you ever take a good recipe and remix it because your brownie pan is soaking in the sink and the only option you have left is a muffin tin? because same 🙂 turned my chocolate walnut quinoa bar batter (minus the walnuts bc we outtie) into muffins this week and i’m loving this view. dropping the original recipe below but let this be proof that she (the recipe, not me) can do it all 🥰

chocolate walnut quinoa bars: - 1 flax egg (2 tablespoons ground flax mixed with 6 tablespoons water, let sit for 10 minutes until gel-like texture)
- 1 cup quinoa flour
- 2 tablespoons coconut flour
- 1/4 cup almond butter - 1/4 cup olive oil
- 1/2 cup maple syrup
- 1/4 cup almond milk
- splash of vanilla

blend until thick batter comes together. stir in chocolate chips and walnuts and pour into a greased brownie pan. top with more chocolate. bake at 350 for 30-35 minutes and let cool completely before serving!

Vegan Caprese Lasagna Roll Ups by @thevegansara 🧡

What you need: 6 Lasagna noodles cooked al dente For the Ricotta: 1 cup water, 1 cup slivered/blanched almonds, 1 cup cashews, 2 tbl nutritional yeast, 1 tbl apple cider vinegar, s/p to taste, 1/4 cup sun-dried tomatoes (no oil) rehydrated in water 15min- then finely chopped, 1/4 cup chopped basil, 1 1/2 cup shredded mozzarella, 2 cup marinara sauce What you do: 1. Cook noodles in boiling & well salted water cook till al dente. Drain & leave noodle flat and ready to be rolled
2. Ricotta: in high speed blender combine water, cashews, almond, nutritional yeast, vinegar, s/p-process 20 sec to get a ricotta like consistency. You can also use a food processor, but nuts need to be soaked 4-6 hr prior
3. In a mixing bowl, combine ricotta, sundried tomatoes, basil, & 1 cup mozzarella, s/p to taste. Mix well.
4. using a 8x8 in pan, add 1 cup marinara sauce & spread evenly
5. On a clean work surface, take a lasagna noodle, evenly spread 1/3 cup Ricotta mixture the length of the noodle. Roll. Place in pan seam side down. Repeat.
6. Add 1 cup Marinara sauce to the tops of the roll ups, and about 1/2 cup mozzarella cheese
7. Then cover pan with foil, bake 350 F for 40 min. Enjoy!! I topped my lasagna with extra fresh basil & some balsamic reduction to give it that extra caprese flavor! #bestofvegan

Jots I’ve gathered so far from 2019 Part 2 {taken from my voice memos} •

1. The most dangerous phrase in our language is “we’ve always done it this way”


2. I find myself constantly asking myself: “what do you want and how far are you willing to go?” It keeps me focused. •

3. There’s no such thing as being completely ready. You’re never going to feel like you have it all sorted out. If you get to the place where you’re just a little bit more excited than afraid, that’s when you go for it.


5. Sometimes I feel like we are all functioning at a grand disservice to ourselves when we choose to nitpick people who are trying to do some good in this world, but aren’t entirely spotless or do not see the world just as you or I do. There’s a million ways of seeing the world that is “correct.” •

6. Everything really does happen for a reason


7. The force is real (obviously)

Bringing back my mint chocolate freezer fudge because it’s now officially Christmas time!!!! Although mint and chocolate go together all year long.

Last night my 2013 thinkpad officially died and I’m trying really hard to not think about all the work I’ve ever done for both college and grad school being on there ha ha haaaaaa. So this is a distraction.


Recipe: mix equal parts coconut oil, nut butter (I used almond), and chocolate chips in a bowl and melt. Mix in a few drops of peppermint extract and a tbsp of cacao powder and pour into a parchment paper lined dish. Freeze and cut when they’re frozen!!

If you want to build muscle, first of all you need o stimulate the protein synthesis process. That is done while working out. Than proteins are needed so the damaged muscles from the workout will he repaired. A slight calorie surplus is also recommended.
If you think about it logically, if the muscles contain mostly proteins (after water), than you have to eat proteins so the muscle can grow (because it is built from proteins). If you have expectation of your muscle to be in their full potential, than feed them properly, don’t be selfish.
