No bake protein bites with freeze dried strawberries (V, DF) 🍓🥜

INGREDIENTS
~ 125g rolled oats milled to flour
~ 65g almond meal or almond flour
~ 35g @tonysfeirsdesignerphysique vanilla rice protein powder
~ 20g @macr0mike orginal Peanut Butter powder
~ 50g macadamia butter or other runny nut butter
~ 55ml unsweetened almond milk or milk of choice
~ 1 teaspoon pure vanilla extract
~ 50ml sugar free maple syrup or other liquid sweetener of choice
~ 20g freeze dried strawberries

METHOD
1. Line a small baking dish with eco friendly baking paper
2. Process the rolled oats in a mixer or food processor to make oat flour
3. Combine all of the ingredients in a large bowl (except last ingredient), mix well to create a dough. If too runny, add more PB2/protein powder. If too dry, add more milk one teaspoon at a time.
4. Place dough into pan and push down with hands until even
5. Sprinkle with freeze dried strawberries
6. Cover and refridgerate overnight before slicing into small bite sized pieces >> Makes 16 bite sized pieces
>> Macros per piece: 97 calories / C6 P4.1 F5.5

Yesterday, I ate kelp straight out of the Pacific Ocean! 🌿😜 Dont worry I was told by an OB local that it was safe, tasty, annnnnnnnd just so happens to be one of the most micronutrient dense plants on Earth!! No questions asked, I was the first to volunteer 🤗. Kelp is packed with vitamin K, iron, folate (a B vitamin essential for cell division) AND SO MUCH MORE! But the money maker micronutrient, iodine, is kelp's best selling point. Iodine is crucial for the production of thyroid hormones which are critical for the proper function of SO MANY human processes (metabolism, growth development!) oh hey look another bowl of food 😜 sesame cauliflower, spicy chili ramen, edamame, kale and cucumber.

I had leftover crispy cauliflower from making my buffalo cauliflower wings. So I tossed the cauliflower in my sesame tofu sauce RECIPE IN THE NEW DETOX BOOK minus carbs ✨

Got some ramen and added a dot of sesame oil and chili flakes. Plus all my greens and veggies soooo delicious. How is your day going? Sending my love ❤️

Seit knapp zwei Jahren lebe ich (fast) vegan. In meinem gesamten Leben ging es mir physisch, psychisch und mental nie besser als jetzt. Ich habe das Gefühl, mein Körper kann nun zeigen, was er kann, da er optimal mit Nährstoffen versorgt ist. Leistungsfähigkeit, Konzentration, Kreativität und Fitness haben deutlich zugenommen. .
Klar werden jetzt wieder die Stimmen laut: "Das ist doch nur ein Trend!" "Die Tiere dürfen nur leben, weil wir sie dann essen!"
.
Ich sage: "Jeder kann doch essen und leben wie er selbst will." So wie ich andere Lebensstile akzeptiere und respektiere, möchte ich, dass meine Entscheidung ebenfalls respektiert und akzeptiert wird.
.
In den nächsten Posts werde ich euch Näheres zu den Beweggründen erzählen und was "vegan leben" eigentlich heißt.

Quick story time: I went out to eat yesterday. I had a biggggg lunch & even ordered a side of extra tempeh, because I was feeling it. Then, right after stating how satisfied & full I was, Thomas & I decided to go get ourselves our favorite treat. It’s a raw vegan place that serves this cashew coconut pudding with allll the toppings you could imagine (think nut butter, “caramel”, raw brownie/cookie dough chunks). SO GOOD & I can’t pass it up. So I got some; yeah, even though I was stuffed. I ate until I was content, saved the rest for later, & went on with my day.

Guess what happened? I was so satisfied from allowing myself to enjoy what I wanted that I forgot I even had leftovers. It wasn’t running my mind. It wasn’t all I was thinking about. I didn’t feel guilty. And hey, I didn’t gain 5lbs.

With the holidays quickly approaching I think it’s important to talk about restriction. The more you restrict, the more likely you are to not only have food obsessive thoughts, but the more likely you are to binge. So be smart! Listen to your body. Eat what you’d like, just be intuitive with your portions. move on. There’s only a couple times a year we gather with friends & family, so allow your brain the openness to enjoy them rather than what is on the table in front of you. You can’t gain fat overnight. Life is short. Enjoy the holidays.

Spicy miso ramen 🍜🌶

Recipe (yields 2 servings)⁣
Ingredients:⁣
~ 2 servings ramen, cook based on package instructions⁣
~ 3 cups of miso/kombu stock (see ramen's recipe)⁣
~ 1 cup unsweetened plantbased milk (used @oatly )
~ blanched bok choy⁣

🌱Spicy miso paste (blend all ingredients until fine, adapted from @food52 ):⁣
~ 3 tablespoons red miso⁣
~ 3 tablespoons white miso⁣
~ 2 tablespoons toasted sesame oil⁣
~ 1 1/2 tablespoons hot bean paste⁣
~ 1 tablespoon mirin⁣
~ 1 tablespoon ground sesame seeds⁣
~ 1 red jalapeno/red chili⁣
~ 6 cloves garlic⁣
~ 3 scallions (white only, save green part for soup)⁣
✅In a heated non-stick pan with 2 tablespoons oil, cook the blended mixture for 3 minutes, stirring continuously. Let cool completely & save in a jar.⁣

🌱Tofu crumbles:⁣
~ 1 pack 16oz firm tofu, drained & mashed⁣
~ 1 teaspoons of each, minced: garlic, ginger⁣
✅To make tofu crumbles, mash tofu into tiny crumbles in a non-stick pan & cook for 2mins. Add in 2 teaspoons oil, garlic & ginger, cook until all ingredients turn lightly brown & dry.⁣⁣
Season with 2 tablespoons soy sauce, 2 teaspoons maple syrup & 1 teaspoon toasted sesame oil. Adjust taste accordingly.⁣

🌱Togarashi oil:⁣
✅In a microwaveable safe bowl, add in 2 cloves finely minced garlic & enough oil to cover. Microwave for 2 minutes, stirring halfway. Remove & stir in 1 tablespoon Japanese seven spice (Shichimi Togarashi). Set aside until ready to use.⁣

✅To make the soup, place stock & 'milk' in a pot, bring it to simmer. Add 1/4 cup of spicy miso paste into a fine-mesh sieve, then lower the sieve half-way into the simmering soup. Using a spoon, slowly stir paste to dissolve into the soup. Taste test, add more paste if needed.⁣

Serve cooked ramen with soup, top with tofu crumbles, blanched bok choy, drizzle of togarashi oil & chopped scallios - slurp away.⁣

Balsamic Soy Garlic Mushrooms by @veguaryco 💛 Recipe:⠀⠀
Ingredients:⠀⠀
2 pounds mushrooms⠀⠀
1 tablespoon oil⠀⠀
3 tablespoons balsamic vinegar⠀⠀
2 tablespoons soy sauce (or tamari)⠀⠀
3 cloves garlic, chopped⠀⠀
1/2 teaspoon thyme, chopped⠀⠀
salt and pepper to taste⠀⠀
⠀⠀
Directions:⠀⠀
Toss the mushrooms in the oil, balsamic vinegar, soy sauce, garlic, thyme, salt and pepper, arrange in a single layer on a baking pan and roast in a preheated 400F/200C oven until the mushrooms are tender, about 20 minutes, mixing half way through. Enjoy!
