Avocado Salmon Rice Bowl

INGREDIENTS
Rice
1 cup jasmine rice
1 1/2 cups water
Salt
1/2 lime, juice only
2 Tbsp minced fresh cilantro
1 Tbsp honey
3 Tbsp chicken or vegetable stock
Salmon:
1 lb salmon fillets skin on
1 Tbsp lime juice
1 Tbsp honey
2 Tbsp minced fresh cilantro
Salt to taste
Avocado Topping:
1 ripe avocado
1 tbsp lime juice
1 tbsp minced fresh cilantro
1/4 tsp chili powder less for milder topping
Salt to taste
INSTRUCTIONS
Rice:
Cook rice in salted water per package instructions. Take off heat when it's just done.
Preheat a medium cooking pan over medium-high heat. Mix stock, lime juice, honey, and cilantro together. Pour the mixture into the preheated pan and let it simmer for about a minute. Take the pan off heat and mix rice into the liquid. Season with a little bit more salt, mix well, and set aside.
Salmon:
Preheat oven to 425 and cover a rimmed baking sheet with aluminum foil and grease it.
Rub the salmon skin with some oil and place the fillets skin down on the prepared baking sheet.
Mix lime juice, honey, and cilantro together and rub salmon fillets with it on all exposed sides. You can pour more glaze over the top and season with some salt. (Some glaze will likely run down onto the baking sheet, it will most likely get quite scorched in the oven. Don't be scared it's not your salmon burning, it's the glaze that ran down.)
Bake salmon for 12-15 minutes, depending on the thickness of your salmon fillets.
Avocado:
Cut avocado in half, take out the pit, and take off the skin. Chop avocado and add it to a small bowl. Add lime juice, cilantro, chili powder, and salt. Gently mix.
To assemble the rice bowls: divide rice among two bowls, top it off with a salmon fillet, and top each bowl with half the avocado mixture.

Italian Wedding Soup 🍲 .

*For GAPS diet, leave out the pasta, spinach & celery.

Ingredients
16 oz sweet Italian sausage
3 large carrots
2 celery stalks
3 cloves garlic
1/4 cup onion
4 cups organic spinach
10 cups chicken stock
1/2 cup Acini di pepe pasta
1 tbsp Italian seasoning
Salt & pepper
1 tbsp olive oil
1/2 cup Parmesan cheese .
.
Instructions
1. Cut down the side of sausage & remove meat from casing. Place in a medium bowl & form into small meatballs.
2. In a large pot, add olive oil, onions, celery & carrots. Cook until tender. Add chicken broth & bring to a boil.
3. Add meatballs & pasta. Reduce heat to medium & cook until meatballs are cooked through & pasta is tender. Taste broth & adjust seasonings to your liking.
4. Add spinach & top with Parmesan cheese.

PALEO 5-ingredient COCONUT BANANA PANCAKES 🥥🍌. You can doubled the recipe, but here’s what you need *for 1 serving (4-5 mini cakes):
1 banana
1 egg
3 tbsp of coconut flour
1/2 tsp of baking powder
1/2 tsp cinnamon

1. Mash the banana.
2. Add whisked egg, baking powder, coconut flour and cinnamon. mix well and form pancakes into 4-5 inch cake.
3. In a pan coated with coconut oil at low heat for 3-4 minutes on each side. drizzle with some maple butter and enjoy!
If the batter is too thick add a splash of nut milk.

Last weekend I had the opportunity to help a group of Girl Scouts earn their “snack” badge. We made one of my favorite energy ball recipes and talked about the importance of real food!

Getting kids to eat a diet that consists of more than chicken nuggets can be challenging BUT it’s 100% on you as the adult to help them learn about taking care of their growing body’s. Kids eat what you buy and I’ve done cooking classes with hundreds of kids and we’ve always found something that they enjoy making and eating. They might not like every single meal and that’s okay. Let them explore and learn what flavors they enjoy and by all means get them involved in helping prepare meals. Kids are more likely to eat it when they get to help make it. Energy ball recipe below.
-
-1 cup nut butter(use whatever your fav is, I use cashew)
-1/4 cup flax seeds, this will help the mixture stick together
-1/4 cup ground pumpkin seeds
Additional add ins: coconut flakes, dried fruit, chocolate chips, chia seeds, help seeds, collagen. I switch up the ingredients every time depending on what I’m feeling and what I have on hand. Let you kid pick some of their favs and have them help you!
-mix all ingredients into a bowl(you want the texture to be pretty sticky so it stays together, if it’s too wet add some more flax seed) and then roll into small balls.

Avocado Salmon Rice Bowl

INGREDIENTS
Rice
1 cup jasmine rice
1 1/2 cups water
Salt
1/2 lime, juice only
2 Tbsp minced fresh cilantro
1 Tbsp honey
3 Tbsp chicken or vegetable stock
Salmon:
1 lb salmon fillets skin on
1 Tbsp lime juice
1 Tbsp honey
2 Tbsp minced fresh cilantro
Salt to taste
Avocado Topping:
1 ripe avocado
1 tbsp lime juice
1 tbsp minced fresh cilantro
1/4 tsp chili powder less for milder topping
Salt to taste
INSTRUCTIONS
Rice:
Cook rice in salted water per package instructions. Take off heat when it's just done.
Preheat a medium cooking pan over medium-high heat. Mix stock, lime juice, honey, and cilantro together. Pour the mixture into the preheated pan and let it simmer for about a minute. Take the pan off heat and mix rice into the liquid. Season with a little bit more salt, mix well, and set aside.
Salmon:
Preheat oven to 425 and cover a rimmed baking sheet with aluminum foil and grease it.
Rub the salmon skin with some oil and place the fillets skin down on the prepared baking sheet.
Mix lime juice, honey, and cilantro together and rub salmon fillets with it on all exposed sides. You can pour more glaze over the top and season with some salt. (Some glaze will likely run down onto the baking sheet, it will most likely get quite scorched in the oven. Don't be scared it's not your salmon burning, it's the glaze that ran down.)
Bake salmon for 12-15 minutes, depending on the thickness of your salmon fillets.
Avocado:
Cut avocado in half, take out the pit, and take off the skin. Chop avocado and add it to a small bowl. Add lime juice, cilantro, chili powder, and salt. Gently mix.
To assemble the rice bowls: divide rice among two bowls, top it off with a salmon fillet, and top each bowl with half the avocado mixture.

Ce matin, j’ai regardé droit dans les yeux mon pot de fromage blanc et je me suis demandée ce que je pouvais faire avec lui.Et j’me suis dit « tiiiiiens, je vais essayer un gâteau au fromage blanc,bim » Sans beurre et sans prise de tête ! ⠀
Je suis épatée par sa texture hyper moelleuse voir fondante. ⠀
J’y ai ajouté de l’amande et des grains de sucre sur le dessus. Histoire de faire « effet brioche » ⠀
