Dinner was quick and easy tonight. @twrgrassfedbeef polish dogs with a little goat cheese the last of my @alternasweets ketchup 😩and some roasted broccoli. If you’re not roasting your broccoli then you need to try it! LEFTOVER VEGGIES?🥕🥔🍠 As a university student, money isn’t always abundant and therefore, we want to waste as less as possible! Fried rice is such an easy way to use older veggies with ingredients you typically have in your cupboard or fridge. So here’s a Westernised take on a quick and easy fried rice!

Oriental fried rice -white rice -leftover veggies (broccolini, carrot, zucchini,pumpkin, potato, etc)
- bacon - egg - shao shing (Chinese cooking wine)
- soy sauce -fish sauce -garlic
1. Boil potato and pumpkin in cubes
2. Scramble eggs
3. Boil rice
4. Cook bacon
5. Add veggies and garlic to a pan and stir fry for a few minutes. Add the rice, bacon, potato and pumpkin to the pan and fry up.
6. Add 1tablespoon of fish sauce, 1 tablespoon of shao shing and add soy sauce to taste.
7. And Eggs and enjoyyyy 🍚

Now that Halloween 🎃 is over, the mindfulness needs to kick in by getting rid of that extra candy and staying on track with delicious healthier meals.

My NEW Lemon Chicken with Broccoli is so easy to prepare..the sauce is so delicious, and the broccoli, which is steam sautéed, keeps in all the great antioxidants and anti-inflammatory sulforaphanes.
You get a SATISFYing dinner for under 500 calories, packed with 40+g of protein and fiber.

Lean chicken tenderloins are sautéed in a light white wine, lemon, and butter sauce in this easy skillet meal that is often called “Picatta”. Broccoli is cooked right in the skillet. How easy is that for a true one Pan meal!! I’ll usually buy steam pouches of cooked brown rice to complete the meal without any additional pans to clean!
INGREDIENTS

12 ounces chicken tenderloins
2 tablespoons arrowroot starch or corn starch
1 tablespoon olive oil
1/4 cup diced red onion
2 teaspoons minced garlic
2 cups fresh broccoli florets or broccolini
Juice of 1/2 lemon
1/3 cup dry white wine (see tip)
1 teaspoon honey or agave nectar
1 tablespoon light butter
1 tablespoon capers, drained and rinsed
1 1/2 cups cooked brown rice
Zest of 1/2 lemon

DIRECTIONS

1. Lightly season chicken tenderloins with salt and pepper and then toss in the arrowroot starch to lightly coat.

2. Heat olive oil in a large skillet over medium-high heat.

3. Add chicken to the hot skillet and let cook 4 minutes, just until golden brown.

4. Flip chicken and add red onion and garlic, then let cook 1 minute.

5. Add the broccoli to the skillet and squeeze lemon juice over top all. Pour in white wine and honey.

6. Bring up to a simmer, cover, and let cook 3 minutes, or until broccoli is crisp-tender. For a thicker sauce, uncover and let simmer 1 additional minute.

7. Remove from heat and stir in light butter and capers. Season with salt and pepper to taste before serving over cooked brown rice. For more flavor and color, top with fresh lemon zest.

Mona’s Tips: The alcohol in the white wine will evaporate as this dish is cooked. However, if you do not want the flavor of the wine, you can simply substitute chicken stock in place of it.

Honestly some days we wake & its crazy town. We take turns to reach for any peace in a combo of good music, the outdoors or an easy, decent breakfast. Today was just that 🙈 #lifewithkids 👉 •

So, with chill out tunes 🎶, a quick jump on the trampoline 🤸‍♀️ & 5 mins to whip up this 3 ingredient pancake topped with kefir, maple, cinnamon & sliced pear - it was sorted {for at least 40 mins...😉🙌🍐} • I used 1/2 banana, 1 egg + 1 Tbsp wholemeal spelt flour (normally coconut flour for gf, but the cupboard was bare) per pancake, mixed and flipped in coconut oil 😋😋😋 keeping us powered!! _____________________________

