Sesame Garlic Noodles😋🧡

Recipe:
1 packet noodles
1/2 cup choy som, roughly chopped (steamed)
1/4 cup shredded purple cabbages (optional)
2 tbsp soy sauce or tamari
2 tbsp tahini
2 tsp garlic chilli oil or sriracha
2 tsp garlic flakes
1 tbsp rice wine vinegar
1 tbsp sesame oil
1/2 tsp hoi sin sauce

Bring a pot of water to boil, follow by adding the noodles and cook according to the package directions.
Mix together the soy sauce, tahini, garlic chilli oil, rice wine vinegar, sesame oil and hoi sin sauce in a bowl and set aside.
Place the cooked noodles in a bowl and pour in the sauce mixture and toss well combine.
Lastly add in the steamed choy som and purple cabbages. Finally sprinkle with toasted sesame seeds and garlic flakes and serve immediately.

super simple thrown together lunch 🤩 .

cooked a chopped zucchini over med heat for 5 mins, threw in a couple chopped cherry tomatoes, added in 1 tbsp red curry paste to the pan + mixed w 1 tbsp soymilk to melt, finished by stirring together w chickpeas, adding a splash more soymilk to mix in the curry & seasoning w garlic powder, s+p 🍆👅

I had never tried this combo before and it's pretty amazing 👌🏼 quinoa, chickpeas, texturized soy, curry and ground white pepper 🤤 also had a rice cake with cashew cream cheese and a persimmon.

This blueberry cardamom banana bread is the perfect grab ‘n go breakfast 💙 vegan, gf, and dairy free ✨ this one doesn’t last long in our house!⠀

Ingredients:⠀
2 1/2 cups buckwheat flour⠀
2 tsp baking powder⠀
1 tsp baking soda⠀
5 ripe bananas ⠀
1/2 cup water (plus a little more if dough is too thick)⠀
1 tsp vanilla extract⠀
1/2 tsp cardamom⠀
1/2 tbsp ground cinnamon⠀
1/4 tsp sea salt⠀
3/4 - 1 cup blueberries (fresh or frozen that have been thawed) ⠀
Lightly salted butter, to serve (skip or replace with coconut oil, your favourite vegan spread or nut butter for a vegan option)⠀

1. Preheat the oven to 350⠀
2. Mix the buckwheat flour, baking powder, baking soda, cinnamon, cardamom and sea salt together in a large bowl.⠀
3. Mix the mashed bananas, water and vanilla together, then add to the bowl. ⠀
4. Mix everything well and then fold in the blueberries.⠀
5. Pour the mixture to a loaf tin lined with parchment paper. Bake for 35-40 minutes. Let cool before slicing, then serve with vegan butter (or butter of choice), or coconut oil.⠀

𝑭𝑹𝒀•𝒅𝒂𝒚 𝒎𝒐𝒐𝒅 : Loaded Fries & Good Vibes 👅 Celebrate the weekend with these Cheezy Fries! Here’s the recipe👇🏽

Ingredients:
1 bag @alexiafoods wedge fries
2 cups @daiyafoods cheddar cutting board shreds
1 ½ cup @ripple unsweetened original milk
1 tsp @slapyamama seasoning
¼ cup boiling water
¼ cup @bobsredmill TVP
½ @edwardandsons “Not Beef" bouillon cube
1 tsp vegan and gluten free Worcestershire sauce
1 tsp Tamari
3 tbs vegetable oil, for pan frying
@followyourheart chipotle vegenaise
Roasted jalapeño
Diced red & green onion

Directions:
Cook fries according to package directions. While fries are cooking, add cheese, milk, & Slap Ya Mama seasoning to blender and blend until smooth. Transfer to a sauce pan on med. low heat and cook until warm and melty, stirring constantly. While cheese is warming, mix bouillon with boiling water and stir to combine, add boiling water to a bowl with TVP & let rehydrate about 10 minutes. Once rehydrated, add Worcestershire sauce and Tamari, stir to combine. In a small nonstick pan on medium high heat, add oil and TVP bits. Pan fry until the bits turn dark and crispy, stirring often to ensure they don’t burn, about 15 minutes. Transfer TVP bacon bits to a paper towel lined plate. To assemble loaded fries, place fries on a large plate, top with melted cheesy sauce, Chipotle vegenaise (I watered mine down with some nondairy milk) TVP bacon bit, jalapeños, red & green onion. Enjoy!!!

