My chicken fried rice saved the day yesterday when I totally forgot to meal prep. What's your favorite fast meal prep?

This weekend was jam packed full of soccer, birthday parties, and city exploring. It was not filled with meal prepping and food shopping was a quick trip for a few basics. Luckily, I always have the ingredients on hand to make my chicken fried rice. I remembered I didn't prep anything late last night, but there was no way I was staying in the kitchen when the season finale of @succession_hbo was on. (Sidenot, the finale was amazing and if you love a good hour long drama that's witty and a real character-focused show about broken, damaged people, check it out immediately ) The recipe is so delicious and filling; it makes 7 1-cup #3sp servings (with that wonderful #wwmath it's #4sp 1.5 cups #5sp for 2 cups)and it is incredibly simple--20 minutes tops. Easy baked spaghetti on this meatless Monday (also know as mom forgets to take stuff out for dinner)! 🍝
1 boxed spaghetti
1 jar pasta sauce
1 cup ricotta
1 1/2 cups shredded mozzarella
Fresh Parmesan
1 tsp garlic powder
1 tsp onion powered
1 tsp dried basil
1 tsp dried oregano
Preheat oven to 375z Cook pasta just short of al dente. Drain pasta. In large bowl add all ingredients to pasta less 1 cup mozzarella and fresh Parmesan. Stir together. Pour into greased 9x13 pan. Top with mozzarella and Parmesan. Bake for 25-30 mins until golden and bubbly. The first morning back home I craved a healthy sweet breakfast with greens 🥬 but I didn’t feel like drinking a smoothie. So I made fried smoothie as my husband said 😂😂 Blended spinach, 🥬 oats, flaxseeds, vegan protein powder, banana, 🍌vanilla and almond milk and let it sit for a few minutes until it became thick.

Then I made green pancakes 🥞💚 I know they look strange but tasted really good with some peanut butter and sugar-free jam on top 💚 and filled me up with some much needed nutrients.

Mikor hazajöttem Brüsszelbôl, az elsô reggel valami egészséges édes reggelit kívántam amiben van valami leveles zöld is, de nem volt kedvem smoothiet inni.
Úgyhogy inkább készítettem sült smoothiet, ahogy férjem megállaoította 😂😂 Összeturmixoltam spenótot, zabpelyhet, lenmagot, vegán protein port, banánt, vaníliát és mandulatejet. Hagytam állni pár percet amíg besûrûsödött.

Aztán zöld mini palacsintákat sütöttem belôle.🥞💚 Tudom bizarr látvány, de nagyon finom volt mogyorókrémmel és cukormentes lekvárral a tetején 💚

Chicken Parmesan 🍝
30 minutes is all that stands between you and this cheesy chicken Parmesan. Crisp chicken cutlets coated in a delicious tomato sauce topped with bubbling mozzarella & crispy parmesan...YES PLEASE !

Serves 4 - 4 large crumbed chicken schnitzels/cutlets, raw (about 150g - 175g each&)
- 60 ml grated Parmesan (optional)
- 250ml tomato & pecorino pasta sauce
- 200ml tomato purée / Passata - 1 /2 tsp dried sweet basil - 1 tsp garlic powder - 2 1/2 tsp Italian mixed herbs - 3 cracks black pepper - Salt to your taste (I don’t add any and don’t recommend it for this recipe) - 1 cup grated mozzarella cheese - 1/3 cup Parmesan cheese grated - Chopped Italian parsley to garnish
Method : * Preheat oven * sprinkle 60ml Parmesan (1/2 tbsp on each side of chicken) over each side of each schnitzel, bake for 15 minutes on a baking tray. Then remove from oven. * Meanwhile mix pasta sauce, tomato purée , garlic powder, pepper & herbs in a saucepan over medium heat for 5 minutes or until bubbling slightly. * Place schnitzels in a greased casserole , pour sauce over and sprinkle over grated mozzarella followed by Parmesan. Bake for 15-20 minutes at 180C until cheese is crisp and bubbling & chicken is cooked through (75C)
Serve with spaghetti ,Parmesan roast baby potatoes & broccoli or a classic Caesar salad. Yum!

I love mixing different flavors, particularly when they work well together. For this meat free monday I made some kritharaki pasta with vegetables and tagine spices (Morocco and Greece in one plate), topped with crumble goat cheese. The kids loved it. I used grated (cook faster) courgettes, sweet potatoes and carrots, mushroom and leeks, chopped sundried tomatoes and a teaspoon of Moroccan tagine spices, in a skillet with coconut oil. I started to cook the pasta in boiling water and added them to the veg and finnish to cook this like a risotto. I then crumbed the goat cheese on the top. Simply delicious and different. All ready under 30 minutes, nice!

You can have whatever pasta you like with this but I think spaghetti works best. Tagliatelle or bucatini would also work well. Make sure you warm the sauce through before serving. This serves 2 but makes double the amount of meatballs. You can freeze them and have them another night. Enjoy x

Fall was MADE for rich, creamy soups and we whip up a new batch every week. Today, we’re diving headfirst into big cheesy bowls of our classic Broccoli Cheddar Soup. Thick, savory broth, tender veggies, and that unmistakable touch of chedda 😋, you’re just 8 ingredients away from a delicious dinner the whole family will love. Grab a slice of crusty bread and you’re ready to eat! .

Soup dEats: •1 yellow onion, finely diced •1/4 cup butter •1/4 cup flour (we used whole wheat) •2 1/2 cups broth •3 large carrots, diced or 1 cup matchstick carrots •2 heads broccoli, chopped into small florets •8-10 oz, approx. 2-2.5 cups, cheddar 🧀 •2 cups whole milk •salt and pepper, to taste .

