Oatmeal Raisin Cookies 😄

INGREDIENTS
* 1 cup whole oats
* 3/4 cup whole wheat flour
* 1/2 cup sugar free maple syrup
* 2 TBSP butter
* 1 whole egg
* 1.5 teaspoon baking powder
* 1 teaspoon cinnamon and vanilla
Extras: Raisins, cranberries and sugar free dried coconut flakes
_
DIRECTIONS
1. Mix dry ingredients: oats, flour, cinnamon and baking powder
2. Add the butter and eggs. Mix very well
3. Add the maple syrup and the extra ingredients
4. Place the batter in the fridge for 20 minutes
5. Separate batter into balls and bake at 350 F for 25 minutes

Day 369 - Spain - first day - part 2 - Huevos a la flamenca or Flamenco eggs with tomato and serrano ham from Cadiz in Andalucia.
I am super excited to have finally arrived in Spain. I love Spain as if it was my home. Would move there tomorrow if I could and not just because of the food but of the weather, people and good quality leather shoes.
This dish is good for any time of the day and I call it 'loaded' eggs in paprika-spiced tomato sauce. Loaded because of peas, green beans and red pepper buried in the sauce.
We all love chorizo, I have hidden half of chorizo in the sauce and let the rest to crisp up on the top. Delicious! Served with toasted sourdough bread rubbed with fresh garlic. Day 369 - South Sudan - Part 1 - Basbousa - sweet semolina cake. Probably the best use of semolina I have experienced in my life. I haven't thought of baking a cake with semolina, but it actually works well. The syrup made the cake very moist and very sweet. 1 or 2 small squares would go a long way and there is so much still left that will last us a week or two.
I do have a theory about why would they drench the cake in sticky syrup. Been a busy no school day today for my girlies so I’m a little behind on posting these awesome finds at @goodnessmewaterloo they carry so much more sensational GF items but these are a few I snatched up to give a try 😛 the graham crackers I’ve used before, love and can only find here. I’m grateful to have a Goodness Me local to me! The kettle BBQ I nibbled on 2 last evening to try (yes, extreme restraint) and WOW because most often we can’t find gluten-free bbq chips, these are sooooo yummy 🤤 I will buy again when I can gobble up the whole bag myself (back off kids! 🤣) Tomorrow making cheese cake and rice crispy squares 😋

🍳 Directions: .
👉 1. Preheat oven to 325F. Grease an 8x8in baking dish with coconut oil or cooking spray. .
👉 2. Heat a small saucepan over medium heat. Add raspberries, chia seeds and maple syrup. Cook for about 8-10 minutes, stirring often. Use a potato masher to smash berries for the “jam” layer. Set aside to cool (I usually put it in the fridge). .
👉 3. Combine oats, oat flour, sugar, cinnamon salt, and baking soda in a large bowl.

👉 4. Add applesauce, maple syrup and coconut oil, vanilla, and almond extract, stirring to combine. .
👉 5. Set aside a heaping half cup of the oat mixture and then spoon the rest evenly into the prepared pan. Top with raspberry chia jam, spreading evenly with a spoon or spatula. Drop the rest of the oat mixture on top. .
👉 6. Bake for 30 minutes. Cool completely on a wire rack before cutting into 12 bars. Store bars in an air-tight container in the refrigerator. .

H.E.A.L.T.H - is what I now stand for.

For the past 7 years, there's been a HUGE fight within myself. I've struggled with everything that makes up a "healthy" & "happy" lifestyle: food, exercise, water intake. ✅I used to LOVE food, then HATE it. ✅I used to exercise for 2 hours EVERY day - then I ditched ANY sort of physical activity for lliterally months.
✅I've lived the most AMAZING experiences of my entire life - then I didn't want to leave my bed for entire days or my house for weeks.

A rollercoaster - in a nutshell.😖 I have treated my body as my enemy and ended up feeling sorry for myself TOO many times.

When you suffer from an eating disorder, the urge to gain CONTROL over your life again is enormous.

That's why taking ACTION is the most powerful thing. Period.

ALWAYS and in ANY situation.

Today, I can put my hand on my heart and say that I AM PROUD of the way that I've been handling this, and even though I've still got an "open wound", I will always keep my head up, put one foot in front of the other and WORK HARD to create the life of my dreams, the life I desire for myself.

Always be kind to yourself.
Develop a "problem solving" mindset so when life throws a punch at you, you know how to punch back and work towards a solution.

Today I have taken time to realise and reflect over how FAR I have come over the last 7 years and I want to help other people to the same.

