celebrating MEATLESS MONDAY with smashed CHICKPEA WALDORF SALAD 🍇 waldorf chicken salad has always been a fav of mine, so I figured it was time for a veggie twist on a classic! I paired it with arugula on some @simplekneads_gf sourdough, but it’s delicious in wraps, on a salad, crackers, or all on its own — recipe below👇🏼

SMASHED CHICKPEA WALDORF SALAD:
•1 15 oz chickpeas (drained + rinsed)
•1 apple, chopped (I used honeycrisp)
•2 stalks celery, chopped
•1/2 c walnuts, chopped
•1 c grapes, halved
•1/4 c fresh herbs, chopped — I used dill & parsley
•1/3 c plain greek yogurt
•2 tbsp dijon mustard
•1 tbsp apple cider vinegar
•1 tbsp honey
•dash of crushed red pepper (optional)
•sea salt + black pepper, to taste

MASH chickpeas with fork until mashed to consistency of liking. ADD in chopped apples, grapes, celery, walnuts & herbs. IN SEPARATE BOWL, combine greek yogurt, dijon mustard, apple cider vinegar, honey, crushed red pepper, salt + pepper. POUR dressing into bowl with chickpea mixture and MIX WELL. CHILL for 30 minutes. SERVE as desired, STORE remainders in airtight container in fridge. ENJOY 💛

Back In CA and it’s hard to believe there are less than 2 weeks left of December, and in a blink we will be beginning a new decade. I’ll be back in Chicago in just over a week and all the travel definitely takes a toll on the bod. I feel extra tired going into this week, partly because I keep thinking about everything I need to do in the next month. I woke up in a frantic thinking I overslept only to realize my watch was still on Chicago time. 🤪 I still have a lot I want to accomplish this year, and it’s easy to look back, asking “Am I where I want to be?” “Have I accomplished enough?” — but I am checking in and reminding myself to keep thinking FORWARD. You’re will always find things you wish you did differently when you look back, but looking forward allows you to think about what you want to do next, how you want to tackle the day, week, and upcoming year. I’m going into this week with aspirations to stay motivated, catch up on sleep, appreciate every day I get to be healthy, and filling up on holiday cheer 🙌🏽🎄. Happy Monday! Teriyaki tofu balls by @woon.heng 💚

Recipe (yields 2-3 servings)⁣⁣⁣⁣⁣⁣
Ingredients:⁣⁣⁣⁣⁣⁣
~ 1 pack of 16oz firm tofu, drained well⁣⁣⁣⁣⁣⁣
~ 1/4 cup chopped celery⁣⁣
~ 1/4 cup chopped broccoli stem/jicama/water chestnut⁣⁣
~ 1 small carrot, chopped⁣⁣⁣⁣⁣⁣
~ 2.5 tablespoons starch⁣⁣
~ 1-2 teaspoons salt (start with 1 first)
~ a pinch of white pepper⁣⁣⁣⁣⁣⁣
~ oil⁣⁣
~ your favorite grain & blanched broccoli⁣⁣
⁣⁣
Teriyaki sauce ~ 1 teaspoon minced garlic⁣⁣
~ 1 teaspoon minced ginger⁣⁣
~ 2 tablespoons soy sauce⁣⁣
~ 2 tablespoons mirin
~ 1.5 tablespoons organic brown sugar/maple syrup⁣⁣
~ 1/4 cup hot water⁣⁣
(adjust sweetness/saltiness to your preference)⁣⁣
⁣⁣
✔️⁣⁣⁣⁣Mash tofu in a bowl, if it's too wet, use a paper towel to absorb moisture. Add in chopped veggies, starch, salt & white pepper to tofu & mix until well combined. Take about 1 tablespoon of the mixture & mold it into a small ball. ⁣⁣
⁣⁣⁣⁣⁣⁣
✔️In a heated non-stick pan, drizzle a thin layer of oil covering the pan & pan-fry tofu balls until golden brown. Drain excess oil on a paper towel, set aside.⁣⁣
⁣⁣
✔️To make the teriyaki sauce, heat 1 teaspoon oil in a pan, sauté ginger & garlic until fragrant. Add in all liquid, syrup/sugar & cook until sauce starts to thicken (you can store this in a jar for later use too). Turn off the heat, toss tofu balls with the sauce. Serve warm with blanched broccoli & rice for a delicious meal.⁣⁣ #bestofvegan

I like recently to make individual mini desserts in these cute espresso cups. These ones are pitaya lemon cream with macadamia pea flower base. Looks magical and just enough for one person. Though I always make a lot, so you can grab two or three 💓

Crust
1/2 cup macadamia
12 tbsp coconut flour
1 tsp blue pea powder
1/3 cup water
2 drops liquid monk fruit vanilla extract
Cashew cream
1 cup cashew soaked
1/2 cup macadamia milk
2 tbsp coconut oil melted
1 tbsp pitaya powder
1 lemon juiced
5 drops liquid monk fruit extract
Directions:
For crust: in a food processor process nuts until you reach crumbs consistency. Add other crust ingredients. Process well. Press 1 tbsp of mixture into mini cups.
Blend cream ingredients until smooth and pour over the crust. Top with berries, hemp hearts and edible flowers.
Refrigerate for at least 1 hour.
Experience joy!
