PESTO PUMPKIN BAKED ZITI WITH SAUSAGE by @vegantraveleats 🧡 Try out this flavour-packed recipe below!

Serves 4 people

INGREDIENTS

14 oz vegan Italian Sausage (I crumbled them up)
1 lb ziti, rigatoni, or penne pasta
½ cup pesto
¼ cup Nutritional Yeast
Heaping ½ cup onion, chopped fine
1 clove garlic, minced
1 15 oz can pumpkin puree
3/4 cup veggie broth
½ tsp salt
3 tbs vegan cream cheese
1 ½ cups vegan mozzarella
Large pinch of red pepper flakes, if you’re not already using spicy sausage
2-4 tbs cooking oil*

DIRECTIONS

Heat oven to 400F
Heat a large oven-proof skillet over medium-high heat and crumble sausage into the pan and add 1-2 tbs oil* to cook. Cook sausage according to package directions, I cooked mine for 4-5 minutes.

Remove the sausage from the pan, set aside on a plate, leaving the grease in the pan.

Lower heat to medium and add onion and a pinch of salt, add another 1-2 tbs oil*. Sauté until softened, 4-5 minutes, add garlic and sauté for another 30 seconds. While the onion is sautéing, start your water to boil for your pasta in a larger pot.

Add sausage back in the pan, add broth, pumpkin, nutritional yeast, salt, and cream cheese bring to a boil then simmer for 5 minutes.

While that’s simmering, add pasta to boiling water in the large pot. And cook 3 minutes less than the package says. Drain (do not rinse) and add to the skillet with the sausage pumpkin mixture. Add ¼ cup pesto and mozzarella and stir to combine.

Cover with aluminum foil and bake for 15 minutes. Drizzle on remaining pesto and serve! Notes: if you’re using a beyond meat style or otherwise oily vegan sausage, no need to add extra oil!

Hej! 🧡 Ostatnio coś mnie natchnęło na racuszki drożdżowe z jabłkami, bo nie jadłam ich wieki 😍 i postanowiłam od razu stworzyć dla Was przepis, są WEGAŃSKIE! 🌱I oczywiście w znacznie zdrowszej wersji niż tradycyjne, ale równie smacznej!
~
• 12g świeżych drożdży
• 70g mąki pszennej lub orkiszowej tortowej
• pół jabłka
• 80 ml mleka roślinnego
• 1 łyżeczka cukru (konieczny!)
• cynamon
• słodzidło

Mleko podgrzewamy, ma być ciepłe, ale nie gorące! I rozpuszczamy w nim drożdże oraz cukier, a następnie dodajemy łyżkę mąki, mieszamy, przykrywamy nasz zaczyn i odstawiamy w ciepłe miejsce na 15 minut. Po tym czasie dodajemy resztę mąki, słodzidło, dokładnie mieszamy i takie ciasto odstawiamy do wyrośnięcia na godzinę (też najlepiej w cieplutkie miejsce!). Jabłko kroimy w kostkę, posypujemy cynamonem i dodajemy do wyrośniętego ciasta, delikatnie razem łączymy i smażymy racuszki najlepiej pod przykryciem.
