  • Jicama and Sumac Tacos | V + GF | accompanied by fresh corn salad, watermelon with lime, and homemade salsa (not pictured) and guacamole . Tacos: The tacos are filled with a bean base consisting of charred red pepper, fresh red pepper, jalapeño, carrots, and seared onion with zest of lime and lime juice. Onion powder, cumin, and salt were used as the seasonings. You can boil the beans in vegetable stock to give them more flavor but I did not for this batch. Topped with radish, jicama, cilantro (from the garden), and sumac. Everything in this recipe was done to taste so I’m sorry I can’t give specific measurements. . Corn Salad: The corn salad was easy to make. I shucked the corn and charred it directly on the burner. Then I cut the kernels off into a bowl and mixed it with olive oil, lime juice, cilantro, and salt.