Easy Chicken Salad 🥗 as the weather warms up salads are becoming the preference 🤩 and they’re super easy for meal prep and the slightest tweaks can make them all very different!
Here we have:
✨ 1 cup cooked brown rice
✨ 1 bag of spinach
✨ 1.5 cups roasted sweet potato & pumpkin diced
✨ 1 large tomato
✨ 1/2 avocado
✨ flaked almonds
✨ pan seared chicken tenderloins
Combine all ingredients together in a large bowl. Add chicken & dressing of choice when serving. My dressing: olive oil, coconut aminos & honey 🤗 #saladprep #springsalads #healthyeating #healthymeals #easymeals

ingredients: •2 pork loin -red potatoes -1 cauliflower head -seasonings (shown in next pics) -minced garlic -olive oil -

pre heat oven to 375 degrees F. on med/high heat cook pork for a few mins on each side on pan then cook in oven for ~30 mins (more time for less pink) before placing in pan i smothered pork in BBQ sauce w minced garlic (also shown in next pic). while pork is cooking in oven, steam cauliflower and potatoes. after both are steamed i added a little bit of olive oil & seasonings of my choice (shown in following pic).

Baked pesto pasta with chicken sausage and veggies for some church friends who just had a new baby! I love baked pasta because you can prep it in advance, and then heat it up when you’re ready to eat.

Recipe modified from @wellplated:

1 12 oz package chicken sausage, cut into bite sized pieces (I love the sweet Italian)
1 pound pasta (I used penne)
1 6-8 oz container pesto of choice
1 cup plain Greek yogurt
1 medium sized zucchini, cut into bite sized pieces (you can sauté the zucchini a few minutes if you like it to have a softer texture)
1 pint cherry tomatoes, cut in half
1/4 teaspoon red pepper flakes (I omitted these because the friends I was cooking for requested non spicy food)
1 cup shredded mozzarella cheese (I definitely used more)
Fresh basil leaves (I omitted it because I forgot to buy basil)
1/4 cup grated Parmesan cheese

1. Preheat the oven to 375 degrees F. Lightly coat a 9x13-inch baking dish with nonstick spray.
2. In a large stockpot of boiling, generously salted water, cook the pasta to al dente according to package instructions. Reserve 1 cup of the pasta cooking liquid, then drain. Return pasta to the stockpot.
3. While the pasta cooks, in a small bowl, whisk together the pesto and Greek yogurt until evenly combined.
4. To the stockpot with the pasta, add the pesto/Greek yogurt mixture. Gently stir to coat the noodles. If the sauce is too thick, splash in some of the pasta water. It should be a little saucy.
5. Add the sausage, cherry tomatoes, zucchini, and red pepper flakes. Gently toss to combine.
6. Pour half the pasta into the prepared baking dish. Sprinkle evenly with 1/2 cup mozzarella and half of the basil. Layer the remaining pasta over the top, spreading it into an even layer. Sprinkle with the remaining 1/2 cup mozzarella.
7. Bake for 25-30 minutes or until the cheese is melted and just barely starts to turn golden. Remove and sprinkle with Parmesan cheese and fresh basil. Serve warm.

Want a super easy meatless dinner recipe? I got one for you!
Take a whole block of @nasoya firm tofu, one or two whole sweet potato, brussel sprouts, and broccoli. Cut them and put them on a baking tray. Toss them all in Worcestershire sauce and bake at 400 degrees for about 30ish minutes (until everything looks slightly crisp).

Take a whole block of @nasoya firm tofu, one or two whole sweet potato, brussel sprouts, and broccoli. Cut them and put them on a baking tray. Toss them all in Worcestershire sauce and bake at 400 degrees for about 30ish minutes (until everything looks slightly crisp).

Chicken Piccata
👉🏻2 large chicken breasts
👉🏻seasoned flour for dredging (I used McCormick garlic, herb, black pepper & sea salt seasoning)
👉🏻1 egg + splash of milk
👉🏻3 tbsp butter
👉🏻8-10 cremini mushrooms, sliced
👉🏻1/4 of a medium onion, diced
👉🏻2c chicken stock
👉🏻2 tbsp flour or cornstarch
👉🏻juice of 1/2 lemon
👉🏻fresh parsley, chopped
👉🏻capers
.
Slice the chicken breasts into 2 or 3 thin breasts.
.
Season breasts with salt and pepper, dip in egg mixture and dredge in flour
.
Heat a large pan and melt 2 tbsp of butter, then panfry the chicken breasts.
.
Once the chicken is cooked, set it aside and in the same pan, add the last tbsp of butter, the diced onions and sliced mushrooms. Cook for 2- 3 minutes until soft.
.
Leaving the mushrooms and onions in the pan, whisk in the cornstarch, chicken stock and lemon juice to make a roux.
.
Continue whisking on medium heat until the sauce thickens, once it's thick you can turn off the heat and add the chicken breasts back in.
.
Sprinkle with fresh chopped parsley to finish, and top with capers.
.
ENJOY!

