Happy thanksgiving! 🦃 We’re celebrating with easy, tasty and low fodmap turkey meatballs. Served with roasted pumpkin and green salad. Ready in 30 minutes!

Turkey meatballs recipe: 1kg of ground lean turkey meat, 2 tbsp of flaxseed meal, 1 egg, 2 tbsp of Greek lac-free yogurt, chopped peppermint leaves, spices and salt. We used ground cumin, mustard and turmeric. Air-fry the meatballs for 30 minutes at 400 degrees. Turn upside down half way through the cooking time.

Adding our #veggieofthemonth, the sweet potato, to your diet is an easy habit to pick up when you're trying to eat healthy—the vegetable is a total superfood, packed with vitamin C and fiber! The Baked Sweet Potato, when cooked properly, has a soft, sweet, and fluffy interior impossible to resist. Just preheat your oven to 425 degrees, wash and scrub each sweet potato and dry. Transfer to a baking sheet and, using a knife or a fork, stab each sweet potato at least 6-7 times. Transfer potatoes to the oven and bake for approximately 30 minutes. Rotate the pan 180 degrees to ensure even cooking and bake for an additional 15-30 minutes. Lastly, remove from the oven and allow potatoes to rest for 5 minutes before seasoning with salt, pepper, EVOO, or scallion if desired.⁠⠀

Le fameux Tahini !  C’est une crème de sésame, préparation orientale faite à partir de graines de sésame broyées, avec un peu d'eau, jusqu'à obtenir une pâte lisse. Ayant un goût de noisette et c'est un condiment très employé dans la cuisine orientale

Le Tahni est riche en acides gras insaturés : 40% d’acide oléique (mono insaturé), et 40% d’acide linoléique ou oméga 6 (poly insaturé). Les acides gras oméga 6, notamment, jouent un rôle dans l’équilibre du système nerveux et cardiovasculaire, les défenses immunitaires et combattent les réactions allergiques et inflammatoires. Notons qu’il est rare que notre alimentation soit carencée en acides gras oméga 6, qui sont beaucoup plus courants que les oméga 3.

Le Tahini est aussi une excellente source de vitamine B1, qui intervient dans la transmission de l’influx nerveux, la croissance et la production d’énergie à partir des glucides.

Fun fact about me... I love Asian Food but not the MSG it's often seasoned with. So often I will have Asian themed homemade dinners.

This way I can control the ingredients and everybody's happy. I paired these Thai Chili chicken tenders with the Cauliflower Fried Rice.🍲

Just roll seasoned tenders or wings in egg batter then roll in panko crumbs. Place in oven or air fryer(what I use) and toss in sweet chili sauce and then sprinkle cilantro or chives on top for garnish. Super simple and DELICIOUS!

For sauce I use sweet chili sauce, a tablespoon of soy sauce or soy like sauce (I use coconut aminos), 1/2 tsp of ground ginger. .

2 garlic, grated⠀⠀
4 Tbsp. olive oil⠀⠀
2 Tbsp. tamari⠀⠀
2 tsp rosemary, minced⠀⠀

How To Make:⠀⠀
(1)Preheat oven to 200⁰C (390⁰F). Toss mushrooms with other ingredients. Transfer to a baking dish in an even layer. Roast it for about 10 minutes, flip and continue to roast 8-10 more minuets. Salt to taste.⠀⠀

Cashew alfredo sauce (about 1.5 cups)⠀⠀
ingredients for the sauce:⠀⠀
1/2 cup raw cashew, soaked in hot water for 30 minutes and rinsed⠀⠀
1/2 cup minced brown onion⠀⠀
1.5 garlic (1 garlic for sauté, 1/2 for adding at step #2)⠀⠀
1 cup unsweetened plain almond milk⠀⠀
2-3 Tbsp. nutritional yeast⠀⠀
1 Tbsp. arrow root powder or potato starch⠀⠀
1/2-1 tsp maple syrup⠀⠀
olive oil, pink salt, and black pepper .⠀⠀
⠀⠀