Happy St. Nicholas Day & Happy Friday 🎅🏻
Have you placed you boot in front of the door last night?
I didn’t, but as every year I found a nice little gift on my desk at the office this morning ❤️ This year it is a cotton bag for fresh food and although I have several nets for fresh veggies and fruits, this bag is super nice to store fresh bread 🍞
This week was the first quite week for like 4-5 months and so I used my newly won free time to try a new recipe for banana bread 🍌 And it turned out so soft and fluffy, so I’ll prepare the recipe for you and will share it soon 🤗

Einen fröhlichen Nikolaus Tag ihr Lieben 🎅🏻 Na habt ihr heute Nacht eure Stiefel rausgestellt ?
Ich zwar nicht, aber wie jedes Jahr konnte ich mich trotzdem über ein tolles Geschenk auf meinem Schreibtisch im Büro freuen 🤗 Diese Jahr gab es neben einem fair Trade Nikolaus einen Baumwollbeutel für die Einkäufe 🎁 da ich bisher nur Nutze für meine Obst und Gemüse Einkäufe besitze ist der Beutel perfekt für Backwaren 🍞
Eine Kleinigkeit aber ich freue mich trotzdem unglaublich über solche Aufmerksamkeiten!!
Meine Woche war die erste recht ruhige seit Monaten und so habe ich meine neu gewonnene Freizeit dafür genutzt meiner Sportroutine nachzugehen und auch ein neues Bananenbrot Rezept zu testen 🍌 Das Ergebnis seht ihr oben und ganz bald auf auf meinem Blog für euch vorbereitet 🤗

Had a run in with memories stirring up again. Funny isn't it - you can bury them really deep but if you don't make peace with them they'll pop up and say hi when you least suspect them to! Releasing and expunging (I like that word) expectations and hopes of what people should and could be is freeing. No one will be that person you want them to be and nor can they live up to your expectations. All we can do is liberate those feelings and work on being the most amazing version of you. Happy Friday!

Just look at all those colors wow. I think I’ve been to almost every Ethiopian spot in the Bay Area. I’ve recently been going to one in Oakland called Enssaro. It’s soooo yummy! They have a vegan combo option as well as delicious vegan appetizers. It’s sooo flavorful mmmm, I’m craving it just thinking about it. It’s definitely has that dinner date ambiance. 👋🏼 A FEW FACTS ABOUT ME 👋🏼 ⁣

As I’ve been lucky enough to have gained a few more of you following me in the last month I thought I would reintroduce myself for you!⁣

👉🏼 This pic is from the PR event I went to last week at @honesthurgers *gifted. ⁣

A few facts about me: ⁣

👗 I work in a clothes store (the top I’m wearing in this pic☝🏼 is part of my uniform from @oasisfashion 👑) and dog walk part time, as well as running this blog (you wouldn’t believe how time consuming it can get but I LOVE it). ⁣

👩🏻‍🏫 I’m studying at college (well I’m on a break till January when my course starts again) doing my Level 2 in Counselling studies. I did my level 1 last year and learnt so much. Mentally it is a very draining course, but I do think it’s taught me so much already!⁣

🐶 I am a crazy dog mum and I’m literally obsessed with my doggos Max and Erin. Who are both German shepherd crosses 😍 ⁣

⚠️ I have a small fear of the colour yellow. Genuinely... seeing too much bright yellow in one space gives me anxiety. I don’t know why it started but my mum seems to think I’ve always had an aversion to yellow! Strange eh..⁣