Directions: melt butter in a large soup pot. Add onion and a pinch of salt an pepper. Sauté until onions are golden and tender, approximately 5-7 minutes. Whisk in flour, stirring frequently for 3-4 minutes, to “cook” flour. Slowly whisk in broth (should look like a thick slurry). Once all broth has been added, add carrots and broccoli and bring to a simmer. Simmer for 12-15 minutes, or until veggies are tender. Reduce heat to low and stir in milk and then cheese, until cheese is melted and well combined. Add additional salt and pepper as desired. Enjoy!

▪️LAVASH FLATBREAD PIZZA▪️If your family is as into thin crust pizza as mine is, then you're definitely going to want to pick up these whole wheat lavash roll-ups during your next Costco run. We keep ours in the freezer and pull them out for a quick pizza fix 🍕

Our toppings of choice include: caramelized onions, three cheeses (mozzerella, ricotta, and parmesan), ham (or prosciutto if you're feeling fancy), fresh basil, and Everything Bagel Seasoning to finish it off. We make one with pepperoni and cheese for the kiddos.

**IMPORTANT: The key to a nice crispy crust is to add heated marinara sauce AFTER the pizzas come out of the oven. This will prevent your crust from getting soggy, because let's face it, a soggy crust will singlehandedly ruin a perfectly good pizza from reaching its full potential. Amirite?

-Everything Bagel Seasoning -Salt & pepper

DIRECTIONS
-Preheat your oven to 400 degrees F
-In a heated pan, add some olive oil and saute your onions until they become browned and caramelized. Set aside.
-Lay our your whole wheat rollups onto a baking tray and drizzle each rollup with olive oil. Use a pastry brush or your fingers to ensure a nice even spread of oil
-Add a layer of mozzarella cheese and parmesan cheese
-Top each roll up with onions, ham or prosciutto, and a few dollops of ricotta cheese

◾Pinch of salt and pepper
◾1/3 cup diced onion
◾1 tablespoon of minced garlic

◾1 cup of canned chickpeas (drained/rinsed)
◾1/2 cup of macaroni or any small pasta noodles

DIRECTIONS:

Making time to meal prep can be tough, and I TOTALLY get it, life is seriously SO busy! But meal prepping actually makes a busy schedule much easier and frees up a lot of time during the week. Yesterday while meal prepping I turned on You’ve Got Mail (My TOTAL 90s FAV) and during that 2 hour movie I made chili, prepped all of our fruit and veggies, juiced, AND made protein bites! Stacked enchiladas 🙌⠀

I can never fit enough goodness into an enchilada so I prefer to pile it high by stacking all of the ingredients and then drizzling with green enchilada sauce 🤤 all in layers of @mikeys tortillas. ⠀

Thanks to my favorite grain free gluten free paleo approved @mikeys cassava tortillas this stack is something that makes me feel great instead of loaded down. ⠀

This stack has: shredded chicken 🐓, corn 🌽, tomatoes 🍅, jalapeños 🌶, avocado 🥑, plant based cheese 🧀, sautéed spinach, riced cauliflower and of course tortillas and green enchilada sauce 💯 Bake at 325 until warm throughout and cheese has melted. 🤤

Baked Turkey/Carrot/Zucchini Meatballs 🤤
BEST EVER MEATBALL RECIPE!! You'll have these lean, juicy, tender, and flavourful meatballs on repeat, guaranteed!! Because veggies are life, I've loaded these bites with shredded carrots and zucchini plus just the right amount of feta cheese. Add them to your favourite sauce, enjoy them as a side dish or top them over a large bowl of salad or rice.

INGREDIENTS:
▪️Approximately 0.5kg of lean ground turkey
▪️3/4 cup of shredded carrots, packed
▪️3/4 cup of shredded zucchini, packed
▪️1/4 cup of diced onion
▪️1 egg
▪️1/2 cup of finely crumbled feta cheese
▪️2 tablespoons of fresh chopped parsley
▪️1 clove of garlic, finely chopped
▪️1 teaspoon of salt
▪️1 teaspoon of dried oregano
▪️1 teaspoon of paprika powder
▪️Pinch of pepper
▪️4 tablespoons of breadcrumbs
.
DIRECTIONS:
🔹️Pre-heat oven to 400F.
🔹️Line a large baking sheet with parchment paper and set aside.
🔹️Combine all ingredients in large bowl. Mix using a spoon, then finish mixing using your hand to incorporate all ingredients together very well.
🔹️Scoop out one oversized tablespoon of mixture and roll into a ball shape using both hands. Place meatball on parchment paper and repeat until all meat is used up.
🔹️Bake for 25 minutes.
🔹️Change oven setting to broil on high heat and bake meatballs for an additional 3-4 minutes. Immediately remove from oven and enjoy.

There’s just nothing that really does it for me right now than a bad ass spicy curry or soup...
My bones are starting to chill,
My #dosha is #vata so I need warm inviting spices
& my garden veggies and herbs need used up.
& #nanbread is the ultimate versatile bread, eat it plain, make flat breads, pizzas, wraps, sandwiches ...
Also, remember how I said I cheat sometimes, there is this ancient grain already cooked brown rice in @giant loaded with protein and holy goodness...team #30minutemeals 💚🙏

At 6:00pm tonight we realized we didn’t have anything for dinner🤦🏻‍♀️. Sent the hubs to Aldi real fast (we live two blocks from ours) and had this spaghetti bolognese done and on the table by 7:00pm 🙌🍝
