that fall off the bone good good ::: whole chicken in the instant pot is a huge time saver when meal prepping and it’s legit one of my favorite things to make! bonus: using the bones to make literally the best chicken stock to freeze for soups or anything else you may need! (insert the wild rice chicken and kale soup I made last night)
my go-to instant pot whole chicken recipe:
2 tsp garlic powder (try penzeys roasted garlic - game changer)
1 tsp onion powder
2 tsp kosher salt
1 tsp fresh ground pepper
1 tsp dried oregano
1 tsp dried thyme
1 fresh garlic clove, minced
optional: 1/2 tsp smoked paprika
4-6 tablespoons of butter
1-2 lemons, halfed
1 cup water
add cup of water to instant pot. add halfed lemons and place whole chicken on trivet, separate skin from meat a bit and use half seasoning underneath skin with butter. use remaining seasoning on top of skin! cook time will vary based on weight of chicken and whether it’s frozen or not (I usually google this!) i.e. cooked this 4.5 lb thawed bird for 28 min high pressure with 15 min natural release
stay tuned for follow up post about how to turn this into chicken stock — you won’t be disappointed!

I’m not a soup person. I constantly say that. Yet, lately I’ve been finding myself loving soups more and more. This one specifically I’m super into because it’s pretty much just a ton of veggies. It’s amazing with cheese crackers and is the perfect light yet hearty dinner!

Maybe you’re thinking something different for thanksgiving next week or you want a new way to prepare your chicken...either way, you’re going to love this recipe!

Ingredients
One 4-pound chicken
5 whole heads of garlic
1 tbsp ground thyme
1 tsp ground rosemary
1 tsp ground oregano
⅓ cup extra virgin olive oil
6-7 baby potatoes
1 onion

Instructions
Place the chicken on a work surface, breast side down
Use a pair of kitchen shears to cut along the right side of the backbone. From tail to neck
Cut the same way along the left side and remove the backbone
Turn the chicken breast side up
Press firmly downwards until chicken is flat and you hear it crack
Cut off the wing tips of the chicken
Preheat oven at 240C/450F
Line a sheet pan with baking paper and place chicken in the middle
Use a sharp knife to thinly slice the baby potatoes halfway through. The potato should have slits but the bottom part should be intact. Add the potatoes on the pan
Chop off the top ½ inch of the garlic heads. Add them on the pan
Peel onion then cut in quarters. Add it on the pan
Drizzle olive oil and sprinkle ground oregano, thyme and rosemary
Reduce oven temperature to 200C/400Roast for 45 minutes or until golden brown
Carefully remove tray from the oven. Cover chicken, veggies and potatoes with foil.
Roast for another 30 minutes
Let the chicken rest for 10-15 minutes before carving.

Tonight I made garlic shrimp with smoked paprika, lemon, cilantro and white wine with a tiny side of sautéed spinach. Super tasty and takes about five minutes to prepare. I could have eaten an entire baguette dipping into the sauce, but I controlled myself.... kinda.

Ginger-garlic bok choy with soy sauce. Recipe in caption.

Oyster sauce would be more traditional to use, but I ran out of oyster sauce one day and discovered that I really like it this way with the soy sauce.

1 dozen baby bok choy
3 or more tablespoons of vegetable oil
3 tablespoons of ginger
2 tablespoons of garlic
2-3 tablespoons of soy sauce
A pinch of salt

Wash and trim the stem of each bok choy, cutting in half lengthwise.

Using a large wok or frying pan, heat oil on medium, once hot, toss in ginger and let cook until fragrant a a little crisp. Then add garlic and stir quickly, making sure not to let garlic burn.

Pour in your soy sauce and and stir into the ginger and garlic oil. Turn the heat up a bit and toss in the greens into the oil, making sure to toss and coat the bok choy well.

At this point, lower the heat a bit and cover with a lid to allow the moisture of the vegetables to cook itself for about 5 to 10 minutes. If you don’t have a lid, pour in less than a quarter cup of water and continue tossing. Add salt.

Once the greens have wilted and the whites have turned translucent, it should be cooked. Taste one to make sure it’s to your liking. I like mine slightly undercooked because I love the refreshing crunch.

We eat this weekly. Today we served this up with an Asian fusion spaghetti with garlic chicken. It’s one of the few vegetables my husband will eat and I know I won’t find fossils of it in a potted plant or old shoe.

We love pickles ("tsukemono") in Japan--so much so that each type of pickle has its own category based on flavor and pickling method. If you're a fan of sushi or sashimi, then you must have tried the sweet, vinegar pickles known as "Amazuzuke." This method is used to make the spicy, sweet ginger that is used as a palette cleanser when eating sushi; and it's especially great for pickling root vegetables that are available this time of year. Isabelle is 7 weeks old now and I’m slowly adjusting to the reality of trying to bake with three kids around. Bottom line: it’s hard! The other day I think it took me more than an hour, due to various “crises” involving diapers and the like, to actually get a batch of banana bread mixed and into the pan (this should be a 10 minute job, tops). So I’m adjusting expectations and taking some shortcuts, like opting for crumb-topped pies (this cranberry crumble pie recipe is from @sisterpiedetroit) instead of fancy double crusts. Everyone is happy because, honestly, crumble topping is delicious. And I still get to make things, which in the midst of all the busyness, is oddly restorative. .

Fuel your afternoon with this Matcha Falafel Salad 🌿🍅🙌🏻 + an Iced Green Tea Latte 🍃 - SO refreshing and delicious!

To make these matcha falafels. combine 1 tsp of matcha green tea, 1 cup of spinach, 1 can of chickpeas, 1 tsp of minced garlic, 1/2 tsp of cumin, 1/2 squeezed lemon, and sea salt and pepper in a food processor. Pulse until the mixture is crumbly. Form into small patties and cook on a pan with a couple of tbsps of oil for about 10 minutes. Add to a bed of fresh greens + cherry tomatoes + avocado + cucumber + toasted pine nuts + tahini dressing.