✈️ I love travelling (lol I swear everyone says this?). My favs places that I’ve been to are Japan and Guatemala. ⁣

🔬 I did Biology at Bristol Uni.. but I didn’t like it and wanted to drop out a lot ✌🏼 It just wasn’t the right place for me and the course didn’t have as much choice as I had anticipated. I still loved the uni experience and I do think my degree taught me a lot regardless 👩🏻‍🎓⁣

🥔 I love potatoes. ⁣

☕️ I love making coffee and really miss doing the latte art that I used to do when I worked in a café for a couple of years 😭 My favs were making latte bunny’s at Easter! I also have a coffee machine on my xmas list so fingers crossed Santa thinks I’ve been nice this year 🤞🏼⁣

🚑 I’ve been on crutches 6 times in my life 😭⁣

👯‍♀️ My lil sis and I share the same b’day even though we aren’t the same age 😱 - this is always my fav fact 😂⁣

Vegan “Honey” Mustard Tofu Tenders: Don’t you love that the more you do something the better it gets. I think that applies to lots of things including preparing TOFU! In this recipe I toasted my panko prior to baking. You are going to love this tofu recipe cause it has lots of CRUNCH on the outside with a tender yummy interior layered with a vegan honey mustard sauce. Happy Thursday foodie friends 🙃💕
What you need: 15 oz block of pressed tofu, 1/2 cup Dijon mustard, 1/2 cup agave, 1/4 cup yellow mustard, 1/4 cup vegan mayo, 1 1/2 tsp salt, 2 cups panko, 2 tbl neutral oil, 1/3 cup cornstarch What you do:
1️⃣ Cut pressed tofu into 3 slabs through its depth, then cut each slab into 3 equal size tenders, lightly score slices with a knife on both sides,sprinkle with salt. Set Aside
2️⃣In a bowl mix mustard, agave, mayo, & salt/pepper
3️⃣Use 1/2 of mustard sauce to marinate tofu slices. I used a brush to make sure all edges and sides were covered. Marinate for at least 30 min.Place in fridge
4️⃣ In saute pan, over medium heat, heat oil till warmed ( toss panko crumb in to see if it sizzles) add panko. Stir continuously for 5 min till panko changes to a golden brown color. Turn off heat, leave in pan, let cool
5️⃣ Set up 4 stations to bread tenders: 1 plate with corn starch, a bowl with remaining mustard sauce, panko in pan, and lastly a rimmed baking sheet lined with parchment paper with a wire rack on top (optional but recommended)
6️⃣ Take one tofu tender, dredge in corn starch (shake off excess) dip into mustard sauce, then press tender into panko crumbs covering all edges, place on rack/parchment paper. Repeat
7️⃣ Bake 400 F for 30-35 min flipping half way through cook time. Enjoy!! I served mine with the remaining mustard sauce for dipping & added some cayenne pepper for some heat and chopped green onion to give a pretty color pop 💚

Super Green Protein Smoothie (full recipe below) 💚 We teamed up with @Yummly & @KitchenAidUSA for this recipe and blended the smoothie in the amazing new KitchenAid #k400blender #ad. It’s the perfect go-to appliance for all your vegan shakes, smoothies, soups, dressings and more!
Recipe makes 2 large or 4 small servings:
Ingredients:
4 cups frozen mango chunks
2 green apples, seeds removed
3 cups spinach
1 cup chopped kale
3-4 cups unsweetened plant milk or water (depending on your desired consistency)
2 tsp maca powder
1 tbsp chia or hemp seeds
2 scoops unsweetened plain vegan protein powder
Directions:
Blend all ingredients in your KitcheAid K400 Blender until smooth and enjoy!
Notes:
Instead of frozen mango, you can also use frozen bananas. If you don’t have frozen fruit, be sure to add some ice cubes to the mix.
For a fruit free version, simply add a little peanut or cashew butter, use more chia seeds and/or add avocado and use frozen greens or ice cubes for a similar consistency. #BestOfVegan

