dinner #dEats: big #foodchallenge tonight, salmon burgers! Burgers are a huge fear food for me, so step one was having a salmon burger at home with my family. Next time I want to try a beef burger, and maybe after that I will go to a restaurant and order a burger to increase the challenge! Not going to lie, I was nervous about it all day, but I’m so proud that I finished the whole thing. Not going to restrict to compensate, because that achieves nothing. these tahini granola bars SLAPPED

-1 cup puffed brown rice (I just used 1 crumbled tj's brown rice cracker)
-1 cup rolled oats
-1 tbsp chia seeds -1/2 cup sunflower seeds/pumpkin seed mix (any nut would probs taste good) -little bit of cranberries -little cinnamon, salt
mix dry ingredients with wet ingredients which include:
-1 cup of tahini
-lemon juice
-1 cup honey (or any sweetener)
-vanilla 
freeze for 2 hours, and drizzle with chocolate and !!!!! ur done

“Healthier” BLT + Potato Salad 😍

Today was filled with tons of local-based foods. Noah & I hit up the farmers market, then went to Madison Sourdough for brunch. Need I first say that Madison Sourdough ( @madisonsourdough ) is INCREDIBLE. Y’all must go!! We ended up buying a loaf of the seed & grain bread, which is what we used for the BLTs. Some of our farmers market finds were: (all organic) blueberries, romaine, tomatoes, vegan scones, broccoli, green onion, cucumbers,& tri-colored potatoes.

morning snack #dEats: pink lady apple 🍎, grapes 🍇, and @rxbar honey cinnamon PB (might be my new fave but butter packet)! 💭: I’ve made so much progress@this week challenging nuts. I love nuts and nut butters, and they are honestly so beneficial in so many ways. The war on fat in foods is so detrimental as it caused me to miss out on so many delicious foods for so long. created this bowl for a late lunch with all the goods!! got my veggies, protein and healthy fats and it all tastes amazing!! 🥗also such a great refreshing meal for a hot and humid day like today!! ☀️I was really wanting to go for a run this morning but it was just too warm so I opted for a bike ride instead and even then I was so hot and sweaty when I came back! make sure to stay safe in the heat and drink loads of h2o!! 💦 .

Yay for the weekend!!! Post workout brunchies before work!! Got in a good morning gym sesh with mom and left feeling great! Continuing trying weight lifting and I am happy with the results, while also working on rebuilding up my stamina.

Some sweetness for your Saturday 😋 these FROZEN CHOCO PB COOKIE BALLS will not disappoint 🤤 cool, chunky, chocolatey bites of heaven perfect for this hot hot HOT 😅 weather!

I have been loving all things “no bake” lately because they’re so quick, easy & don’t involve the oven 🥵 These cookies can be flattened to a traditional shape or rolled into lil balls like I did here 😍💕 I will leave the recipe for you lovelies down below!

#dEATS —-> Recipe:
1/2 cup plant milk
4 tbsp cacao powder
4 tbsp coconut sugar
1/2 cup chunky peanut butter
2 cups old fashioned oats
4 tsp coconut oil
Directions:
1. In a small pan add the plant milk, cacao powder & coconut sugar & bring to a light boil.
2. Remove from heat & add in the peanut butter until it’s melted.
3. Add in the oats and coconut oil & mix until well combined.
4. Using a spoon, scoop spoonfuls of mixture onto a baking sheet lined with parchment paper & mold into desired shape.
5. Place into freezer for 30 minutes until set. Enjoy! *should be stored in fridge or freezer

I usually don’t do much on the weekends, but today was one of those where I have the opportunity to do all the fun things. So while I’ll be exhausted by the end of it, I’m excited  to have met up with some friends from UF last night for dinner and to be going out on the lake today. I even stopped at Whole Foods to pick up some snacks for the trip today 🙊 Have a great weekend everyone✨

last night my guy was craving something chocolatety 🍫, but also something that wouldn’t make him feel weighed down for our run this morning. so i thought this healthy edible BROWNIE BATTER would be perfect! 😇

LEMME tell ya, he had a happy tummy after eating this! 🙋🏼‍♂️ you can eat this as a dip w fruit, pretzels or graham crackers. OR straight up w a spoon 🥄 (my guy added a drizzle of honey & did just this!) i personally am not a huge CHOCOLATE fan— but this was (not gonna lie) pretty tasty 😋 w some crunchy apple 🍎 slices! SUPER easy to make && tastes even bettah chilled for awhile! 👌🏽

* 1/2 cup protein powder (i used chocolate vegan @shakeology)
* 1/2 cup coconut flour
* 1 tbs coconut sugar * 2 tbs cocoa powder

* 1 tbs pure maple syrup * almond milk * dairy free chocolate chips

- mix & mash together the first ✋🏽 ingredients in a some what large bowl.
- in a microwave safe bowl melt the nut butter & maple syrup. then add that to the other mixture. - while mixing add in enough almond milk to reach desired consistency. if you like it #thicc add less! - store in the fridge for a few hours then add chocolate chips to the top & DIG IN!! 🤩

@haneytravels & i have LOVED our time in greece. our favorite thing to do was getting lots in between the little streets, & obviously stopping for a glass of vino at the family owned restaurants with the tables that filled them. for us, eating is such a huge part of travelling!! ✈️ 🌎 🥘 ⁣

for our last dinner we went to a restaurant known for its seafood. Kâstella is located in Heraklion, the largest city & port on Crete. enjoy their freshly caught seafood while overlooking the ocean 🌊 we had the BEST mussels either of us had ever had. if you’re going to heraklion, you HAVE to check this place out!!!❣️ ⁣

After a busy week, I always have a hard time getting comfortable with allowing myself to relax over the weekend. This summer, I’m so exhausted that I really don’t have a choice but to let myself have some space to be a vegetable and watch Netflix for hours. It’s my version of cheap and low key self care and it’s what make me, personally, happy. Yeah, it may not be the best, but it’s what works for me. 
Meals all week have been at the office, like this glory I tried. I’ve enjoyed getting to try a variety of different places for free (lol) because I’ve been working so much.

Loaded paleo strawberry + almond butter pancakes 🍓🍯 #dEATS:
I mixed one egg, 2 tablespoons of coconut flour, 1/2 cup almond milk, and cinnamon together. Then I heated up a teaspoon of ghee on a pan over medium heat, and poured the egg/flour mix into the pan and cooked for 3 minutes on each side. Once the pancake was done, I put almond butter, strawberries, and honey on top (take out the honey to make this Whole30). So easy and tasty😋 I’m definitely going to make this in the future with different toppings and fruits 🥝🍒🍑🍍🍌

There are very few problems that can’t be solved with a good bowl of mac n cheese (that’s my motto anyways) 🤣 I compiled a few recipes for vegan mac together and created this, which may be my best combo yet. As you can tell, I didn’t end up making tacos last night for #tacotuesday but I’m down to make #macandcheesewednesday a thing 🙊 Have a great Wednesday ✨

#dEATs: @eatbanza elbow chickpea pasta with broccolini and cashew “cheese” sauce. To make the sauce, combine:
1/2 cup chopped white onion
1/2 cup cashews 
1/2 cup - 3/4 cup cashew milk (less milk = thicker sauce)
1/4 cup nutritional yeast
1 tbsp olive oil
1 tbsp garlic powder
2 tbsp apple cider vinegar
2 tbsp @seedtosprout vegan parm (optional but super tasty)
in a blender until well blended. Combine with cooked pasta and enjoy✨
