The crunch from butter lettuce, jicama, and cashews are really addicting😉. Hope you like these and see the substitute for stir fry sauce below. .
Recipe
Ingredients:
~ 1/2 block of firm tofu, drained and cubed
~ 3/4 cup chopped jicama
~ 1/2 cup toasted cashew
~ 1/2 cup mixed vegetables (peas, carrots, roasted corn)
~ 1/4 cup chopped low moisture content mushrooms (king oyster, baby bella)
~ sesame oil
~ hoisin sauce for serving
~ butter lettuce (used @eatpetesgreens ☺️)
~ sesame seeds
🍃
Sauce: Whisk together 2 tablespoons of water/veggie stock, 2 tablespoons soy sauce, 2 teaspoons organic sugar, 1 teaspoon sesame oil, 1 teaspoon rice vinegar, 1/2 teaspoons of each - minced ginger and garlic, 1/4 teaspoon white pepper (OR 2tablespoons @leekumkeeusa
stir fry sauce + 1tablespoon soybsauce)
🍃
In a heated pan with 3 teaspoon oil, pan fry tofu until golden brown, add mushrooms, mixed vegetables, jicama, and sauce, coat well. Season with salt if needed. Turn off heat and stir in cashew. Serve with butter lettuce, sesame seeds, and a little hoisin sauce."

Veggies in ma bellah!

We adore a chilli ramen but it’s usually packed with noodles and, to be honest, I’ve usually had it with chicken 🐓

Not any more!! Courgetti with mushrooms, asparagus, beansprouts and spinach, in a veggie broth with chilli and lime 🌶 OH HELLYES! Even the carnivorous husband enjoyed it

I realised last week that Timed Nutrition wasn’t my friend (a breakthrough I’d had before but helpfully forgotten) so I’m embracing my simple macros and combining it with the principles of mind mindful eating programme; veggies most, water first and plate it principles... and this ticks all the boxes!! ✅

Next time, I’d add edamame beans but we’d just run out and I don’t have any tofu on hand #pisspoorplanning 🤦🏻‍♀️ And yes, my husband is clearly as crazy as me 🤪

I used mix greens (Arugula, Lettuce, Sprouts ), cucumber, cherry tomatoes Lemon juice, paprika, salt and pepper. I grilled the eggplant with some Coconut oil and some spices garlic powder, ginger powder, paprika and some rosemary. On top i add some homemade hummus 🍀😋

I wanna be real here.... I’m still a binge eater even after losing all this weight and since being heavier 9 yrs ago!!!! I was supposed to start over today after a weekend of relaxing, eating wise and at 4:00pm I caved and got tator tots, apple juice and cookies!!!!! It’s the hardest part for me... my diet everyday Is a struggle but I refuse to ever go back to that old depressing angrier version of me ever again!

We all fall down but we get just back up and keep fighting 💪🏼👊🏼

Eliminating and learning triggers can be so hard and frustrating. Five bites can lead to days of agony and regret. .

I have always loved bread. You give this girl a warm french baguette, cheese, and some grapes and I was a happy girl. I have needed something to satisfy that. I FINALLY found something. This was my first go at it. I will make them thinner in the future, but here is my little snack for today!

My bang bang tofu is perfect for your #meatlessmonday meal! 
I made my bang bang tofu but instead of baking it I tried air frying it! It cut the time down by more than half and it was super crispy. I don’t utilize my air fryer enough. Using the air fryer it took less than 10 minutes. Saves so much time!!!
Served with rice, edamame, avocado and spinach. I love this combination!

Breakfast Quesadilla 🔥 These are such a good go to if you’re tired of your normal eggs and avocado 🥑 routine 😎 Crispy @sietefoods tortillas with scrambled eggs, bacon, and mushrooms 👌🏻 Gotta have the dipping sauces on the side 😉 If it doesn’t have dipping sides, I’m not interested 😜 Jk, I’ll never turn down one of these but the dipping sauces definitely elevate it 💯 I love making these sweet too with banana 🍌 and Pb 😌 Can’t go wrong!! •	1 hot house English cucumber seeded and sliced into 1/4-inch slices.
•	2 avocados peeled, pitted and sliced into 1/2-inch chunks.
•	8-10 Campari or cocktail size tomatoes halved and then quartered.
•	1/4 Maui onion thinly sliced.
•	1 jalapeno sliced.
•	1 cup fresh cilantro leaves.
•	2 tablespoons canola oil.
•	Juice of 2 limes about 1/4 cup.
•	1/4 teaspoon chile powder.
•	Generous pinch of sugar.
•	Kosher salt and freshly ground black pepper.

INSTRUCTIONS:
1.	In a large bowl, add the cucumber, avocados, tomatoes, onion, jalapeño and cilantro leaves.

▫️1/2 small ripe banana 🍌
▫️1/2 ripe pear 🍐
▫️1 cup of almond milk
▫️1/4 tsp cinnamon
▫️1 pinch of himalayan salt

Soak oats in milk 20 min. Add mashed banana, pear, cinnamon and salt. Mix. Bring to boil. Cook for 2-3 minutes. Mix the mixture time to time.
Serve with your fav fruit