𝘍𝘪𝘭𝘭𝘪𝘯𝘨⁣
- 6 medium-large potatoes⁣
- 1 medium sized onion, 𝘥𝘪𝘤𝘦𝘥⁣
- 4 cups shiitake mushrooms, 𝘴𝘭𝘪𝘤𝘦𝘥⁣
- 3 tbs olive oil⁣
- 1 tbs dried oregano⁣
- 1 tsp garlic powder⁣
- 1 tsp turmeric⁣
- 1 tbs white vinegar⁣
- 1/4 cup nutritional yeast⁣

𝘚𝘢𝘶𝘤𝘦⁣
- 1 tsp dried oregano⁣
- 1 tsp garlic powder⁣
- 3 tbs tomato paste⁣
- 3 1/2 cups crushed tomatoes – save 1 cup to pour in for texture⁣
- 3 tbs olive oil⁣
- Juice of 1 lemon⁣
- 1 tsp red pepper flakes⁣
- 1 cup water⁣
- 1 1/2 tbs brown sugar⁣
- Salt to taste⁣

𝐈𝐧𝐬𝐭𝐫𝐮𝐜𝐭𝐢𝐨𝐧𝐬⁣

𝘍𝘪𝘭𝘭𝘪𝘯𝘨⁣
1. Boil your potatoes until fully cooked. Mash when cooked/ready and set aside.⁣
2. Using a knife, removed the core on the bottom of the cabbage by making a cone-like incision. Toss the core when it is removed.⁣
3. Boil the cabbage for about 10 minutes. Make sure you do not over cook the cabbage.⁣
4. In a medium-sized pan, fry the onions with olive oil.⁣
5. Add dried oregano, garlic powder, turmeric, white vinegar, nutritional yeast and shiitake mushroom.⁣
6. Cook for about 5-8 minutes.⁣
7. Add the spiced onions and mushrooms to the mashed potatoes. Mix until well combined.⁣
8. Peel your cabbage and set leaves aside.⁣
9. Place some of your filling in each cabbage leaf. Fold and roll neatly – place in an oven safe baking dish.⁣
10. Sauce time!⁣

𝘚𝘢𝘶𝘤𝘦⁣
1. Pre-heat the oven to 330 F.⁣
2. In a blender, add all sauce ingredients except the 1 cup of crushed tomatoes.⁣
3. Once blended, add your 1 cup of crushed tomatoes.⁣
4. Pour your tomato sauce over your stuffed rolled cabbage.⁣
5. Bake in the over for 30-35 mins.⁣

Makes (16 cookies)
1 tbsp ground flax seed
2 tbsp (30 ml) water
1/2 cup (115 g) vegan butter
3/4 cup (150 g) demerara sugar, or raw cane sugar + 2 tbsp more for rolling
1/4 cup (65 g) almond butter
1/4 cup (60 ml) molasses
2 tbsp almond milk
2 cup (245 g) all purpose gluten-free flour blend
2 tsp ground ginger
1 tsp cinnamon
1/2 tsp cloves
1/4 tsp sea salt
1 tsp baking powder

1. Make flax egg by combining ground flax and water. Whisk together and let sit for at least 5 minutes.
2. Preheat oven to 350F/175C. In a large bowl, cream together the vegan butter and demerara sugar until light and fluffy. Add flax egg, almond butter, molasses and almond milk. Beat to combine.
3. In a separate bowl sift gluten-free flour blend, ginger, cinnamon, cloves, sea salt and baking powder. Add dry ingredients to wet in batches and knead dough with a wooden spoon, or your hands.
4. Line two baking trays with parchment paper. Roll dough into balls the size of a ping-pong, and gently press down to form a round disc shape. Pour 2 tbsp demerara sugar into a shallow bowl and dip the cookies top-side-up in sugar. Place on baking tray with dipped side facing up. Continue until all cookies are coated in sugar.
5. Bake cookies in oven for 10 minutes, or until lightly browned and slightly cracking at the ends.
