Super Spicy noodles Mmmmm... 😍😍😍 2 portions Udon Noodles
Half of medium Broccoli head
2 medium Pak Choi
100g Mushrooms
Veg Stock cube
1tsp Kelp powder
3tsp chilly flakes (Gochugaru)
1/2 cup water
1-2 tbsp Soy Sauce
2tbsp Agave or Maple syrup
1tsp Garlic powder

Cook noodles according to packaging. Meanwhile roughly chop and saute vegetables, using water instead of oil, on the pan. Add all spices and other ingredients. If needed add more water. Add noodles stir well and serve. You can add some chopped spring onions to garnish.

Salt and pepper to taste
Squeeze of half a Lemon

Bake pumpkin and garlic in the oven untill it is tender. When cooked and cooled place all ingredients to blender. Blend untill smooth. Add water to make it softer (next time I would add more water than I did). You can also add tahini if you're not going for oilfree option. And serve with any vegetables or crackers you want. You can garnish houmous with any seads you have. .

Pumpkin soup season 😁😍😍 1/2 half of medium Pumpkin
2 cups Red Lentils
1 large Onion
3 cloves Garlic
3 tsp smoked Paprika
1 tsp Cumin powder
1/2 tsp turmeric
2 tsp Chilli flakes
2 stock cubes
2 litres water
Salt and peper
To garnish:
1 spoongull Soy yoghurt
1 wedge Lemon
1tbsp Chilli oil
Pinch of parsley

Deseed and peel pumpkin. Roughly chop pumpkin, onion, garlic. You can saute/fry onion and garlic in the bottom of the sauce ban before adding all other ingredients. But I didn't want any unnecessary oil, so I just chucked all in to one pot: pumpkin, onion, garlic, lentils and all spices. Bring to boil reduce the fire and leave it to simmer untill pumpkin is tender. Blend soup with a hand-held blender untill it is smooth. When serving ad a spoon of yoghurt, pinch of parsley, drizle of chilli oil, squeeze lemon over it and enjoy. Quick bbq stirfry for dinner

2x portions of dried udon noodles
100g Mushrooms
200g Marrow or courgette
200g Aubergine
2 medium Pak choi
1cup Edamame beans
1/2 tsp chilli flakes
1/2 tsp liquid smoke
1 tsp agave
3tbsp bbq sauce (I used Walden farms thick and spicy bbq sauce)
2-3 tbsp Soy sauce
1tbsp Rice flour
Sesame oil
Sesame seeds
1/4 cup Spring onion

Cook noodles according to packaging. Fry on non stick pan chopped mushrooms, aubergine and marrow. You could add a handful of cashews too, I didn't have any at the time. Ad chilli flakes, liquid smoke, agave, bbq sauce, soy sauce. Mix rice flour with 1/4 cup cold water and add to the pan, simmer for 10min. Add cooked noodles, pak choi edamame beans. Stir well for all flavours to mix. Cook for a few minutes ad sesame oil and serve. Garnish with sesame seeds and spring onion.

Tofu Scramble for breakfast 😍😍😍 1 medium onion chopped
150g Chestnut mushrooms chopped
200g Greanbeans chopped
1 Yellow Bell Pepper chopped
225g Smoked tofu
200g Silken tofu
1/2 tsp Turmeric
1/2 tsp Black Salt
Salt and black pepper

On frying pan fry onion untill soft. Add mushrooms fry for a few minutes till mushrooms get soft. Add beans and peppers. Fry for another few minutes. Meanwhile mash both tofus with a fork to combine. Add turmeric and black salt, mix well and add to trying pan. Add salt and pepper to taste and cook untill tofu heats through.

2 pieces Marrow halved and scooped
1 small Aubergine chopped
1 can mixed pulses (mixed beans)
1 can chopped tomatoes
1 Red onion
4 cloves of garlic
4 medium Mushrooms
1 tbsp tomato pure
2 tbsp cumin powder
2 tsp dried oregano
1 Chilli pepper (chopped)
1/2 tsp paprika
Salt & pepper
Handful Vegan Mozzarella cheese
2 cups buckwheat
On pan, cook onion and garlic for a bit, then add other vegetables, spices and beans. When all nearly ready place all onto scooped marrow, sprinkle with cheese, cover with foil and bake in oven for 30 minute. Mean while cook buckwheat.