Last night I did white wings.

This was my first attempt at doing them myself and I think I did pretty darn good. .
These are not exactly hard, but I used to do all of the prepping and Dan would put them together. .
.
It's a boneless chicken breast wrapped around mozzarella cheese & some fresh jalapeno.
Then wrap that with bacon & cook. .
These make amazing leftovers the next day when the flavors really have a chance to blend.

Leftover grill roasted fingerling potato medley (another Russ creation) sliced heirloom tomato topped with fresh guacamole. Simple salad made with chopped greens and chopped red onion and also topped with guacamole as a fresh dressing.

Happy November 🍁🦃🍂 Hubby is home sick from work today so mama made him some gingery congee for brekkie 🤧 Vietnamese soup for the soul and the sick 😁 It’s been a super chillaxin Friday for us 😌 Have a great start to the weekend!

Vietnamese ginger congee with scrambled + golden yolk pasture raised eggs, cilantro, green onions + lots of black pepper 🍚🍳🌿🍲.

*Instant pot congee
1 c rice, rinsed & drained
6 c water
2 tbsp @betterthanbouillon ck base
2” piece of ginger, peeled & finely diced

Place ingredients into the instant pot. Close and seal the lid. Select “porridge” option & pressure cook for 20 mins. Use natural release once done, about 30 mins wait time. Stir and season with fish sauce. For thicker congee, turn on sauté function and cook until desired consistency is achieved. Make sure frequently to stir to prevent burning/sticking. #diningwithdiana

Final delivered meal for the week - more sautéd greens, a quick risotto and lightly battered and pan fried cod (which was delish!). ⁠⠀

Most people think risotto has to be a long and complicated dish. Traditional methods certainly can be, but I've been loving this risotto recipe for a long time with no complaints.⁠⠀
⁠⠀

In the meantime, happy cooking. ⁠⠀
⁠⠀
2 T extra-virgin olive oil ⁠⠀
2 T butter ⁠⠀
2 small shallots, diced ⁠⠀
3 cloves garlic, minced ⁠⠀
2 ½ cups Arborio or canaroli rice ⁠⠀
¾ c dry white wine ⁠⠀
6 cups vegetable stock ⁠⠀
8 ounces Parmesan⁠⠀
⁠⠀
Heat butter in cast iron pan over medium heat. Add shallots and cook until translucent 8-10 minutes. Add garlic and rice and cook for another minute. Add wine and simmer for a few minutes, until rice absorbs the liquid. Pour 2 cups vegetable stock over rice and simmer, stirring frequently. Once moisture has evaporated, stir in a ½ cup additional stock. Repeat process until rice is tender and creamy, and you have used all the broth, about 35-40 minutes total. Most people think risotto has to be a long and complicated dish. Traditional methods certainly can be, but I've been loving this risotto recipe for a long time with no complaints.⁠⠀

2 T extra-virgin olive oil ⁠⠀
2 T butter ⁠⠀
2 small shallots, diced ⁠⠀
3 cloves garlic, minced ⁠⠀
2 ½ cups Arborio or canaroli rice ⁠⠀
¾ c dry white wine ⁠⠀
6 cups vegetable stock ⁠⠀
8 ounces Parmesan⁠⠀
⁠⠀
Heat butter in cast iron pan over medium heat. Add shallots and cook until translucent 8-10 minutes. Add garlic and rice and cook for another minute. Add wine and simmer for a few minutes, until rice absorbs the liquid. Pour 2 cups vegetable stock over rice and simmer, stirring frequently. Once moisture has evaporated, stir in a ½ cup additional stock. Repeat process until rice is tender and creamy, and you have used all the broth, about 35-40 minutes total. Top with Parmesan and stir until melted, reserving 2-4 T for garnish. Top with poached eggs, arugula, fresh sea salt and pepper. ⁠⠀

A lot of alcohol was consumed Wednesday night so the only way to help yesterday was to order a fat @frankieandbennys 😍 they have good vegan options and the cheese sauce they have is really nice. I ordered the cheesy garlic bread, cheesy chips (they put way too many chilli flakes on them though and it blew my brains out😂) and the mushroom bianca which was actually incredible and really creamy😊