Ingredients 🍱:
1 1/2 Tbsp olive oil
1 (3 lb) chuck roast
Salt and pepper
1 onion, thick slices
5 garlic cloves, minced
1 1/4 cups cup beef broth
2 tsp Worcestershire sauce
1 Tbsp thyme
1 Tbsp rosemary
2.5 lbs small potatoes
2 1/2 Tbsp cornstarch
2 Tbsp parsley
5 carrots

DIRECTIONS 👩‍🍳:
1. Heat 1 Tbsp olive oil in a pot.
2. Dab roast dry and season with salt and pepper.
3. Sear roast in pot until browned on both sides.
4. Transfer roast to slow cooker. Add remaining 1/2 Tbsp olive oil to pot.
5. Add onion and garlic sauté 2 minutes. Pour onion mixture over roast in slow cooker.
6. Return pot to heat, pour in beef broth, Worcestershire, thyme and rosemary and cook about 15 seconds. Remove from heat.
7. Layer potatoes and carrots over onion layer in slow cooker, pour beef broth evenly over top then season with salt and pepper.
8. Cover slow cooker and cook on low heat until roast and vegetables are tender, about 8-9 hours.
9. Remove roast and vegetables, shred roast (discard fat) and cut potatoes if desired.
If you'd like to thicken the broth and make a gravy, pour broth from slow cooker through a fine mesh strainer into a small saucepan. Heat over medium-high heat. Whisk cornstarch with 3 Tbsp beef broth then pour into saucepan. Bring to a simmer, stirring constantly, let simmer 30-60 seconds.
10. Plate roast and vegetables, pour gravy over the top and sprinkle with parsley.

Chipotle Lime Salmon burgers:
Makes 14 medium sized patties
3-4 (5 oz) wild caught salmon filets
1 Tbsp avocado oil
salt + pepper
1 tsp garlic powder on 350 for 13-15 minutes, let cool, and then with a fork flake the cooked salmon and add to a bowl with:
1/4 cup cilantro
1/4 cup onions
1 red bell pepper
1 yellow pepper
1 small zucchini
2 Tbsp chipotle lime mayo
2 Tbsp spicy brown mustard
2 pasture raised eggs

Instructions
1. Add you salmon filets to a pan, drizzle avocado oil over them, add salt + pepper to taste, garlic powder
2. Bake your salmon 350 for 15 minutes
3. While your salmon is cooking add all vegetables to food processor and pulse a couple times to chop (or chop by hand)
4. Add the chipotle lime mayo, mustard, eggs, cooked salmon into the veggie mixture and mix
5. Once salmon is done cooking flake 6. Form into patties
7. You can either cook on a grill pan for about 2-3 minutes (just be gentle with flipping) if they fall apart its okay just reform
Other option to cook is in air fryer on 370 F for 10 minutes.

Recipe (yields 2-3 servings)⁣
Ingredients:⁣
~ 1 small head cauliflower, wash & cut into florets⁣
~ 1 small green bell pepper, cubed⁣
~ 1/2 small red onion, cubed & 2 cloves garlic - sliced⁣
~ 1/4 cup dry roasted cashews⁣
~ 4 dried Thai chilis/red chilis⁣
~ oil for frying and cooking⁣

🍃Batter ingredients: Mix 3/4 cup all-purpose flour (use almond flour for Paleo), 1/4 teaspoon salt, a few shakes of white pepper in a bowl with 1 cup of cold water until well combined. The batter should be on the thicker side.
✔️Dip cauliflower florets in batter, shake off excess & fry until golden brown. (I used a small saucepan) Drain excess oil on a paper towel. (Bake version: grease a baking sheet pan with oil, place battered cauliflower florets on the pan. Bake at 485F until light golden brown for about 20-25 mins, be sure to flip halfway & brush a florets with oil, if needed. For the last few minutes, you may broil to get a crispier texture)

🍃Sauce ingredients: Mix together 1/2 tablespoon dark soy sauce, 1/2 tablespoon sugar, 2 tablespoons soy sauce & 1 tablespoon Chinese cooking wine/sherry in a bowl & set aside.⁣ (use coconut aminos & honey as substitute for soy sauce & sugar) ⁣
✔️In a heated nonstick pan with 1 teaspoon oil, sauté onion, garlic, bell pepper, dried chilis until fragrant. Add sauce and cook mixture for 10-15 seconds. Then, add cauliflower florets, cashews, and coat cauliflower well with the sauce. ⁣