Spicy Korean rice cakes with mushrooms (my way 😁) I can't seem to get enough of it 😍

500g rice cakes (tteokbokki)
200g smoked tofu
200g button mushrooms
200g enoki mushrooms

For sauce:
3tbsp soy sauce
1tsp sesame oil
3tbsp gochujang
1tbsp chilli flakes (gochugaru)
1tsp Onion powder
1tsp garlic powder
2tsp lemon juice
1tbsp Agave
1tsp kelp powder
1cup water

Soak ricecakes in water for about 10-15 min. Cut tofu into cubes and pan fry them until golden. Meanwhile, mix all sauce ingredients together. Add all mushrooms and ricecakes to the pan and poor sauce over it. Leave it to simmer for about 15 minutes.

Cup water

Coconut Chickpea Curry

So yummy and heart warming 😍

2 Medium Onion Sliced
400g tomatoes chopped (Or tinned)
400g Chickpeas drained

Juice of 1 Lime
Yughurt (Optional)

In pan simmer tomatoes and onions untill tomatoes cook down and onions are soft. Add all dry spices, chickpeas and vegetables. When it cooks down a bit add coconut milk. Just before serving add lime juice and stir well. Serve it with rice or buckwheat.

2 Large Onions thinly sliced
1 Medium Sweet Potato peaked and grated
50g Gram Flour
1tsp Lemon juice
2tsp cumin seads
1tsp Mustard seads
1tsp Turmeric
1 tbsp Corriander seads
1/2 Red chilli deseeded and chopped
Little water
Salt and Pepper
Crush all spices and seeds in stone grinder. Mix all ingredients together. Mix well and leave to stand for 15min. Preheat oven to 220C. Make 16 equal size Bhajis on the oven tray lined with parchment paper and bake for 15-20 min or untill golden.

Cold Peanut Soba Noodles

It's perfect for a hot summer day 😁

2 portions of Soba (buckwheat) noodles
1 Bell Pepper red or yellow is best (all I had was green and it was still yum) Cut into matchsticks
1medium to small carrot, cut into matchsticks
1 small bunch parsley or coriander (optional) Chopped
Spring onions to garnish
Sesame seeds to garnish

For sauce:
3tbsp Peanut Butter (I used 2tbs PB2 instead)
3tbsp Soy Sauce
1tbsp Seasame Oil
1tbsp Agave or Maple syrup
1/2 Lime squeezed juice
1/4 tbsp grated Ginger

Cook noodles according to packaging. Meanwhile prepare all ingredients and sauce. When noodles cooked rinse them under running cold water to cool down. Mix all ingredients together and enjoy.

Cold Peanut Soba Noodles

It's perfect for a hot summer day 😁

2 portions of Soba (buckwheat) noodles
1 Bell Pepper red or yellow is best (all I had was green and it was still yum) Cut into matchsticks
1medium to small carrot, cut into matchsticks 
1 small bunch parsley or coriander (optional) Chopped
Spring onions to garnish
Sesame seeds to garnish

For sauce:
3tbsp Peanut Butter (I used 2tbs PB2 instead)
3tbsp Soy Sauce
1tbsp Seasame Oil
1tbsp Agave or Maple syrup 
1/2 Lime squeezed juice
1/4 tbsp grated Ginger

Cook noodles according to packaging. Meanwhile prepare all ingredients and sauce. When noodles cooked rinse them under running cold water to cool down. Mix all ingredients together and enjoy.

Potato and courgette hashbrown/pancakes, so yummy πŸ˜‹
200g Potatoes (grated)
200g Courgettes (grated)
1 Onion (thinly sliced)
Salt and Pepper to taste

Mix all ingredients together. Leave it in room temperature for about 15 minutes. Fry on non stick pan on a medium to low heat on both sides, ad a little splash of water if and when needed. Ad a dollop of plantbased yoghurt with a pinch of kayenne pepper (optional)

Pasta salad on a hot summer day. So yummy and refreshing πŸ˜„πŸ˜ 200g wholemeal fusilli
100g Wild Rockets (arugula)
1 Red Bell Pepper (chopped)
1 Medium White Onion (thinly slices)
100g Black Olives (chopped)
4 medium tomatoes (chopped)
50g Daiya dairy-free Mozzarella
3 Smoked Hotdogs (Fry's vegan)

Cook pasta and lightly grill chopped Hotdogs on a grill pan, leave to cool. Prepare all veggies and place them in a salad bowl. When pasta is done, rinse thoroughly with cold water and mix all ingredients together. You can use dressing of your choice, I didn't use any as it was tasty enough 😁

"Quick oven baked garlic mushrooms"

They were so good, definately making them again πŸ˜‹

400g Closed cup Mushrooms
2tsp minced garlic
2tbsp Soy sauce
2tbsp Balsamic Vinegar
2tbsp Chopped Parsley
1tsp Chilli flakes
Salt and Pepper
Mix all ingredients together, make sure mushrooms are coated evenly. Place on tray in single layer. Bake in the oven for about 25min or untill mushrooms are cooked.
