Can there ever be enough banana bread recipes? Well, I’m fully living according to the motto “The more the better” in this case. I love trying new versions again and again & it’s the perfect way to rescue my overripe bananas from ending up in the trash.🍌However, I have to admit that I’m struggling sometimes because I don’t know which one I would like to bake. Life’s tough…😄
This time I wanted to do a banana bread which is high in protein but without protein powder. 💪🏻And for all of you, who are doubting about their baking skills: Don’t worry, this banana bread is a guaranteed success & you are not able to mess it up! A rogue one, this. I had a go at Bertinet’s orange and mint loaf, from Dough. Came out a little denser than I was expecting. Maybe the Cointreau retarded the yeast more than expected (?), or maybe it was too cold (?). I have not had that much success with Bertinet’s sweet dough, with the notable exception of his beauuutiful doughnuts recipe 💖 Anyway, the loaf tasted delicious toasted with marmalade and/or mint butter. Bir İtalyan ekmeği olan FOCCACİA EKMEĞİ çok lezzetli ve hafif olur, ekmekten öte poğaça tarzındadır. Aslında İtalyanlar da Yunanlılardan öğrenmiştir, içindeki bolca zeytinyağından da anlaşılacağı üzere kısacası bir Ege ekmeğidir diyebiliriz. Bu yüzden bu ekmeği yapmak için öncelikle çok iyi bir zeytinyağı edinin ki çok lezzetli olsun ve mis gibi koksun. 🍞❤️🍞❤️🍞
Malzemesi: 3,5 su bardağı un, 1 çay kaşığı tuz, 1 küçük yaş maya, 1,5 su bardağı su, 1,5 yemek kaşığı zeytinyağı içine, 1/2 çay bardağı kadar üzerine sürmek için, 1 yemek kaşığı bal, 2 dal taze kekik (bulamazsanız 1 çay kaşığı kuru kekik), 2 dal taze biberiye (bulamazsanız 1 çay kaşığı kuru biberiye) yarım su bardağı çekirdekleri çıkmış siyah zeytin. Sesame sourdough fresh out of the oven this morning 😋 Made with 10% or 30 g spelt flour, 10% or 30 g whole wheat flour, 80% or 240 g strong white flour, 85% or 255 g hydration, 20% or 60 g levain, 4% or 12 g toasted and soaked sesame seeds and 2% or 6 g salt. 2 hours autolyse (flour and water). Mixed in levain, salt and seeds by hand. 5 hours bulk fermentation (at 22°C), including 4 coil folds. Cold proofed in the fridge for 12 hours. Baked as usual; in a preheated cast iron combo cooker at 250°C for 25 minutes with the lid and 10 minutes without the lid. Enjoyed with salted butter and Norwegian ”brunost” 🥰

If you still have leftover mashed potatoes (or you’re like me and make a huge vat on purpose for multiple meals) then here’s an idea for you. MASHED POTATOES ON TOAST. Your eyes are not deceiving you. Sourdough toasts topped with extra-garlicky mashed potatoes, purple shiso furikake, togarashi, half-boiled eggs, a medley of homegrown greens I foraged for in the rain (chives, pea shoots, etc.), and pomegranate seeds. I wish I could take credit for this genius idea but even I would never be so brazen as to put mashed potatoes and toast (the two best food groups of all time) together on my own. No—this is my copycat version of the Mash Up at @sprocoffeelab. So if you’re in the SF area and you’ve made the mistake of eating all your Thanksgiving mashed potatoes already, hit them up; their version is even better than mine because their mashed potatoes have truffle. And the folks who run the little stand are super nice. (Not sponsored; I just really like them.)⁣

Random side note: I have been making my mashed potatoes with a hand mixer for the last 15 years, and this year I finally treated myself to one of those fancy Kitchenaid stand mixers (in Buttercup, in case you were wondering which color I got). I’m not even sure where I got the idea to mash my potatoes with a hand mixer in the first place but I guess I’ll be trying my stand mixer instead the next time I make them. Rofco steaming - a tricky business!
The Rofco ovens (mine is a B40) are finicky little beasts that need a lot of taming, and the issue of how to generate enough steam in the early stages of the bake is a real challenge. 🤔
The steam pods they sell are expensive and take up a large amount of space in the oven so I, like most people, I think, opt for alternative methods.
Steam is super important in the early stages of the bake as it forms a thin layer of moisture on the dough that keeps the outer skin supple enough to prevent a hard crust forming, and therefore allows the loaf to keep expanding and rising as the oven spring kicks in (provided the dough has also been scored properly). It also dissolves some of the starch in the outer skin of the dough, which can then gelatinise later in the bake, resulting in a nice glossy crust. ✨
After trying various different techniques, I now use everything at my disposal to help generate as much steam as possible!
- I spray a lot of water onto the baking sheets before loading the dough onto them
- I then mist the actual dough with water again after I’ve scored them - this means they already have that desired thin layer of moisture on the skin before they even hit the steam in the oven
- I place a small pudding tin of boiling water on each shelf of the oven to ensure there is some steam generation throughout the full duration of the first 20mins of the bake
- I then spray a load of water onto the walls of the bottom two shelves (not the top one as the glass bulb cover is liable to crack if it gets hit with cold water whilst hot). Keep the door closed as much as possible for this bit to try and contain as much of the ensuing steam in the oven as possible

After all this faffing around (!) I drop the oven temp down to 200C (from 270C preheat) and bake for 20mins with steam, 20mins with the vents open, turning the oven back up to 270C for the last 5mins to help colour the loaves up and also help the oven to preheat for the next batch.