200g your choice of pasta⠀⠀
lemon wedges for serving .⠀⠀

You’ll never catch me having food for lunch that takes forevvvver to make. That’s why my freezer is stocked with a bunch of different veggies/turkey burgs. Another time saver would be to prep it all & store it in the fridge so that it’s already cooked & ready for you to eat throughout the week! I did the second one yesterday so lunch took me no time at all to put tg🕺🏼

⏩ roasted garlic chicken sausage @traderjoes (just sautéed in olive oil- they come pre cooked so this would just be to crisp/heat them) + broccoli + quinoa mixed with mozzarella, sautéed spinach, dried basil leaves, & cherry tomatoes (coated in olive oil & garlic powder & roasted at 375 for 50 ish mins)

Recipe:⠀
For the sweet & sour dumpling filling:⠀
Heat 2 tbsp canola oil in a pot over low-medium heat, added 1 small onion (chopped), 3 cloves of garlic (minced), a ca. 2 cm long piece of ginger (minced), 1/2 small cabbage head (finely chopped) and let everything cook for about 3-4 minutes before adding 200g chopped mushromms.⠀

Then, let everything cook for another minute and added 1 tsp salt, 1 1/2 tbsp. flour, 1 tbsp dark soy sauce, 1 tbsp apple cider vinegar and 2 tbsp brown sugar.⠀
Stir everything together and after ca. 5 minutes the filling was read.⠀
This recipe makes enough filling for ca. 26 dumplings.⠀

For the chili broth that goes on top of the steamed dumplings mix together 100ml vegetable broth, 1 tbsp canola oil and 1 tsp chili flakes. Enjoy!

Another weekend of work done ✅ now I can try to enjoy my week if I’m not too busy! Have a lovely start to the week friends! ⁣

For LUNCH I had 2 big baked sweet potatoes, homemade smokey sriracha baked beans, some cucumber & lots of spinach underneath 💚 - and after the photo (swipe 👉🏼) I drizzled with sriracha mayo & sprinkled with a load of nutritional yeast 👌🏼 so satisfying and filling! ⁣


Smokey sriracha baked beans:⁣
• 400g can mixed beans ⁣
• 400g chopped tomatoes⁣
• 1tsp garlic powder ⁣
• 1/2tsp smoked paprika ⁣
• 1tbsp maple syrup (to balance the acidity of the tomatoes)⁣
• 1tbsp sriracha Mayo (I used @sriracha_aus which you can find in most supermarkets) ⁣
• salt & pepper to taste⁣

1. Pour the chopped tomatoes into a small/medium saucepan, then stir in the garlic powder, smoked paprika, maple syrup & sriracha mayo. Heat on a medium heat setting.⁣

2. Drain & rinse the can of mixed beans, then add to the saucepan. Bring to boil, then once it starts to bubble, turn the heat down to low and simmer for about 20 mins until the sauce has reduced. (You can add a little water to loosen it all up a bit) ⁣

3. Season with salt and pepper to taste, serve with your baked potatoes! Enjoy! ☺️⁣

Kicking off this week with an oldie but goodie. These BAKED PUMPKIN OATMEAL CUPS are one of my favorite fall breakfast recipes! 🎃🍫🍁
⠀⠀⠀⠀⠀⠀⠀⠀⠀
They are #glutenfree and #dairyfree, SO easy to make and are perfect for #mealprep. You can make a batch today and have breakfast covered for the rest of the week. They’re delicious on-the-go straight out of the fridge or reheated with a little nut butter drizzled on top! 💯 Added bonus: They freeze really well so you could make a double batch and put half in the freezer for later. I am definitely going to be making a batch (or two) to freeze so I can have them on hand for when baby girl arrives. 💃🏻

The other great thing about these oatmeal cups is that you can customize them and add whatever mix-ins you want. Chocolate chips, walnuts and raisins all pair really nicely with the pumpkin spice flavor, but I also think cranberries, pecans, or coconut flakes would be delicious too. 🙌