My #worldveganday dinner brought to you in the form of meal-prepped chili cause it’s freezing cold and comfort food is where it’s at y’all 👏🏻 made with @yvesveggiecuisine vegan ground round, a can of tomatoes, a can of kidney beans and a bunch of spices and garlic - let all that simmer while I whipped up some rosemary cornbread stuffing, put it all together in a bowl (and into tupperware for the next couple days) and just like that this delish easy vegan meal was done in less than an hour 👌🏻 Friendly reminder that food prep doesn’t have to be complicated, and throwing a bunch of pre-made canned stuff together is just as valid as spending days slow roasting some fancy dish 💁‍♀️ With my job I barely have time to throw anything together, so i’m grateful for quick & easy options like this to help get me through the week!

shout out to bagels for fueling this mama everyday for the last 9+ months🙌🏻🥯
my very fancy lunch about 5 days out of the week looks a little something like this:
toasted everything bagel (with gluten, without gluten or paleo - ya girl isn’t biased😎), smeared with @montysnyc scallion cultured cashew cream cheese on one side and their everything bagel flavor on the other, mashed avocado, scrambled @vitalfarms in ghee and some bacon on top🥑🥓🍳usually arugula too but i’m fresh out😭
i either buy the bagels or make my own (recipes are on my blog!) happy friday friends. now only if we can rewind to yesterday again because i miss dressing ezra up as an🥑🥑🥑 #rachleats #glutenfree #paleo #easymeals

Soup season means all the delicious bowls of creamy comfort food! INGREDIENTS

8 tablespoons butter divided
1 small yellow onion chopped
1 cup shredded carrot
1 tablespoon minced garlic
30 ounces chicken broth click for homemade recipe!
1/8 teaspoon nutmeg
1/2 tablespoon dried thyme
1/2 teaspoon paprika
1 teaspoon kosher salt
1/2 teaspoon black pepper
2 lbs boneless skinless chicken breasts
16 ounces DeLallo Potato Gnocchi
1/3 cup white flour
2 cups half and half
1/4 cup grated parmesan cheese
1/3 cup heavy cream
2 cups fresh baby spinach roughly chopped

INSTRUCTIONS

Heat a large stock pot or dutch oven over medium high heat. 3 tablespoons butter until just melted.
Add in the onion and carrot and stir to coat in the butter. Saute for 3-5 minutes or until onions are translucent.
Stir in garlic and cook for 1-2 more minutes or until fragrant.
Pour in the chicken broth and add in the nutmeg, thyme, paprika, salt, and pepper. Add in chicken breast and bring to a boil. Cover and reduce heat to simmer. Allow to cook for 8-10 minutes or until chicken is fully cooked. Remove chicken and set aside.
While chicken is cooking, heat remaining butter in a small sauce pan. Once melted, stir in the flour briskly with a whisk.
Pour in the half and half, whisking while you pour. Once fully combined and smooth, allow to simmer to 3 minutes or until thickened. Whisk often.
Stir in the parmesan cheese until combined. Remove from the heat and stir in the cream, whisking with your hand until smooth. Set aside.
Once chicken has been removed from the broth, add in the 16 ounces potato gnocchi. Allow to simmer, covered, for 5-7 minutes or until gnocchi rises to the top and is done.
Stir the cream mixture into the broth/gnocchi mixture.
Cube the cooked chicken and return to the soup, along with the spinach. Heat until warmed to your liking, but do not allow to come to a boil.

Serve and enjoy!

Pour in the chicken broth and add in the nutmeg, thyme, paprika, salt, and pepper. Add in chicken breast and bring to a boil. Cover and reduce heat to simmer. Allow to cook for 8-10 minutes or until chicken is fully cooked. Remove chicken and set aside.
While chicken is cooking, heat remaining butter in a small sauce pan. Once melted, stir in the flour briskly with a whisk.
Pour in the half and half, whisking while you pour. Once fully combined and smooth, allow to simmer to 3 minutes or until thickened. Whisk often.
Stir in the parmesan cheese until combined. Remove from the heat and stir in the cream, whisking with your hand until smooth. Set aside.
Once chicken has been removed from the broth, add in the 16 ounces potato gnocchi. Allow to simmer, covered, for 5-7 minutes or until gnocchi rises to the top and is done.
Stir the cream mixture into the broth/gnocchi mixture.
Cube the cooked chicken and return to the soup, along with the spinach. Heat until warmed to your liking, but do not allow to come to a boil.
