple + so delicious! It’s a perfect breakfast or dessert. Made with only 6 ingredients and gf too. -

Idk if it’s exactly like a traditional apple crisp but that’s what I’m calling it 🤷🏼‍♀️ Growing up, I was a super picky eater so I only really ate pb&js + desserts at Thanksgiving 😂 So that’s my favorite thing to make now😉 When you serve this, it kind of crumbles a little bit so it’s basically sautéed apples with a delicious crumble mixed in. Trust me, it’s amazing. Happy hump day! -

#recipe details 👉🏻 Preheat oven to 350F
Chop 4 apples however you want. I diced them but you could slice them. Heat a pan over low medium heat, add a little coconut oil to the pan and add in the apples then sprinkle with cinnamon until they’re coated. Sauté until they’re soft, about 4-5 minutes.
Grease a pie pan (mine is from Target), add the apples in.
In a small bowl, mix together 1/2 cup almond flour + 1 tbsp maple syrup + 1 tbsp melted coconut oil + 1 tbsp coconut sugar. Mix together and top the apples with the mixture.
Bake for 30-32 minutes. #paleo #choosingbalance #eatwell

Happy tuesday! couldn’t get out of bed this morning with this arctic blast🥶craving all of the cozy meals like this stovetop oatmeal. plus it’s just another vehicle for sautéed apples🙃 hope you have a great day & stay warm💛
